I Took Tastes and Traditions of Bologna Food Tour with Devour – My Experience

One of the biggest reasons Bologna is a popular tourist destination in Italy is its local food. To be fair, not only Bologna’s typical dishes but the specialties of the whole Emilia Romagna region. This is why I couldn’t miss a full Bologna food tour comprehensive of tasting and anecdotes.

Tastes and Traditions Bologna food tour – My experience

I took this food tour on a day trip and it started in the morning as soon as I got off the Rome to Bologna fast train. The tour started in Piazza del Nettuno and took place all around Bologna city center. It was led by Benedetta, a very expert local guide who knew the city’s and region’s most authentic places, dishes, and eating habits.

Due to the great diversity of dishes and recipes in each Italian region, we can’t really talk about “ Italian food “, and even though I’m Italian, I realized how little I knew about the culinary traditions of the Emilia-Romagna region. Benedetta shared so much knowledge about Bologna’s foods and dishes that I learned way more than I would have by visiting restaurants and markets on my own.

In fact, I had already been to Bologna and visited some of the places included in the tour, but my experience wasn’t even remotely similar. I never got to strike up a conversation with the local vendors about the origins of their business. I never learned the history of mortadella, nor I knew so many tortellini and tortelloni are being handmade every day in the local market.

First stop – Breakfast!

I had just got off an early morning train so an energy boost was just what I needed. We stopped at the historical Gamberini cafè under the porticoes of Via Ugo Bassi and had our breakfast a taste of two traditional Bologna cakes and pastries, the delicious rice cake and the divine pinza . The pinza was in two versions, one stuffed with apricot jam and one (my favorite) with sweet-and-sour Bolognese “mostarda”.

Caffè Pasticceria Gamberini is a favorite stop for the locals craving good coffee and traditional pastries to be enjoyed on the backdrop of the wonderful UNESCO-listed porticoes of Bologna.

After breakfast, we were off to the famous Mercato delle Erbe, literally two minutes away on foot.

Second stop – Parmigiano, mortadella, and tortelloni!

Our visit to the historical Mercato delle Erbe was in the name of the most famous local specialties.

First thing first: Parmigiano Reggiano, the one and only. We tried it of different ages, textures, and also combinations with a drizzle of authentic quality balsamic vinegar from Modena.

We met the local shop owners and indulged in fantastic bites and nibbles. Tucking into a typical sandwich stuffed with the traditional, flavorful mortadella and snacking on fresh green peas and tender fava beans led to a tasting of the famous tortelli stuffed with ricotta cheese and parsley and dressed with butter and grated Parmigiano.

We were already quite full but our Bologna culinary experience still had one stop before lunch.

Third stop – One-of-a-kind drink-only non-osteria!

From Mercato delle Erbe, we headed to the 15th-century Osteria del Sole, a traditional “non-osteria” located in a narrow alley near Piazza Maggiore. We had our covered picnic sitting at the tables of this typical place Bologna residents love.

But why “non” osteria? Because they don’t serve any food, only drinks. And also on the drink side, only wine. But at least you can choose between red and white! Actually, in more recent times, due to the high demand, now they are also serving beer. But that’s it, no more requests. And already from the entrance, they make it very clear: if you don’t drink, you are not welcome.

So how did this work for us? Our shrewd guide had already everything lined up. In the market, she bought traditional regional bread and cold cuts and once at the Osteria del Sole, we tucked into the delicacies paired with a glass of local wine.

Fourth stop – Lunch with REAL Bolognese ragout!

After a morning full of appetizers, lunchtime arrived. By the time we sat, Benedetta had already warned us. The real Bolognese ragout sauce features meat with a bit of tomato sauce, not what we were used to in the other regions of Italy which, to her eyes, is just tomato sauce with a bit of minced meat.

We were full, but Bologna’s fresh tagliatelle with ragù is a dish that’s just impossible to miss. A sensory overload that makes everyone happy.

Fifth stop – Dessert with a view!

Our Bologna food tour ended in what’s possibly the most iconic place of the Quadrilatero, under the porticoes in the shade of the two historical towers Garisenda and degli Asinelli.

Listening to the fascinating explanation of how the towers were made, what their purpose has been, and what’s been happening all around in the past centuries, we had our final dessert, a bite of “pinza” stuffed with “mostarda”.

