GREEN BAY - Taste flavors from around the world at Downtown Green Bay's International Food Tour on April 9.

From 5 p.m. to 8 p.m., a Lamers' trolley bus will take attendees through the Downtown and Olde Main Street business districts in Green Bay, stopping along the way at participating restaurants.

Participating restaurants and cuisines include:

Heights Pub & Parlor plans to release a new menu ahead of the food tour which will have dishes that can be sampled for the tour. Other restaurants will stick with the current theme of food they offer.

General admission tickets cost $40 per person and can be purchased online. Attendees check in at The Nightly Buzz, 130 E. Walnut St., where they will receive their passports for the event.

Can you handle a 22-course italian tasting menu travail thinks so.

"Twenty-two courses?"

That was my response, and probably the response of most rational people when they find out how much food they are about to consume at Travail's new Italian tasting menu, Giglio.

Mike Brown, one of three chefs/co-owners of Travail, knows that a menu of that size sounds beyond absurd.

"I'm not going to tell people it's 22 courses," Brown said with a laugh. "It'll freak them out."

No, there aren't 22 heaping plates of pasta. There are four pastas, and they're served in tiny condiment bowls, and on plates no bigger than a teacup saucer. Most courses are no more than a bite, like fresh, warm mozzarella balls that Brown shapes in front of you, and that you slurp off the back of your hand during a standing "cocktail hour" that lasts just 20 minutes.

This is Travail, after all, where interactivity and hyperactivity have been key ingredients for the past 14 years.

"We just love the idea of putting something that has never really been done through our lens," Brown said. "We want you to be able to explore food with us. We're gonna give you just enough to make you happy."

The space: Travail's modern, multilevel Robbinsdale restaurant, which the chefs literally helped build, was years in the making. It opened in March 2020 to almost no fanfare — and an abrupt shutdown of Minnesota restaurants due to the pandemic. Travail has brought the modern space back online in increments, and it's reassuring to see it functioning as it was intended, with all three floors hosting dynamic dinner parties.

An open ground-level space currently hosts the Giglio tasting. Upon your arrival, stations are set up for cocktails and bites, but it felt more like a carnival than a wedding cocktail hour. "Hot cheese ball, get your cheese ball," Brown announced, as he hand-formed fresh mozzarella stuffed with porcini cream. The cue that dinner is about to start involved a giant wheel of cheese, some pasta and a blowtorch, something not every restaurant space could, or should, accommodate.

For dinner, guests are seated in a few different configurations, some more communal than others, but each with their own chef/server putting the finishing touches on dishes and explaining them thoroughly. (I was at a kitchen counter.) Sliding walls move to reveal more seating, and some hidden doorways will figure into the meal later.

The food: A printed menu isn't handed to guests until they are leaving, and in that spirit, I won't go into too much detail on each and every extraordinarily playful bite. There are natural phases of several hors d'oeuvres, appetizers, pastas, entrees and lots of dessert. All draw on flavors and ingredients from Italy, or just from the minds of the chefs. A palate cleanser of granita made from shaved frozen fruit, inspired by something Brown saw on Instagram, "might be my favorite," he said. My favorite? Any of the pastas that came at me fast and furious from the kitchen, and which I'd gladly order a big bowl of, if that were an option. (Sadly, it's not.)

The drinks: Wine and cocktail pairings kick off during the cocktail hour with bubbles or an aperitivo. The rest are served throughout dinner. Both pairings cost $65, and a spirit-free beverage pairing is $55. But guests have the option of skipping the pairing altogether and ordering a la carte.

How to get tickets: Travail has multiple events going on at the same time on different floors of its headquarters. The 2024 Signature Chef's Tasting Menu (aka Giglio) runs through June, but tickets are currently on sale through the end of April. Dinners are Wed.-Thu. at 6 p.m., with two seatings on Fri.-Sat. at 6 and 8:15 p.m.

Tickets for the meal are $135 to $155, drink pairings start at $55, and taxes and a 21% health and wellness surcharge get added onto your order before checkout on Tock . Dinner for two with wine pairings on a Saturday comes to $586.03.

Also at Travail: Another ingredient that makes Travail Travail: reinvention. Giglio, the Italian-themed dinner, launched earlier this month and will run until summer. After that, look for a new menu that pulls from Brown's Mexican heritage and co-owner Bob Gerken's Filipino heritage. For the fall, they're going to be looking back at the rise of fine dining in Minneapolis, with culinary tributes to top local chefs.

