2. Titletown Brewing Company  

You may want to check out TBC if you’re searching for a spacious and historical location as you chug your beer. It has a building constructed in 1908 and preserved its original window frames, light fixtures, fans, smokestack, and fire door surrounding the fireplace. TBC was also made famous by its “Roof Tap,” where you can enjoy the picturesque view of downtown Green Bay.

If you’re interested in further exploring TBC’s ancient-looking taproom, it holds a private state-of-the-art brewery tour, where a maximum of 16 people can join. Be ready to learn valuable history, unforgettable memories filled with entertainment, and a belly full of award-winning beers.

3. Stillmank Brewing Company 

With 16 mouthwatering craft beers on tap, Stillmank is highly praised for its great and innovative beer options. Customers especially look for its famous Guava Juiced IPA, Wisco Hard Seltzer, and Dragon Fruit Wheat, and they will pair it up with The Booyah Shed’s hot and sizzling pulled pork, fish fry, and tacos.

Whether you’re a local or an out-of-towner, you’ll love Stillmank’s small but welcoming and friendly taproom and patio. And although it serves little meals, Stillmank still invites food trucks occasionally. You can also bring along cans to-go and some good merchandise as you go home.

4. Noble Roots Brewing Company 

Noble Roots has transitioned from 5-gallon batches in the kitchen in 2009 to a 7-barrel system brewery with a taproom today. Noble Roots’ hard work has resulted in 17 flagship beers and 45 slew of experimentation drinks, which they call Garage Series. You can drink these amazing crafts in an Imperial pint, 10 oz. pour and a beer flight. Moreover, Noble Roots’ has growlers for to-go orders.

Spend time boozing in Noble Roots’ casual taproom and bar, but if you’re more of an outside drinker, it has a sunny patio and covered pergola. You can bring along your kids, and they’ll enjoy Noble Roots’ children’s games.

You’ll want to come here during the day or on a groggy afternoon because the brewery does not only craft beers but also coffee. Breakfast and lunch pub fare is also available, like grilled chicken sandwiches served with house veggies or mac ‘n cheese.

What’s a Hinterland?

What’s a Hinterland? Well, to Wiki and the educated world “ Hinterland ” means: the land beyond the known port city, the unexplored rural country or a person’s vast knowledge that is unlimited by parochialism and short sightedness.

To us it means: Stop wasting your life drinking the same corporately-diluted beer and challenge your palate to a brew that has a rich heritage, a bold passion and a story that will make you way more exciting to others. The same philosophy lives in our kitchen where we push ourselves to experiment with interesting combinations of perfectly paired flavors– each one designed to inspire our guests.

Our Journey

My wife Michelle and I started Hinterland in an old cheese factory just outside of Green Bay, Wisconsin (my home town) with nothing more than our own limited funds, sweat, passion and insanity. It was 1995, and we were 24 year old college grads grinding out corporate jobs and dreaming of doing something that people actually appreciated. While trying to discover the meaning of life, I poured most of my effort into music and tried to land a record deal while playing with the band Lucky in San Francisco. Our coast to coast travels in my VW Bus, twists and turns landed me a gig as editor for  Beer, The Magazine  where I just got hooked into the beer-making world. It was this explorative journey to find our own Hinterland that gave the brewery its name and its mission.

In 1995, after I nearly burned down the brewery (not kidding), we decided to expand and renovate a turn-of-the-century Green Bay meat-packing warehouse into a production house—and a restaurant featuring farm-to-table culinary experiences.

Now twenty years later, Michelle and I still lead the spirit of Hinterland through a passionate and talented staff. Along the way, we’ve launched three restaurants because we believe in great ingredients and great tasting experiences. At the end of the day, we really enjoy hanging out with friends talking about killer beers and exceptional food.

We are more than excited to invite guests to experience our latest restaurant, located across the street from Lambeau Field in Green Bay’s Titletown District. This new location takes the pioneering, Hinterland philosophy to a whole new level. Come visit us and I’m sure you’ll agree.

Touring Wisconsin's Craft Breweries

While the mega-breweries that once made Wisconsin famous have largely disappeared, they’ve been replaced by innovative craft brewers who’ve put the state squarely back in the center of the beer universe. By mixing traditional European brewing techniques with local ingredients and a deft artist’s touch, these entrepreneurs have created some of the most highly regarded beers in the world – as well as vibrant tourist attractions.

