When Queen Played Their First U.S. Show

Just like every rock and roll band, Queen had to prove their worth as concert openers before graduating to headliner status. And that’s precisely what Freddie Mercury , Brian May , John Deacon and Roger Taylor were doing on the night of April 16, 1974, when they made their U.S. concert debut in support of Mott the Hoople .

Queen’s debut album had performed modestly and their sophomore, titled Queen II , had only been delivered to American record stores just three days earlier – about one month after its U.K. release. So, they were still, by and large, unknowns in the new world.

That meant Queen was effectively starting from scratch as they stormed the stage at Denver's Regis College, a conservative Jesuit institution, in an effort to change this state of affairs — one show, and even one fan, at a time.

Luckily, Queen enjoyed close friendships with the men of Mott (the two bands having already toured extensively together back home), and so the latter did not mind that their upstart openers already pranced and posed upon the stage like well-established superstars. In fact, Mercury and May cut quite striking visions in the lavish silk and satin costumes that were custom-designed in all black for Freddie and all white for May (in reference to Queen II ’s “black” and “white” vinyl sides) just prior to the tour by band friend Zandra Rhodes.

Queen’s set, likewise relied heavily on their latest album, at first, powering up with "Procession," "Father to Son," "Ogre Battle" and "White Queen (As it Began)," before segueing into select first-album highlights like "Great King Rat," "Doing Alright," "Son and Daughter" and "Keep Yourself Alive" (plus the never officially released "Hangman"), before concluding with "Seven Seas of Rhye" and finally, the explosive "Liar."

Meanwhile, the audience was initially fairly stunned into wide-eyed silence by Queen’s arena-sized display of heavy-rock opulence, according to eyewitness reports. But they were clearly won over by set’s end, because they shouted the band back on stage for not one, but two encores, which Queen devoted to vintage rock covers ("Jailhouse Rock," "Shake, Rattle & Roll") and, oddly, cabaret stomps through Connie Francis’ "Stupid Cupid" and Shirley Bassey’s "Big Spender," before demolishing the stage with the frantic onslaught of "Modern Times Rock ’n’ Roll."

Obviously, headliners Mott the Hoople had their work cut out for them that night, and throughout the ensuing, month-long tour. But sadly, everything ended prematurely for the members of Queen, when Brian May was taken ill with hepatitis and ordered to recuperate at once.

Back home to England they went, undoubtedly disappointed that their American assault had been suspended for the moment – but also confident that that country’s first impression of their band had been both positive and promising. Many triumphs were waiting in the next few years.

The Colorado locale of British rock sensation Queen’s first U.S. performance might have you wondering whether this is real life or just fantasy.

On April 16, 1974, Queen performed its first show for an American audience at Regis University, a private, Roman Catholic and Jesuit university in Denver. The performance happened at the field house of what was then Regis College, with tickets available for $7.50 at the campus bookstore, according to an old advertisement Regis University shared in light of last week’s release of the Queen biopic “Bohemian Rhapsody.”

The northwest Denver university created a video asking students and staff members to identify Queen songs followed by a quiz, asking whether they knew where Queen’s first U.S. performance happened.

Regis students and staff were shocked and delighted to learn Queen wasn’t too cool for their school back in the day.

The poster also announced that the 1974 show would feature special guest Mott the Hoople, another English rock band best known for the song “All the Young Dudes.”

Queen isn’t the only legendary band that kicked off its North American tour in the Mile High. A few years earlier on Dec.26, 1968, Led Zeppelin opened its first U.S. tour for band Vanilla Fudge at Denver Auditorium.

Queen + Adam Lambert appreciate that it is an enormous task to try and stop scalpers from taking advantage of fans wanting to purchase tickets for the tour. In an effort to help minimize resale and keep ticket prices at face value for fans, the band are collaborating with the venues’ ticketing partners to restrict the ability to transfer tickets for The Rhapsody Tour so that they may only be transferred between fans at the original price. 