Giglio is currently served on the ground floor. In the basement bar, a new theme emerges monthly. Right now, it's the return of Umami, a menu Travail has been riffing on for years. Next up, in April, is Buddies Bar, with food and cocktails inspired by "Friends" episodes. And there's more happening on the top floor "sky lounge," too.

But I was there for 22 rapid-fire courses of Italian food, lots of wine, a game of trivia, and all the rest of Travail's signature hijinks. And no, I didn't explode by the end.

New spicy Casey McQuiston book 'The Pairing' comes out this summer: What fans can expect

M ove over “hot girl summer” – “hot bisexual summer” is ready for its moment and Casey McQuiston ’s new novel “ The Pairing ” is here to usher it in.

If there’s one thing McQuiston knows, it’s queer romance – their past three novels prove as much. But “The Pairing" (on sale Aug. 6 from St. Martin's Griffin) is a much more indulgent read than its predecessors. Sexuality and gender are a constant conversation in McQuiston's work, but this forthcoming novel dives further into how they interact and shape our identities.

“I’ve written three books where the main character is openly bisexual – none of those books are ever described as bisexual ,” McQuiston tells USA TODAY. “I was curious, 'How do I write a book that is inherently bi?' ”

We spoke with McQuiston about what fans can expect from “The Pairing.”

What is 'The Pairing' by Casey McQuiston about?

Set during a three-week European food and wine tasting tour, “The Pairing” is an exes-to-lovers novel. Theo and Kit have known each other for most of their lives, first as childhood best friends and later as lovers. But four years ago, they suffered a brutal breakup just before they were supposed to embark on a trip to Europe. They haven’t seen each other since.

Things have changed, mostly for the better. Theo is on the way to becoming a sommelier and Kit went to pastry school and now bakes at a prestigious Paris restaurant.

They’ve also both got vouchers for the tasting tour, valid for 48 months.

It's not until boarding the bus that they realize they're cashing the vouchers in at the same time, completely altering the tone of the three-week vacation. As the forced proximity lingers, Theo offers up a friendly bet that turns into a full-on international hookup competition with a chance to prove who really won the breakup. 

McQuiston drew inspiration from their own European adventure, which began while visiting the set of the “Red, White & Royal Blue” movie in London. After writing their last novel, “I Kissed Shara Wheeler,” in their New York City apartment during the pandemic lockdowns, McQuiston knew book number four needed to be a physical experience.

“I was just so hungry – literally and figuratively – to get back out in the world and discover it, to reconnect with the joy of writing,” McQuiston says. 

How spicy is 'The Pairing'?

Speaking from reader experience – very. There’s a lot to indulge in with “The Pairing." Steeped heavily in food, art, wine and culture, this book ignites the senses in more ways than one.

For the lay-reader (aka those not on BookTok), “spiciness” refers to the sexual content of a book. Given that the driving force behind the plot is a hookup competition, you can bet “The Pairing” gets a little hot and bothered. 

“The Pairing” draws inspiration from the “slutty bisexual” trope – an often harmful characterization of bi people. In real life, bisexual people face stereotypes of being greedy and hypersexual. In media, many bisexual characters become lazy plot devices to demonstrate promiscuity .

With this novel, McQuiston wanted to give complex bisexual characters a chance to lean into it . 

“When we try to subvert and take apart tropes, it’s not always enough to just say ‘that’s not true,’” McQuiston says. “Some people who are bi are also very sexual people, very open, and that is as much a part of the experience as being like ‘I’m a bisexual person in a four-year partnership.’”

McQuiston has been open about writing the stories they wished they had growing up. For this novel, that means portraying a “healthy sex positivity” for queer and trans folks. 

“It was hard, when I was younger, to find accessible romance novels that depicted sex, gender in a way that was relatable to me,” McQuiston says. “The idea of casual sex being something that doesn’t have to make you feel shameful. It’s something that can be really cool and spiritual and intimate and transformative.”

Meet the main characters of 'The Pairing'

Theo Flowerday is a classic “leader of the pack” who lacks the self-confidence to see themselves that way. A defiant nepo baby and a jack-of-all-trades, Theo is “inspired by hot people … who work with their hands,” McQuiston says.

And then you’ve got Kit Fairfield, a dreamy French American pastry chef with a Rilke poem for every occasion that no one can resist falling in love with. McQuiston describes Kit as a “fairy prince” and “Howl Pendragon-coded,” a reference to Studio Ghibli’s “Howl’s Moving Castle.”