Dozens of Wisconsin’s craft breweries and brew pubs offer tours or tastings and visitors looking for a unique culinary and cultural experience can visit a number of them within just a few days.

Southern Itinerary

Milwaukee ,  New Glarus ,  Mineral Point ,  Middleton ,  Madison

DAY ONE: Greater Milwaukee Area Where else would a beer-tasting tour of Wisconsin start but in the city once know as the “brewery capital of the world”? Although iconic names like, Pabst and Blatz are long gone, today the city is host to an array of successful microbreweries and brew pubs, including the Lakefront Brewery and Sprecher Brewing.

Tour:  Sprecher Brewery Located just a short ten-minute drive from downtown Milwaukee, Sprecher Brewery offers visitors more than just craft beer. The company’s popular sodas – like its beers – are made with local ingredients, including the ginger, ginseng and cranberry infused Ravin’ Red and a honey-based root beer. Beer lovers won’t want to miss the highly decorated Black Bavarian and Oktoberfest.

Sprecher Brewery tours are offered throughout the year and include visits to the brewhouse, aging cellar, bottling line and warehouse. After the tour, adults can sample four beers chosen from among ten on tap and unlimited samples of soda.

Lunch:  Solly’s Grille As you leave Sprecher, you may notice an intoxicating aroma. Just two blocks to the east is Milwaukee’s best known hamburger emporium, Solly’s Grille. A Milwaukee landmark since 1936, Solly’s “butter burgers,” have been named to USA Today “America’s Top 10 Best Burgers” list and featured on Food Network and the Travel Channel. Save room for a chocolate banana malt!

Tour:  Lakefront Brewery From Solly's Grille, head south for Milwaukee’s historic Brewer’s Hill Neighborhood. Nestled alongside the Milwaukee River is the former “Beer Line” railroad bed, home to one of America’s most unique craft brewing operations, the Lakefront Brewery.

Housed in a century old trolley station, Lakefront Brewery uses an assortment of “experienced” equipment purchased from defunct breweries throughout Germany and the eastern U.S. The Lakefront facility is also notable for its Three Stooges fermentation vats, its Bernie Brewer chalet (a relic from the late Milwaukee County Stadium, former home the MLB Brewers) and its boisterous Palm Garden, a German-style banquet hall that serves traditional Friday night fish fry to the sounds of a live polka band.

Lakefront Brewery Tours not only take you through the brewing process and facilities, they also include four pours of beer, a free pint glass and a drink voucher for select Milwaukee bars. Lakefront is also a Travel Green Wisconsin-certified business.

Dine:  Historic Third Ward For a memorable dinner, visitors can find multiple options in Milwaukee’s Historic Third Ward. Once a bustling warehouse district, this neighborhood just south of downtown is now home to an eclectic array of shops, galleries, theaters, nightclubs and eateries, many of which feature outdoor patio dining along the Milwaukee River. Notable restaurants in the area include  The Wicked Hop  and  Swig .

Stay:  The Iron Horse Hotel Just minutes away in the Menominee Valley is one Milwaukee’s most unique hotels. Located across the river from the  Harley-Davidson Museum , the biker-themed Iron Horse Hotel offers visitors a heady mix of attitude, class and cutting edge style – all served up in a wonderfully refurbished former warehouse. Finish the night with a drink in the hotel’s Branded lounge or just soak up the ambience in the ultra-chic lobby area (leather attire is strictly optional.)

DAY TWO:  Green County Day Two begins with a drive southwest along I-43 to Delavan, then west on Highway 11 into an area known as “America’s Little Switzerland.”

Tour:  Minhas Craft Brewery Founded in 1845 as the Blumer Brewery and, more recently, operating as the Joseph Huber Brewing Company, this Monroe facility is the second-longest continuously operating brewery in America. Known for decades for its Berghoff and Huber brands, the Minhas Craft Brewery makes a variety of brands, including several Canadian labels and Lazy Mutt Farmhouse Ale. The brewery offers a gift shop and museum as well as tours which are offered at limited times throughout the week.