Fans will still have protection against unforeseen circumstances. Those who purchase tickets and are no longer able to attend their show will be able to sell their tickets at the price they paid using a face value ticket exchange, including the Ticketmaster Face Value Exchange – which is free to use for buyers and sellers. Unfortunately, the states of NY, IL, and CO have laws in place which protect ticket scalpers – these laws prohibit artists from being able to restrict the transfer of their tickets to face value exchanges only. Queen + Adam Lambert Announce 2023 North American ‘Rhapsody’ Tour Dates

Queen + Adam Lambert are bringing their Rhapsody Tour back to North America for their first shows on this side of the Atlantic since 2019. The tour kicks off Oct. 4 in Baltimore, Maryland, and wraps up Nov. 11 in Los Angeles, California.

“This tour has lots of new bells and lots of new whistles,” Queen guitarist Brian May tells Rolling Stone . “We’ve evolved as performers, I think. We’ve stepped up our game. We have better chemistry than ever. We understand each other better than ever, and we feel more free in the way that we interpret stuff. We’re very happy with it. There’s lots of new production and stuff we want to excite you with.”

The set will focus on Queen classics like “Another One Bites The Dust,” “Somebody to Love,” and “Radio Ga Ga.” But they sprinkled in deep cuts like “Tear It Up” and “A King of Magic” in Europe last year, and hope to keep doing that.

“This show has evolved since its been in America since we’ve taken it around the world,” adds drummer Roger Taylor. “It’s quite a different show in a way, while retaining all the big hits, which so many people want to hear.”

Ticket sales begin Friday, March 31. In an effort to keep prices low and reduce scalping, the band is going to utilize the Ticketmaster Face Value Exchange, which makes it impossible to sell tickets for more than face value. “It’s an experiment,” says May. “We got sick of seeing our fans get ripped off by scalpers. We’re hoping this works out.”

Queen + Adam Lambert first played together on the 2009 finale of American Idol. They began gigging together in 2012, and have stayed on the road consistently over the past decade. Filling in for Freddie Mercury was a daunting task at first for Lambert, but he’s grown very comfortable with the job over the years.

“I feel less anxiety now,” he says. “I’ve matured as a performer. I trust myself a bit more. I will say that when the movie [ Bohemian Rhapsody ] came out, we had all these new fans, and many of them were young, I felt this little pang of, ‘Oh, these are new fans that haven’t been to a show yet.’ I needed to prove myself again, which is good. It keeps me on my game.”

The 2018 movie was an enormous success that grossed $911 million and won four Academy Awards, including Best Actor for star Rami Malek. It ends at Live Aid in 1985, and there’s been scattered talk over the past few years of a sequel that would chronicle Mercury’s final years.

“We need a script,” says May. “That’s what it comes down to. It took us 12 years to get the script for Bohemian Rhapsody , and get the right team in place. I’m not anxious. I think if the right thing comes along, it might work. We have our wonderful producer, Graham King, on it. It’s a possibility. If the right planets align, it might happen.”

“He would be welcome,” adds Taylor. “But I don’t think it’s going to happen.”

At the moment, this next leg of the Rhapsody Tour is just 14 shows, but it’s very possible they’ll tack on more. “People are buying tickets,” says Lambert. “And hey, we like performing.”

The Rhapsody Across America tour is officially underway

Queen + Adam Lambert onstage in Baltimore

Queen + Adam Lambert have completed the first night of their Rhapsody Across America tour with a show at the 14,000-capacity CFG Bank Arena in Baltimore, MD.  

The band completed a five-act set that included a raft of hit singles as well as solos from Roger Taylor and Brian May, and a debut performance of Is This the World We Created...? from frontman Lambert. The band have released a number of official photos from the show (below).

The band play a second show at the CFG Bank Arena this evening (October 5), before heading to Detroit for a booking at Little Caesars Arena. Full dates below.

From a half-empty show in San Antonio to Formula 1 champions of rock: Queen's long road to Austin

On Saturday, iconic British band Queen will rock the Formula One Grand Prix at the Circuit of the Americas with Adam Lambert, who has been filling in for the group's late singer Freddie Mercury for the past decade. This will be the band's first appearance in Austin, but it's not the first time they've rocked Texas.