“I feel like I’m exposing myself here,” McQuiston admits. “This one North Star I kept coming back to was the dynamic between Legolas and Gimli.”

It’s not a “Lord of the Rings” fanfiction, they jokingly clarify (the two characters are often read as queer-coded ), but that’s often McQuiston's starting point when creating characters – start with a well-loved trope and build out from there. 

How to get in your 'Pairing' era

“The Pairing” doesn’t come out until August, but if you can’t wait to live in this world of bisexual fairy princes, baguette-making classes and hot summer nights, McQuiston has you covered with a fool-proof checklist. 

1. Host a dinner party

Fun glassware, mood-lighting, tinned fish and mouth-watering hors d'oeuvres make a perfect pregame for “The Pairing.”

“The most common review I get from my friends and family who’ve read it is ‘It made me so hungry and it made me want to travel,’” McQuiston says. 

2. Chat with your local sommelier

McQuiston spent time chatting with wine experts and taking wine classes while researching “The Pairing.” Why not do the same?

“Go to your local wine store or a neighborhood restaurant that’s known for having very good wine and just talk to the somm for half an hour and let them tell you about wine,” McQuiston says. “Let them sell you something you’ve never had before.”

3. Break out your flowy button-downs

“The only bisexual vibe for the summer,” I joke. McQuiston agrees.

4. Stock up on sunscreen

This one’s pretty self-explanatory. Safety first, after all.

“Please don't forget your SPF while you’re out there being sluts,” McQuiston says.

Museum program to take attendees on sensory expedition to Philly’s wine roots

Ancient Alcohol After Hours

We know that Pennsylvania is mentioned in a couple of paragraphs whenever there’s something written about the history of grape growing in this country.

That’s thanks to William Penn, the Province of Pennsylvania founder who planted vines he brought over from Europe in his vineyard at Lemon Hill in what is now Philadelphia’s Fairmount Park in 1683. Bugs and disease eventually killed the vines, but James Alexander, the gardener for William Penn’s son Thomas, somewhere around 1740 discovered an “accidental hybrid between some imported Vitis vinifera vine in the garden of William Penn (of Pennsylvania) and a wild Vitis labrusca.” It was growing in the neighborhood of Springettsbury, just above the northwest corner of Philadelphia, according to this and many other accounts.

It would be named the Alexander grape and would become the earliest named American hybrid variety, which was used in the first production of commercial wines in the United States of America.

That history provides the backdrop for a program at the Penn Museum, 3260 South St., in Philly on Wednesday, April 10, that will delve into the city’s wine history and the attempt to bring those Alexander vines back to life. Scheduled to run from 6 to 9 p.m. EDT, it’s part of the museum’s tour + tasting series that began in 2019.

Amanda Grady, the director of group sales, said previous iterations have explored different types of alcohol, including beer and wine. This one, called “ Ancient Alcohol After Hours: Reviving Philly’s Roots,” will look at Philly wine past and present, blending the knowledge oof Dr. Chantal White, an archaeobotanist, and Eli Silins, the owner of a Philly winery called Camuna Cellars .

“We’ll be looking very specifically at early wine within Philadelphia,” Grady explained Thursday. “So, what kinds of grapes were being grown here when William Penn got to Philadelphia? What sort of grapes were they planting here in Lemon Hill and throughout the city, and why didn’t those wines and those grapes really take off? Why didn’t Philly become known as a wine city? It became known as a beer city, but what happened to the wine-growing process?”

Grady said they worked with Silins last year during an event on eastern Mediterranean wines, noting that he has a “big passion” for breathing new life into North American grapes that over time have been overshadowed by the European grapes that so many consumers have gotten to know and trust.

“He really likes to explore why weren’t North American grapes ever considered, who was really setting those taste standards and why were they making those decisions?” He’s also trying to revive some of the wines using North American grapes that he is growing here, she said.

Attendees not only will get some food for thought on the city’s wine and grape history, including “hidden stories behind the local viticultural revolution,” but also a couple of samples from one of Philly’s growing number of urban wineries.

Camuna Cellars

Camuna Cellars produces its handful of wines (according to its website it also makes cider and mead) at 831 Frankford Ave. and then distributes those to bottle shops around the city.

No, none of them are made from the Alexander grape; not this year anyway. Maybe in another decade — if Silins and White are successful at re-creating history by successfully planting those Alexander vines at Lemon Hill — a sequel to this event could feature the tasting of a wine that according to records was popularized by the Bartram family at Bartram’s Garden, Philadelphia, and widely distributed after the American Revolution by William Bartram.