Stroll:  Monroe Courthouse Square Monroe’s downtown is centered around the  Green County Courthouse , a beautiful 1891 Romanesque revival structure with a four-faced clock tower. The surrounding courthouse square is filled with shops and restaurants, including Baumgartner’s Cheese Store and Tavern.

Lunch & Shop:  Baumgartner’s Cheese Store and Tavern Established in 1931, Baumgartner’s is Wisconsin's oldest cheese store. It offers patrons a wide selection of Wisconsin's finest cheeses as well as imported cheese, specialty foods and sandwiches. While all are delectable, the locals swear by the oh-so-aromatic limburger on rye sandwich with a mint on the side. (To see the nation’s only remaining limburger producing cheese factory, stop at  Chalet Cheese Co-op  on your way out of town.)

Self-Guided Tour:  New Glarus Brewery Roughly 30 minutes to the north is the village of New Glarus, where the local Swiss heritage is apparent in its chalet-like architecture. Visitors here will find one of Wisconsin’s most successful craft breweries, New Glarus Brewing, the maker of Spotted Cow, Wisconsin Belgian Red and a host of other award-winning brews. In keeping with the surrounding architecture, the brewery’s Hilltop Brewery was designed in a distinctly Bavarian style. Both New Glarus production facilities offer tours

Dinner:  New Glarus Hotel Restaurant The Swiss are famous for fondue, so naturally you’ll find this delicacy in a number of New Glarus eateries. One of the best is the New Glarus Hotel Restaurant, which also offers services specialties like weiner schnitzel and deep-fried cheese curds. If you can’t get a table there, try the nearby  Glarner Stube , another favorite of fondue aficionados.

Stay:  Chalet Landhaus Inn & Restaurant Swiss food can also be found at the Chalet Landhaus Inn & Restaurant, where Swiss-trained New Glarus Chef Mike Neval offers fondue demonstrations for groups of 10. The restaurant offers Swiss and American fare in a well-appointed chalet-like dining room, while the inn boasts an indoor pool and some suites with Jacuzzis.

DAY THREE:  Mineral Point Start Day three by driving a half hour west on Highway 39 to the artsy and historic town of Mineral Point. Home to thousands of lead and zinc miners in the mid-1800s, Mineral Point today boasts several museums, a state historic site and more than 20 art galleries, many of them in beautifully restored stone buildings that date to the mining era.

Shop and Stroll:  Mineral Point's Shake Rag Alley Many galleries and shops are located on Shake Rag Alley, where several original Cornish and Welsh settlers lived. Among the most notable is the Brewery Pottery Studio, which is housed in an 1850s brick building thought to have been the state’s first brewery.

Commerce Street Brewery & Hotel / Red Rooster Café Given the focus of this trip itinerary, it’s hard not to suggest the Commerce Street Brewery & Hotel. Housed in yet another vintage building, it serves its own handcrafted beer and a variety of entrees featuring locally grown and selected organic ingredients. If you have taste for authentic Cornish foods, try the meat and potato filled pasties or ultra-sweet figgyhobbins at the Red Rooster Café.

Tour:  Capital Brewery Located roughly an hour from Mineral Point in Middleton (just west of Madison) is the Capital Brewery. Capital has maintained a lofty reputation among beer aficionados with all of its current brewers rated between 88 (highly recommended) and 98 (superlative) by the Beverage Tasting Institute. Capital Brewery offers tours Friday through Sunday, and its indoor Bier Stube is open from November through April. During warmer months, its outdoor Bier Garten is open several days a week and frequently hosts concerts and other special events.

Note: Capital Brewery tours temporarily suspended due to COVID-19.

Shop:  State Street and Capitol Square A pedestrian mall connecting the University of Wisconsin campus with the State Capitol square, State Street offers a dizzying assortment of restaurants and watering holes, funky shops, street musicians and the Overture performing arts center complex. Capitol Square also sports some colorful characters, as well as interesting dining and shopping (don’t miss  Fromagination  artisan cheese store) and, on Saturdays from April-mid -November, the  Dane County Farmers Market  takes up the entire Capitol Square.