Here are some memorable Queen moments in the Lone Star State.

Freddie Mercury and Queen once played a half-full concert hall in San Antonio

Queen first landed Stateside in 1975 during their Sheer Heart Attack Tour. Concert photographer Tom Callins, then a 15-year-old young music lover, caught the show at the Municipal Auditorium in San Antonio, which had a capacity of roughly 6,500 .

"That show was maybe half sold-out," Callins told the Houston Chronicle in 2018.

But the crowd was enthusiastic. According to setlist.fm , the band kicked off their set with "Procession" and closed the main set with "In The Lap Of The Gods ... Revisited." In two encores they covered Cy Coleman's "Big Spender," Elvis Presley's "Jailhouse Rock" and "Be Bop-A-Lula" by Gene Vincent & His Blue Caps.

During that tour, the band also played McFarlin Auditorium on the Southern Methodist University campus.

Queen played Houston and Dallas in 1977-1978

1977, the year of the Silver Jubilee for Queen Elizabeth II, was also a banner year for the band Queen, who sold out two nights at Madison Square Garden during the North American leg of their "A Day at the Races" tour.

By this time, the band had shaken up their sound, mixing everything from heavy metal to light opera as they folded "Bohemian Rhapsody" into every set.

That year the band played Houston several times. They played the Moody Coliseum on the SMU campus on Feb. 25 and the Sam Houston Coliseum on Feb. 26 as part of the "A Day At The Races Tour."

In December, they played the Summit in Houston and the Tarrant County Convention Center in Fort Worth as part of the "News Of The World Tour." There's a playlist of videos from the December show at the Summit available on YouTube. (H/T KLAQ 95.5 FM El Paso .)

On Oct. 28, 1978, the band opened their "Jazz" tour at the Dallas Convention Center. A couple days later, the band played New Orleans for Halloween. According to Wikipedia (citing Rolling Stone) , that show "featured snake charmers, strippers, crossdressers and a naked fat lady who smoked cigarettes in her crotch." We have not been able to dig up reports of similar shenanigans in Texas.

In the '80s Freddie Mercury rocked a cowboy hat, rode on Darth Vader

Part of Freddie Mercury's stage schtick during "The Game" tour in 1980 was to return to the stage for an encore riding on the shoulders of someone dressed as Darth Vader, or occasionally Superman.

Texas photographer Callins caught an iconic photo of Mercury singing "We Will Rock You" piggy backing the "Star Wars" baddie at the band's 1980 show at the Summit. "Star Wars" was all the rage at the time, and when Mercury rode Vader into the arena it was "pandemonium," Callins told the AV Club in 2015 . "Everybody just thought it was so funny, so Freddie. It was so over-the-top. (Laughs.) Everybody got a chuckle out of it, but a cheer went up. It was a happening, you know? Everybody got into it."

The website Houston Rocks also has photos of the Darth ride, as well as shots of Mercury rocking a cowboy hat .

Side note: Apparently fans hated Freddie Mercury's mustache so much during this tour that they threw razors at him.

Second side note: The city of Houston sold the Summit, once home to the Houston Rockets, in 2005. It is now home to Joel Osteen's megachurch.

Queen with Freddie Mercury last played Texas in 1982

The final Queen tour to come to the United States was the "Hot Space," outing which hit Dallas and Houston in August 1982. The band was beginning to splinter, with several members, including guitarist Brian May and Freddie Mercury, working on solo or side projects. After they wrapped the tour, they returned to the U.S. in September to appear on "Saturday Night Live," where they performed "Under Pressure" and "Crazy Little Thing Called Love."

Mercury was struggling with nodes on his vocal chords and was allegedly hoarse following a screaming match with his boyfriend Bill Reid.

It would be the band's final U.S. performance with Freddie fronting the band. Mercury died of complications from HIV/AIDS in 1991.