My conclusion and final thoughts about the Tastes and Traditions Bologna food tour

This is not my first tour with Devour Tours. I have joined their Testaccio food tour in Rome as well as their pizza-making and pasta-making class in Trastevere , and also their Naples food tour, so I wasn’t new to their style.

This Bologna food tour confirmed what I knew, Devour Tours guides are knowledgeable and enjoy sharing their passion for the local foods and culture. Our guide Benedetta showed from minute one she knew what she was talking about and where to take us. I immediately had the impression she was a regular of the places we ate at, which made her and the tour even more trustworthy.

We recently joined Devour Tours new Bologna food tour that aims to help you discover the tastes and traditions of Bologna. In our review, you’ll learn who this tour is best suited to and what to expect when you join the tour.

Bologna Food Tour Review

The Devour Tours food tour in Bologna is for groups of 12 people maximum and runs for around 3.5 – 4 hours. There are eight food stops in total and each is designed to introduce you to one of the iconic foods of Bologna and the Emilia Romagna region . Expect to enjoy coffee, sweet treats, Parmigiano Reggiano, local cured meats, Balsamic Vinegar, two different local pastas, and two glasses of local wine. You will be well-fed but not bursting at the seams and be equipped with insider tips on where to eat in Bologna! 

But you won’t just be eating. You’ll learn why the city is known as La Dotta, La Grassa, and La Rossa (the Learned, the Fat and the Red) as you enjoy the delicious dishes and produce of one of Italy’s favorite foodie cities.

What to expect on your food tour of Bologna

If you’re hoping to understand more about who the Bolognese people are (and have been throughout history), a lot of it comes back to food. It’s clear that e very food stop on this tour (each more tasty than the last) was selected to help illuminate something important about the people behind its production.

During the Balsamic Vinegar tasting, we learned about how the iconic barrels were created to give the women in the family a dowry. They were created when a baby girl was born, and after 25 years of aging (both the vinegar and the child!) the woman was ready to marry.

In this way, the tour shared both the food and culture of Bologna and ensured it was an engaging and interesting as well as delicious bite into the city.

Bologna Food Tour Details

Devour Tours walking food tour in Bologna kicked off in the heart of the city with a second breakfast as all good Italians do. Refueled with caffè and a traditional rice cake, off to the market we went. Here, we discovered the difference between 24 and 48-month-old Parmigiano Reggiano and the black gold of Modena.

Next, we met the pink Queen of Bologna (also known as mortadella ), enjoyed a tasting of seasonal fruits from the market vendors, and of course, freshly made pasta. Note – there are two pasta stops on this tour, because the region is just that famous for its wonderful pastas. The first stop is tortelloni filled with ricotta and herbs and served with a light butter and sage sauce. 

Venturing back towards the main square, Piazza Maggiore , our guide led us through the oldest part of town known as the Quadrilatero. Pushing open a discrete door (with a sign saying no videos allowed), we stepped inside a 650-year-old bar. This historic osteria is part of the very fabric that makes up the town and it was a delight to see locals playing cards alongside tourists stepping in for a drink here. Our guide remarked that we could be inside a Fellini film as we sipped our glasses of local Pignoletto over a picnic of prosciutto and salami. 

Our final savory stop was for a bowl of tagliatelle with ragu, accompanied with a glass of local Sangiovese wine. Afterwards, we walked it off admiring the canals of the city and the infamous Finestrella that offers an Instagram-worthy photo moment.

Last but not least, our Bologna food tour ended on a sweet note. It’s a truly local treat and much more typical than just a gelato, which made it all the more memorable. 

Bologna Food Tour Guide

Our tour guide Benedetta is a local and grew up on the Romagna side of the region. Today, she lives in the heart of the city center with her Bolognese husband and brought this food-obsessed place completely to life for us.

While you can research the products the city is renowned for, it’s truly a totally enriched experience going around with a guide. Besides taking us to her tried and trusted delis, restaurants and bars, Benedetta was also able to explain the context as to why these products exist, the history behind them, and how they fit into today’s modern Bolognese life.

The quote of the day was hearing her describe 48-month-aged Parmigiano Reggiano and Balsamic Vinegar of Modena DOP as the “ perfect marriage ” – sign us up!