Dine:  Great Dane Pub & Brewing Company Just east of the square is the Great Dane Pub & Brewing Company, one of Madison’s liveliest dining establishments. Housed in a Victorian-era hotel building, the Great Dane features a view of the brewing area from the main barroom, a separate main dining area, an outdoor beer garden and a basement rathskeller. The Great Dane usually has a dozen or so house brews on tap at any given time (including several seasonals) and offers a variety of hearty appetizers, sandwiches and entrees ranging from ribs to vegetarian burritos.

Stay:  Mansion Hill Inn B&B Walk off your dinner with a leisurely stroll to the Travel Green Wisconsin-certified Mansion Hill Inn. A restored Romanesque Revival villa built in the late 1800s, offers guests a delightful mix of Victorian elegance and modern amenities including wi-fi and Jacuzzis. And the views of the Capitol and lakes aren’t bad either.

SIDE TRIP If you have time, take a detour 30 minutes east of Madison to visit  Tyranena Brewery  in Lake Mills. Tyranena brews beers with names like Bitter Woman IPA and Dirty Old Man Imperial Porter. Tours of Tyranena are free but are given only when schedules permit. However, the tasting room is open regularly.

Northern Itinerary

Osseo ,  Chippewa Falls ,  Stevens Point ,  Green Bay

DAY ONE: Chippewa Falls and Stevens Point Visit some the nation's oldest breweries still in operation in northern Wisconsin.

Tour:  Jacob Leinenkugel Brewing Company Allow enough time for your first stop, as the stories surrounding it go farther back than those of most Wisconsin breweries. Founded in 1867 by the Bavarian brewmaster whose name is still on the door, Leinenkugel’s is the seventh-oldest brewery in the United States, as well as the oldest business in Chippewa Falls and one of the oldest in Wisconsin. Now owned by Miller-Coors, it is still run by the Leinenkugel family today.

Tours of the Leinenkugel Brewery are free and they begin and end at what has been called “the best brewery tasting rooms in the country,” The Leinie Lodge. As one might expect, tours here have a decidedly historical twist, introducing visitors to the family’s history and their brewing process, as well as historical signage and authentic brewing artifacts. (And yes, sample tastings are also included.)

Lunch:  Northwoods Brewpub and Grill Osseo's Northwoods Brewpub and Grill bills itself as first microbrewery/brewpub in west central Wisconsin. Housed in a sprawling cedar-framed structure, Northwoods Brewpub’s seven-barrel brewing system produces a variety of different craft beers and sodas. The pubs food menu compliments their craft beer selection with thick and juicy burgers, pizza and tasty appetizers.

Tour:  Stevens Point Brewery Head east about 1 hour for Stevens Point, where there is one Wisconsin brewery with a history longer than Leinenkugel’s – the Stevens Point Brewery. Producer of one of the first lagers ever made in the United States, the Stevens Point Brewery was founded in 1857 and is the fifth-oldest privately owned brewery in the nation. How’s this for perspective? Stevens Point Brewery provided beer to Union troops during the Civil War!

The facility’s 45-minute tour gives a detailed history of the Stevens Point Brewery and includes visits to the brewing, aging, packaging and warehouse facilities. As part of the tour, guests visit the Point Hospitality Room to sample existing beers, new beers and gourmet soft drinks.

Dine:  Sky Club South of Stevens Point in nearby  Plover , Sky Club claims to have founded the concept of the salad bar in 1950. The Wisconsin supper club, established in 1935, is a great stop for steak, seafood or homemade pizza. If you're up for another drink, choose from nearly 20 beers and more than 100 wines.

Stay: Dreams of Yesteryear B & B Dreams of Yesteryear, a Victorian home built in 1901, is listed on the National Register of Historic Places because of its rich history and beautiful architecture. Located off the Green Circle Trail, a 27-mile trail that loops the city, it’s within walking distance from Downtown Stevens Point and is a Travel Green Wisconsin certified business. Beyond the location and house itself, a stay here means thoughtful hospitality, delicious breakfast and a lasting memory before continuing on your brewery tour.

SIDE TRIP If you have more time, be sure to visit  Central Waters Brewing Company , just east of Stevens Point in Amherst. This innovative brewery utilizes solar panels, radiant floor heating and recycled grains into its brewing process. Free tours offered Friday and Saturday, its Tap Room is open Friday through Sunday the late afternoon and evening and a Beer Garden with outdoor seating in the summer.