Queen + Adam Lambert have played Houston and Dallas

Singer Adam Lambert first connected with Brian May and Roger Taylor from Queen as a contestant on the singing competition "American Idol" in 2009. The band began performing with Lambert playing Mercury's role in 2011.

The first Queen + Adam Lambert tour hit Dallas and Houston in 2014. Following tours came to Texas' two largest cities in 2017 and 2019.

“These are kind of new glory days for us,” said Queen guitarist and founding member Brian May, who was literally knighted by King Charles III earlier this month. “It’s nice to think that hopefully there will be the demand for that.” 

But the guitarist, along with founding drummer Roger Taylor and singer Adam Lambert , was on the other side of the Atlantic in Thursday, in New York to announce the group’s 14-show North American leg of its “Rhapsody” tour — its first since 2019 — which runs from Oct. 4 through Nov. 11.

Shows on the overseas “Rhapsody” tour dates featured around 25 songs plus four encore numbers, and included the hits “Killer Queen,” “Fat Bottomed Girls, “Another One Bites the Dust, “We Will Rock You / We Are the Champions” and the song with more than 2 billion Spotify streams that lent its title to a film and this tour, “Bohemian Rhapsody.”

Queen promises some deeper cuts on this jaunt. Lambert says, “I’m not sure exactly what we’ll pull out for this one. Look, I would be happy just to show up and do what I was told if that was how it was. But I’ve been really fortunate to work with these two gentlemen who are very collaborative, and we get to all throw ideas in and work things out. I’m really grateful for that it makes me even more invested in it.

It’s been a decade since the group’s first live American concert, though the first time they performed was in 2009 when May and Taylor were guests on the eighth season of “Idol.” May remembers the first actual American concert in Las Vegas in 2013 for the iHeart Music Festival: “It felt so good both internally and from the [crowd] reaction that we thought, ‘My God, this is something we shouldn’t be letting go.’ I think we foresaw some kind of future, didn’t we? But not quite as big as it actually happened. It’s been colossal.” 

Lambert agreed, “I don’t think I would have imagined that it would have been the gift that keeps on giving.”

The current Rhapsody tour features Queen + Adam Lambert’s regular band members, longtime keyboard player and musical director Spike Edney, bass guitarist Neil Fairclough and percussionist Tyler Warren. Founding bassist John Deacon left the band and effectively retired from music following Freddie Mercury’s 1991 death, and chose not to be present at Queen’s induction into the Rock and Roll Hall of Fame in 2001.

Despite a 30-year-plus age difference between Lambert, 41, and May, 75 and Taylor, 73, the three have an easy camaraderie that’s evident both onstage and off. Lambert was only three when Queen’s iconic 1985 Live Aid performance rocked the world, but it was something he got to recreate at the Fire Fight fundraiser concert in Sydney, Australia in February 2020, a month before Covid shut down the world.

 As a fan growing up, Lambert was familiar with Queen’s Live Aid footage. “But when it came time to first join the band on stage, I was like, ‘I have to know my stuff’ so I watched as much as I could. Besides Live Aid, one of my favorite things was Montreal concert where Freddie was running around in a pair of itty bitty white shorts and no shoes,” Lambert says. “I just I remember seeing that and going ‘This guy’s amazing.’ He was so free and ridiculous and just full of joy and I’ve been so inspired by that spirit. I try to approach shows with that same humor…”

“And shorts?” Taylor quipped.

“Not the shorts for me — Freddie had much better legs,” Lambert concluded.

A general on sale date for the Queen + Adam Lambert  U.S. tour is March 31, and in light of exorbitant ticket prices and “dynamic pricing,” the band stated in a release that “In an effort to help minimize resale and keep ticket prices at face value for fans, the band are collaborating with the venues’ ticketing partners to restrict the ability to transfer tickets for the Rhapsody tour so that they may only be transferred between fans at the original price.”