Bologna Food Tour Highlights

There were so many highlights during this best Bologna food tour. Whilst all the food is obviously scrumptious, the stories around their traditions and how they are carried into modern day times were particularly interesting. For example, who knew that the Bolognese Sauce (ragu in Bologna) was actually French? Or that traditionally, mortadella never had pistachios inside.

It was promising to learn about how the city is trying to reinvigorate life into older traditions even as our lifestyles change, like opening the market during the evening with restaurant-like food stalls. Or even offering other kinds of fresh pasta alongside those traditionally from the region. There is this beautiful blend between traditions and modern-day life that was highlighted constantly by our guide and would have been easy to miss without joining this great tour.

What is the one thing we’ll remember about this experience?

The creamy, almost floral taste of Parmigiano Reggiano that specifically comes from cows grazing in the mountains is seriously life-changing. Moreover, the care that goes into creating these incredible food products and the appreciation for these long-standing food traditions that are carried on even in modern-day times is truly memorable.

More than simply a way of sustaining ourselves, the things that we consume tell stories of how cultures have morphed and changed throughout history. And that’s one of the reasons that when we’re visiting a new location, we love to experience a local food tour. Run by the international tour agency Devour Tours, we recently joined the Tastes and Traditions of Bologna Food Tour and Market Visit where we ate our way through this iconic city and learned a thing or two about tagliatelle al ragù (it’s not the same as bolognese!)

Tastes and Traditions of Bologna Food Tour with Market Visit review

Meeting our group.

It was a crisp winter Saturday morning when we headed over to the bustling Piazza del Nettuno to meet with our guide from Devour Tours. It was easy to spot Benedetta with her red Devour Tours bag, and soon eight of us hungry explorers got down to introductions.

Benedetta explained that she has a degree in Art History and a real passion for good food, so we immediately knew that we were in safe hands. As we set off, she was soon telling us tales of the architecture that we were passing on the way to our first destination and explaining how food plays an integral role in the lives of locals in the area.

Eating our way through the city

Of course, we had to start our day as Italians do, by enjoying an espresso while standing up at one of the city’s longest-running patisseries. This place was so gorgeous and was absolutely packed, but luckily we got a spot thanks to being with the group.

Alongside our coffee, we sampled a traditional Emilian torta di riso (rice cake) that has been made and enjoyed in Bologna for centuries. Benedetta explained that, while Lombardy may be the famed area for rice growing in Italy, historically, the region of Emilia Reggiano was also a large producer, hence why the cake is crafted from rice flour.

Next stop was one the city’s most renowned food havens: Mercato delle Erbe , where we met a local cheese monger and sampled some of the most exquisite Parmigiano Reggiano, aged to different levels. We learned about how to spot real and fake Balsamic Vinegar and what seals to look out for to ensure that the parmesan is locally produced.

On the other side, one of the market’s longest-running operators prepared mortadella sandwiches for us along with some takeaway cold cuts for an upcoming destination. As a vegetarian, they made me one filled with cheese, which was very delicious.

After sampling some of the seasonal local produce at one of the vegetable stands, we headed out to a different part of the city for an authentic osteria experience. While these days, we may think of osterie as places to wine and dine, we learned that back in the day, it was more about the wining than the dining.

The spot we went to first opened in 1465, and you probably wouldn’t even be able to find it without a local. This was such a wonderful experience, as the space is family-run and absolutely buzzing with art and posters across the walls and a warm and unpretentious atmosphere.

Again, they had a table saved for us, which was super lucky as, even though it was barely 12pm, local patrons were packing the space and cheersing with friends and family as they caught up on the week’s events.

Only serving wine, we sampled some of the house’s sparkling varieties while Benedetta laid the table with our cold cut haul from earlier. Spider bread, cheese, salumi, and mortadella lined the bench, as we sat back and listened to the history of the Osteria and how it has changed over time.

Then it was time for the grand event: tagliatelle al ragù – with lashings of wine. Benedetta walked us around the corner to an elegant trattoria beloved by locals for its pasta. Here, we feasted on the iconic pasta and learned about how different families make the iconic dish and how it moved and morphed into spaghetti bolognese.

Us vegetarians weren’t left hanging though. We were served an absolutely divine pasta dish crafted with onions and tomatoes that had been slow cooked for hours. I have to shout this out as my favourite pasta dish across all our weeks in Italy. It was rich and moreish and what I wouldn’t give to have their secret recipe!