DAY TWO: Green Bay Fall is also football season and Day Two of the itinerary brings visitors to the center of the gridiron universe – Green Bay’s Lambeau Field.

Lunch:  Titletown Brewing Company Built in a former Chicago & Northwestern Railroad Depot, the Titletown Brewing Company has been a local favorite since 1996. Its distinctive clock-tower building, designated a National Historic Landmark in 1999, became even more noticeable in 2005, the year when the Packer Hall of Fame  moved into the new Lambeau Field Atrium complex. As a result, the Hall’s iconic Don Hutson statue needed a new home – and, fittingly enough, Titletown Brewing Company obliged. In addition to a variety of brews including several named after Packer greats of the ‘30s and ‘40s, Titletown offers sandwiches, wraps, salads and entrees.

Tour:  Lambeau Field After lunch, you’ll want to tour football’s version of the Promised Land: Lambeau Field. The Lambeau Field tour begins in the Atrium area, before going upstairs for a look at the exclusive Legends Club. From there, guests are led down through the players’ tunnel and into the heart of the complex. Along the way, they’ll learn all about the incredible history of the team and will have photo opportunities galore. Tours are offered throughout the afternoon, so plenty of times are available. However, be warned: the Lambeau tours frequently sell out so you are best off to call and reserve a spot ahead of time. Save plenty of time to visit the Packer Hall of Fame and the Packer Pro Shop.

Dine:  Hinterland Brewery Like most Wisconsin brew pubs, Hinterland turns out a variety of wonderful craft beers. Unlike most Wisconsin brew pubs, Hinterland offers a wide variety of fresh seafood – and we don’t mean walleye, bass or perch. Hinterland partners with fisherman in Honolulu, Seattle and Maine to procure fresh ocean fish as often as two times a day. They also boast local producer relationships – for items such as fresh game, hand foraged mushrooms and heirloom produce – to produce a menu that evolves with every season. And, the beer is pretty good, too.

Stay:  Tundra Lodge Resort Just minutes from the “frozen tundra” of Lambeau Field is the Tundra Lodge Resort. Although guests here are surrounded by the charm of a Northwoods lodge – check out the crackling 45-foot stone fireplace – they are simultaneously drawn to the steamy allure of an expansive indoor waterpark. Could this be the best of both worlds? We certainly think so. SIDE TRIP If your schedule allows, visit  Appleton’s Stone Arch Brewpub  located on the banks of the Fox River. Located in a 150-year-old industrial building between locks on the river, Stone Arch is equal parts brewery, restaurant and pub with beer garden. Stone Arch offers patrons a variety of craft beers and gourmet sodas along with a delightful menu of contemporary American cuisine.

Why Green Bay bars and restaurants want to stay open until 4 a.m. during 2025 NFL draft and other changes

GREEN BAY - Green Bay area bars and restaurants want to be able to stay open until 4 a.m. for a nine-day period that includes the 2025 NFL draft.

The two-hour later closing time was one of five requests the Brown County Tavern League and City Council member Brian Johnson asked the city's Protection & Policy Committee on Monday to consider. The package of proposals would seek to maximize the opportunities and address the logistical realities that come with hundreds of thousands of visitors in Green Bay for the draft, scheduled for April 24-26, 2025 .

Tavern League officials in recent months have started discussions with city of Green Bay staff about possible changes and they expect to begin similar discussions with other Brown County communities soon with a goal to create consistent rules regarding alcohol for businesses and patrons alike, whether they're in Ashwaubenon, Green Bay or Howard. The changes requested in Green Bay would take effect from April 19-28, 2025, the Saturday before the draft until the Monday after it.

The proposals ensure the region makes a good impression on visitors and that those visitors can safely travel around the Green Bay area, support local businesses and avoid long lines to shop, eat or drink, said Tera Hansen, president of the Brown County Tavern League and owner of State Street Pub.

"We don't want to fail on this. It's going to be huge," Hansen said. "We want to work together on this."

The later closing time mirrors changes Gov. Tony Evers approved in December to allow bars and restaurants in 14 Wisconsin counties to stay open until 4 a.m. when Milwaukee hosts the Republican National Convention , July 15-18. The Green Bay area also would need state approval to change the closing time for bars and restaurants.