Queen + Adam Lambert Begin North American Rhapsody Tour

Queen + Adam Lambert began their highly acclaimed Rhapsody Tour of North America on Wednesday (October 4, 2023). The concert, at the CFG Bank Arena in Baltimore, Md., featured Brian May, Roger Taylor and their frontman Adam Lambert in an expanded and updated production, with 27 songs presented in five acts plus encore. Tickets for the 23-date tour, which continues through Nov. 12, are available here .

When the Live Nation-produced tour was announced, the newly knighted May said, “Our last tour featured our most ambitious production ever. So we decided to rip it apart and get even more ambitious. Watch out world.”

As with last year’s U.K. and European dates, the 2023 North American tour see Queen + Adam Lambert supported on stage by their regular band members, long-serving Queen keyboard player and musical director Spike Edney, bass guitarist Neil Fairclough and percussionist Tyler Warren.

From the March 24, 2023, announcement: Queen + Adam Lambert ’s 150-minute career-spanning set list celebrates the band’s extraordinary back catalog, lining up wall-to-wall immortal anthems like “We Will Rock You,” “Don’t Stop Me Now,” and “Somebody To Love,” alongside classic deep cuts and vintage fan favorites. The production features a dazzling state-of-the-art stage design, incredible special effects and set pieces.

Midway through Act 4, Lambert and Taylor performed co-lead vocals on “Under Pressure.”

Having extensively toured over the last few years, the Rhapsody show is forever evolving. But it remains at heart a tribute to Freddie Mercury’s majestic legacy, a confirmation of May and Taylor’s musical prowess, plus a magnificent showcase for Lambert’s vocal skills and electrifying stage charisma, all of which adds up to a glorious full-blooded celebration of one of the greatest songbooks in rock history.

Freddie’s performance with Queen at Wembley in 1986 kicked off the evening’s encores, and continued as the band played “We Will Rock You.”

Queen + Adam Lambert Announce ‘The Rhapsody Tour’ Fall 2023 North American Dates

Queen + Adam Lambert are back to rock North America one more time, announcing fall North American dates for "The Rhapsody Tour."

The trek is set to launch Oct. 4 in Baltimore, Maryland and will hit stops in the U.S. and Canada through a Nov. 11 finale in Los Angeles. See all of the dates, cities and venues listed toward the bottom of the page.

For fans wondering, Queen view the show as an evolution of the performances that they were putting on prior to the pandemic. "We were changing it and improving it as we went, and we are now going through all of those improvements again when it comes to this American leg," says drummer Roger Taylor to Billboard .

When asked about the changes to the set and production, guitarist Brian May was coy, explaining, "Well, we’re not gonna tell you that much, we don’t want to spoil it. [laughs] But the nice things is that the material is what ultimately gives the ideas, and we’re able to develop those ideas as we go along. We get to throw more and more stuff in, production-wise."

Lambert chimed in, "I will say, the technology has come so far, even in the 10 years that we’ve worked together. It gives us so much freedom when it comes to what we want to create, what environment we want to put around a song. We have all of these toys that we get to play with, which we all get a big kick out of. We have an amazing creative team that work with us — I mean, we add something in a couple of days if we have a cool idea. Once the show kicks off, the show is never locked. It’s never the same show every night, we have the ability to throw a new song in, move the set around, change the visuals. There’s so much freedom."

As for whether or not this is the band's final run, May commented, "Let me be clear, this is not a farewell tour. You can always do one more time … and then one more time … and then another time after that!"

Tickets for "The Rhapsody Tour" will go on sale next Friday (March 31) at 10AM local time via Live Nation .

Sir Brian May, Roger Taylor and their exceptional frontman Adam Lambert are returning for a further spectacular North American run of sold out shows which gets underway next week with its opening show Wednesday October 4 in Baltimore.

Promising an “even more ambitious show”, the band’s 23-date US tour begins October 4 with the first of two shows at Baltimore’s CFG Bank Arena continuing throughout North America including stops in Toronto, New York, Boston, Philadelphia, Chicago, Dallas, Denver and further cities before closing out with a pair of dates at Los Angeles’s BMO Stadium November 11 and 12. In addition, the band will perform a special one-off headliner on October 21 at the Formula 1 Lenovo U.S. Grand Prix at Circuit of The Americas, Austin, Texas.