The final stop was a walk to see the famed towers where we sampled some more sweets as we learned about the restoration efforts for the famous architectural wonders.

Final thoughts

At the end of three hours, we were absolutely stuffed! They don’t skimp on portions on this tour, in fact I had half a sandwich and biscuit to take home with me for midnight snacks! Benedetta was such a delight. She answered all of our questions and was so insightful about the food, the architecture, and the art that we encountered along the way. She even gave us personal recommendations for different restaurants to sample across the city.

Devour likes to keep the size of the tour group intimate so that everyone can hear the guide as you walk around the city, and I think this definitely makes a difference to the quality of the experience.

With the appetite of a hungry grizzly, “ The Bear ” could gobble up a few Emmy records for its sophomore season. Fresh off a smashing first season that set a new benchmark for comedy series wins with 10 trophies, FX ’s awards-gobbling show shows no signs of letting up. Its second season, which aired in June 2023, is eyeing three more records to own: most acting nominations for a series in a single year, most nods for a comedy, and most nominated episode in history with its sixth installment, “Fishes.”

In the writing stakes, Storer single-handedly crafted the season opener “Beef” and will be able to submit accordingly. Additionally, he teamed up with Calo on “Fishes” and “Omelette,” leaving them the (easy?) decision of choosing their strongest contender. With a squad of brilliant scribes, including Karen Joseph Adcock and Catherine Schetina for “Sundae” and several others across the season, “The Bear” could tie or eclipse the “30 Rock” record of the most writing nominations in a year with four in 2009, also shared with “The Wonder Years” in 1989.

Turning to the acting front, “Fishes” may be a goldmine for nominations, showcasing talents like John Mulaney, Sarah Paulson, Bob Odenkirk, Gillian Jacobs, Chris Witaske, Jamie Lee Curtis , and Jon Bernthal. Regular cast members in the episode, such as Jeremy Allen White , Ebon Moss-Bachrach, Oliver Platt and Abby Elliott, are also in the mix, aiming for main acting recognition.

Curtis, riding high two years after her Oscar win for “Everything Everywhere All at Once,” is the undisputed frontrunner in the guest comedy actress race, eyeing what could be her second career Emmy nod that could bring her halfway to EGOT status (I can’t wait for a potential spoken word album).

Also in the Emmy race are recurring characters like Robert Townsend, who lights up the screen as Sydney’s supportive father, Emmanuel. After five decades in Hollywood, his sentimental turn across four episodes could earn him the first Emmy nod of his career, especially if TV Academy members are going all-in on “Bear.” Meanwhile, Emmy nominee Will Poulter (“The White Lotus”) also makes a strong impression in “Honeydew” as Luca, a dessert chef mentoring Marcus, who could slip into the fray.

Reigning supporting actor champion Moss-Bachrach returns as the gruff yet endearing Richie, as seen in the incredibly focused “Forks.” He’ll be ready to defend his title. He could bring in his co-stars like Lionel Boyce, Matty Matheson and last year’s guest comedy actor nominee Oliver Platt, who qualifies for a supporting bid this time. Meanwhile, Ayo Edebiri, last year’s supporting comedy actress winner, has shifted to lead , leaving the field open for her acting colleagues, including Liza Colón-Zayas, Abby Elliott, and Molly Gordon, all worthy of nominations, who are praying not to vote-split. However, the fierce competition in the supporting comedy actress race, particularly with duplicate and repeat nominees such as “Abbott Elementary” and “Hacks,” leaves any of them vulnerable. Moreover, we expect seven nominees, based on submission tracking showing less than 240 total submissions, adding another hurdle.

When you add all those potential acting mentions, we seem to be barreling towards “Succession’s” back-to-back records set in 2022 and 2023, when it landed the most acting nominations with 14, surpassing the limited series “Roots.” Could this be an overwhelming lovefest for the very serious comedy?

In this culinary-themed TV world, it’s clear the stakes are as high as the flavors of the series are bold, and it’ll be dropping what’s sure to be another delightful third season in the voting window. Whether “The Bear” will devour the competition at the Emmys doesn’t seem up for debate, but one question remains: Will the serving size of nominations be turned into an Emmy statue buffet?