Johnson said the Tavern League has focused on solutions that could make it easier for city staff to manage an influx of permit and special event requests, for business owners to prepare for such an enormous event, and to ensure visitors get to see and support the entire community, not just businesses near Lambeau Field.

"You have to do that to create a really positive visitor experience. You’re moving a lot of people around. To create flexibility is important," Johnson said.

Extend bar close from 2 a.m. to 4 a.m.

The request might seem like a desire to serve customers for longer, but it's borne in part out of experience with the last Packers home playoff game, on Jan. 22, 2022, versus the San Francisco 49ers. After midnight, Hansen got a call from an employee who said patrons who wanted to use the tavern league's SafeRide program faced three-hour waits that would have extended past the 2 a.m. closing time and prices above $200 for a ride.

SafeRide is a Tavern League of Wisconsin program that since 2004 has provided more than 1 million free rides home from more than 2,000 tavern league bars for patrons who have had too much to drink.

The 4 a.m. closing time would allow more time for Uber or taxi drivers or the tavern league itself to shuttle more people home without either forcing them out onto sidewalks to wait or risk them driving when they shouldn't to their hotel or residence because the bar closed at 2 a.m.

Don Mjelde, the eastern district vice president for the Tavern League of Wisconsin and owner of Richard Craniums bar, said not every tavern and restaurant will stay open until 4 a.m., but that those who need to would be able to. And like with the RNC effort, Mjelde said the state tavern league will ask the state Legislature and Gov. Tony Evers to enact the change for Brown County and several surrounding counties expected to host large crowds of draft visitors.

Allow the sale and consumption of beer, wine and liquor on Green Bay and Brown County streets and sidewalks

This would mirror Packers home game day approaches that allow fans headed to Lambeau Field to carry open bottles of beer, wine and liquor with them on streets and sidewalks.

The tavern league cited three key reasons for this:

  • Consistency across communities. Locals may obsess over what's Ashwaubenon and what's Green Bay, but a visitor in town for the draft won't realize laws regarding open containers could change when they cross Lombardi Avenue.
  • Most of the draft activities will be outside and businesses will need to offer convenient, quick service.
  • They said relying solely on the bars and sales areas in licensed bars and restaurants would create extremely long lines.

Hansen said a bar owner she knows in Kansas City, which hosted the 2023 NFL draft, told her of visitors who had to wait two hours for a drink and seven hours for a meal. It's the type of story Hansen does not want visitors to Green Bay to relay to coworkers and friends when they return home after the draft.

Let bars and restaurants use their parking lots to serve more patrons

Akin to COVID-19-era provisions, bar and restaurant owners would once again be allowed to turn their parking lots and unused public spaces into areas for alcohol service and for patrons to sit. It maximizes space with so many more people in town and enables restaurants or bars to serve more customers quicker.

"It’s something we should be able to accommodate," Johnson said.

To improve efficiency, Hansen said the city agencies could streamline the details and information they need, give establishments a set deadline, and approve all applications at once rather than get bogged down in individual application reviews in the months ahead.

Have a city staff person coordinate and expedite the process to get streets closed for Green Bay draft parties

The tavern league recognizes not every street with a bar or restaurant would be able to request a closure, but the group hopes to bring residents, business owners, Green Bay Public Works, public safety agencies and others together to see if there are areas where it would be allowable, said Robert Heinritz, a Brown County Tavern League board member and owner of XS Nightclub.

The group wants to make it easier for restaurants and bars to request street closures for parties during the draft and for city of Green Bay staff to expedite the review process.

Help fund and market plans for an expanded SafeRide program during the NFL draft

To avoid the high-priced Ubers and long waits, the tavern league wants to expand its SafeRide program into more of a shuttle service during the draft. Johnson said he sees opportunities to pursue grants or other funding sources to help.

Shuttle buses would increase the number of SafeRides it could provide people back to their hotels or Airbnb rentals, but they also could help get the thousands of visitors to and from the draft zone near Lambeau Field much easier. Mjelde said the tavern league wants to see if the city can help fund such a program and also to help consistently promote things to know about going to the draft, such as what you can carry into the draft grounds.

"This is all about how Green Bay looks when it's done," Mjelde said. "We want to provide everyone the best experience possible."