Featuring a dazzling state-of-the-art stage design, incredible special effects and set pieces, this sense-swamping extravaganza has been blowing critics and fans away the world over since its very first unveiling in North America in 2019 .

It has been over a year since the band last toured their acclaimed “Rhapsody Tour,” which was highlighted across the world in royal fashion Saturday June 4, 2022 with a special performance in front of London’s Buckingham Palace as the opener for the Platinum Jubilee concert celebrating the late H.M. Queen Elizabeth’s 70-year reign, providing an altogether magnificent opener for its UK & European run of sold-out dates which saw the band play the Rhapsody tour across the UK and 11 countries throughout Europe, in all playing a total of 36 concerts.

Taylor Swift shocker: New album, "The Tortured Poets Department," is actually a double album

Anticipation was growing at a fever pitch before Taylor Swift's latest album, " The Tortured Poets Department ," dropped at midnight EDT. But the pop superstar had a huge surprise on tap: It's actually a double album.

When Part One dropped, Swift wrote on Instagram , "All's fair in love and poetry... New album THE TORTURED POETS DEPARTMENT. Out now 🤍"

Then came the shocker, revealed in an Instagram post saying , "It's a 2am surprise: The Tortured Poets Department is a secret DOUBLE album. ✌️ I'd written so much tortured poetry in the past 2 years and wanted to share it all with you, so here's the second installment of TTPD: The Anthology. 15 extra songs. And now the story isn't mine anymore… it's all yours. 🤍."

What's Taylor Swift's new album about?

Swift described the album as "new works that reflect events, opinions and sentiments from a fleeting and fatalistic moment in time — one that was both sensational and sorrowful in equal measure."

She also said that time has been "closed and boarded up. There is nothing to avenge, no scores to settle once wounds have healed. And upon further reflection, a good number of them turned out to be self-inflicted."

"Entertainment Tonight" correspondent Denny Directo called the record some of her most vulnerable work.

"Fans were left with more questions than there were answers, so good luck trying to decipher who these songs are about, what they mean," Directo told CBS News. "… I feel like there's more heartbreak songs on this than there are love songs."

Hours ahead of the record's release, Swift said on social media that its first single was "Fortnight," featuring Post Malone, and its music video was released Friday night .

Swift praised the Grammy-nominated artist's musical experimentation and melodies "that just stick in your head forever."

"I got to witness that magic come to life firsthand when we worked together on Fortnight," Swift said in her post .

"Fortnight" isn't the only track on the album on which Swift worked with another artist. Florence and The Machine is also featured.

Swift resumes her wildly successful Eras Tour next month in Europe with shows scheduled for Austria, France, Germany, Ireland, Italy, the Netherlands, Poland, Portugal, Spain, Sweden, Switzerland and the U.K. until August. ATEEZ recently made history at Coachella as the first male K-pop act to perform at the music festival. The K-pop act is also scheduled to perform at Summer Sonic Japan on August 17 and 18 in Osaka and Tokyo. But before Summer Sonic, ATEEZ will head to North America for their upcoming concerts.

Mexican cuisine TikTok queen shares recipes from debut cookbook, 'My Mexican Mesa'

Mexican food content creator Jenny Martinez has become a social media sensation for her authentic recipes and fast-paced, upbeat cooking tutorial videos.

Now, Martinez is sharing her mouthwatering dishes like mole negro and sweet treats like churros and paletas with the world in her debut cookbook, "My Mexican Mesa, Y Listo!: Beautiful Flavors, Family Style."

Martinez joined "Good Morning America" on Friday to share three homestyle recipes, including her mother's birria -- Mexican beef stew -- which helped her reach viral fame online.

Check out the full recipes below to recreate in your kitchen for any occasion.

Quesabirria Tacos

Prep time : 5 minutes

Cook time : 25 minutes

Ingredients

8 cups birria broth plus 2 pounds Birria de Res (Mexican Beef Stew) meat ( see video above )

1/2 cup canola oil, divided

Sixteen 6-inch corn tortillas

4 cups shredded Oaxaca cheese

1 bunch fresh cilantro, roughly chopped

1 white onion, diced

Tapatio hot sauce, for serving

4 fresh limes, cut into wedges

Start by skimming the red fat from the surface of the birria broth (this fat comes from the meat). Transfer the fat to a large, shallow bowl and set aside. Transfer the birria meat to a cutting board. Reserve the broth. Chop the meat and set aside.

Heat the oil in a large comal or skillet over medium heat. Using tongs, dip a tortilla into the reserved red fat until it is lightly coated in a red layer of fat. BEAUTIFUUUULLL!!!! Hold the tortilla up to allow some of the fat to drip off and then quickly place it on the hot comal. Immediately start building the taco by adding 1/4 cup of the cheese and about 3 tablespoons of the chopped meat on top of tortilla; fold it over. Fry the taco until nice and crispy and cheese has melted, about 3 minutes on each side. Set the tacos aside on paper towels to absorb any excess oil. Repeat with the remaining tortillas, cheese, and meat.

Stuff the tacos with cilantro and onion, and add hot sauce and lime juice. Serve the broth in a small dipping bowl, also garnished with cilantro, onion, hot sauce and a squeeze of fresh lime juice. Now dip the quesabirria taco in the warm birria broth.

Mexican Red Rice - Arroz Rojo

"As simple as this rice sounds, it has its own special technique and there can be pitfalls. If you don't follow the instructions to a 'T,' you can make it too mushy, or burn it, or leave it raw."

"It's very popular throughout Mexico. The way my mom makes it for me is probably the best one I've tried, and I've tried many out there. At some point here in the states, they started replacing the fresh tomatoes with paste and sauce, but it just doesn't have the same flavor. You have to fry the rice to a perfect golden brown. According to many grandmothers in Mexico, you cannot stop stirring or step away or you will burn it. The minute you step away, it's already burnt."

"The star of this rice is the fresh salsa, made with fresh garlic, tomatoes and onion. It has to be the perfect measurements, and once it boils you have to reduce the heat so it will cook more slowly and create fluffy rice that's not sticky or hard. One of the things my mom would insist on is that once you cover the rice, you DO NOT open the lid ... it cooks undisturbed for 25 minutes or you will get slapped on the hand! Otherwise, you release all the steam and the vapor. Never open the pot before it's time. Sometimes with mole, too, the belief is that no one can come help you once you start making it, or you risk it becoming hard and cottage cheese-like, lumpy, or separating instead of smooth and silky. Might be a myth! But most of my aunts and uncles who cook believe this and will warn you away."

Prep time : 5 minutes Cook time : 30 minutes Serves : 6 to 8

Ingredients 3 small Roma tomatoes 1/4 small white onion, cut into 1/4-inch wedges, divided 2 cloves garlic (1 whole, 1 minced), divided 4 tablespoons canola oil 2 cups basmati rice 2 tablespoons chicken bouillon powder 1/2 teaspoon fresh lime juice

To a blender, add the tomatoes, all the onion minus 2 wedges, the whole garlic clove and 1 cup water; Blend until smooth. Set aside.

In a medium saucepan, gently heat the oil over medium-low heat, but not too hot as the rice can burn fast. Add the rice and cook, stirring constantly, until lightly browned, about 3 minutes. Add the 2 reserved onion wedges and the minced garlic and continue to brown, stirring frequently, until the rice has achieved a deep golden-brown color, about 3 minutes.

Add the blended vegetables, 3 cups water and the chicken bouillon powder, and mix until well incorporated. Sprinkle the lime juice over top. Bring to a boil, then cover the saucepan, reduce the heat to low, and simmer until the rice has absorbed the liquid. Let rest for 5 minutes before opening the lid.

Mexican Churros

"When I was a little girl, my dad worked in a donut factory and would come home smelling like donuts and sugar -- I used to love to smell his hands! He'd bring home extra donuts, too, and tell us, if you want to make extra money, you can sell them to the neighbors. So, I'd go knocking on doors to earn my spending money. When dad left the donut factory to work in a Lovely Pies factory (they're like fruit-filled hand pies), I had to come up with something else, and my creative sales side came out. I'd buy five churros for a dollar from an old man who sold them from a basket on the back of his bicycle. Then I'd knock on doors selling them two for a dollar -- and the neighbors would buy them!"

"Churros are the most famous dessert from Mexico these days, and you can find churros-flavored everything, from cheesecake to ice cream. There's some technique involved, such as ensuring there are no air pockets in the dough, but they're so easy to make once you get the hang of it."

Cook time : 30 minutes Serves : 4 to 6

Ingredients 1 stick (8 tablespoons) unsalted butter 1/2 cup + 2 tablespoons granulated sugar, divided Pinch of salt 2 cups all-purpose flour 3 large eggs 2 tablespoons ground cinnamon 2 cups canola oil

To serve: Cajeta (milk caramel sauce) Chocolate dip

Fill a small saucepan over medium-high heat with 1 cup of water, the butter, 2 tablespoons of sugar, and the salt. Bring it to a boil and allow the butter to melt.

Reduce the heat to low and add the flour a bit at a time, stirring constantly until completely combined; set aside to cool.

Transfer the batter to a bowl and stir in the eggs, one at a time, mixing thoroughly each time. Mix well to release any air pockets, so that it becomes nice and smooth. Transfer the mixture to a piping bag with a 2-inch star tip. In a shallow bowl, mix the remaining half cup sugar with the cinnamon until well combined. Set aside.

Heat the oil in a large skillet over medium heat. Check the heat by dipping a wooden spoon into the hot oil: If it sizzles, it's ready. Pipe the churro out into the hot oil and cut the dough to your desired length with scissors as it comes out. You can make them bite-size or, like I do, about 5 to 6 inches long. Fry in batches until golden brown and cooked through, 4 to 5 minutes on each side. Do not overcrowd.

Drain on paper towels and toss in the cinnamon sugar. Serve with cajeta or a chocolate dip.

Four players share the 18-hole lead after the first round of the Diners Club Peru Open at Los Inkas Golf Club. Chris Korte, Rodolfo Cazaubon, Julián Etulain and Evan Brown carded 6-under 66 and hold a one-stroke lead over nine players at 5-under 67.

This is the first time that Korte, Etulain and Brown have held a share of the lead after 18 holes this season. Cazaubon is making his first start on PGA TOUR Americas.

A native of Littleton, Colorado, Korte has made the cut in all three PGA TOUR Americas events to start the season. Korte registered his best finish at the Totalplay Championship at Atlas Country Club, where he finished T26. Korte earned exempt membership through the Latin Swing after finishing 11th in the Fortinet Cup season-long standings in 2023 after finishing in the top 25 four times, including a pair of T2 finishes at the Beachlands Victoria Open presented by Times Colonist and the Elk Ridge Saskatchewan Open.

After a lucrative collegiate career at the University of North Texas, Cazaubon gained membership on PGA TOUR Latinoamerica in 2014. Cazaubon won three times in 2015 on his way to winning the Order of Merit. The Tampico, Mexico native gained membership through the Latin Swing after finishing in the top 60 on PGA TOUR Latinoamerica in 2023.

Brown turned professional after a collegiate career that saw him star at Loyola University Maryland and Ole Miss. In addition to making six birdies, Brown capitalized and made eagle on Nos. 14 and 16 to secure his best round of the season thus far.

A two-time winner of the Diners Club Peru Open on PGA TOUR Latinoamerica (2013, 2014), Etulain has made the cut in seven of his last eight starts dating back to last season on PGA TOUR Latinoamerica. The Buenos Aires native has registered four top-10s in that span.

All players finished the first round with the final group finishing at 6:01 p.m. CT. Second-round play will start at 7:45 a.m. CT off the No. 1 and 10 tees.
