A crowd favourite, Tibet Kitchen is known to serve the most authentic and comforting Tibetan and Bhutanese dishes in the region that always have you reaching for second (or third) helpings. (It doesn’t hurt that the monasteries are walking distance from this restaurant, to burn those extra calories!) We recommend their Tibetan thali , comprising momos, chilli chicken, tingmo (steamed bread), Tibetan chow mein and ema datshi (a stew made of chilli peppers, onions and locally produced yak cheese). Don’t miss their steaming hot thukpa (​​Tibetan noodle soup) either. Wash it all down with mugs of peach beer, and you won’t be disappointed.

The perfect answer to their hunger pangs is the charming, sustainable café, Silver Linings. Overlooking one of Bir Billing’s most scenic landing sites for paragliders, this joint serves lip-smacking banoffee pie (arrive early or risk disappointment!) and a variety of eggs that will have you questioning what to order. The Tea Room at Wah, Palampur

With panoramic vistas of the estates at The Lodge at Wah, a much-loved boutique homestay, The Tea Room is a treat for all senses. While their guided tea tasting tour is quite popular, we highly recommend their Kangra Dhaam thali . This vegetarian thali , a staple at local celebrations and festivals, comprises a number of local lentils and vegetables and is served with rice. To really bring out the nuanced flavours, the feast is slow-cooked on a woodfire, as is the meal at The Tea Room.

A dining room that any budding restauranter would die for, elegant well furnished and comfortable, a great place to really enjoy your meal. Indian items on the menu can be tailored to your taste buds and together with Kingfisher beer it worked every time. We stayed at the Oberoi for 3 nights and spent a significant amount of time in the Restaurant which is the al day dining restaurant Special mention to chef Rajkumar Bhatia who was wonderful and provided exceptional service and personally took care of all our... requests. Do try the Primavera pizza, Cream of Tomato soup and Fried rice. In addition, the entire FnB team led by Ashutosh and consisting of Aanchal, Sanjana, Shreyoshree, Jovian,Abhishek Rohan, Rohit, Kartik,Sahil ensured 5 star quality service and fulfiled each of our requests however trivial. The ambience is brilliant and takes you back to another era since this was the place where the ballroom dances used to happen. The window-side tables provide a beautiful view of the Shimla valley and Cart Road. This is a must visit place in Shimla! More

Everyone says one can't enjoy holidays if Hospitality of Hotel Staff is compromised. That's only 50% correct. Taste of food, coupled with service, as if you are the Chief Guest, makes your holidays memorable. I have travelled world over and is foodie, but can't remember... if had ever had such high quality food with personalize love & affection of Mr Raj Kumar Bhatia. My wife even told me, before planning next travel to Shimla, must check, if Mr R K Bhatia is available or not. if he is on leave, we will change our travel dates. GOD Bless him More

We (so far) have has one local dinner and breakfast, plus an amazing cookery class by the Chef Raj. The food is superb, especially the local specialities. Waiter Vineet is the most helpful and warm man

My wife and I went to The Restaurant for Dinner and Breakfast during our stay at The Cecil, Oberoi on the night of 25th January 2024 and the subsequent morning and it won’t be wrong if I said that it was the best experience we... could have ever expected. For our dinner we tried their Thai Curry along with cocktails - Shimla spicy for myself and a classic cosmopolitan. The food was just too good and so were the drinks. And what was even better was their service. You have a request, all you need to do is ask. For the morning, we tried their butter dosa, strongly recommended by their sous chef Mr. Rajkumar Bhatia ji. Do ask for him if you are there and he will literally treat you. Coming back to the dosa, it was the crispiest dosa I have ever eaten. We finished with some French toast and pancakes and they too were made to perfection. More

The Cecil’s restaurant, appropriately named, is a beautiful space, evocative of a bygone era, with chandelier-like light fittings, lots of polished woodwork, and stunning views from the tall windows which overlook the mountains. The food is a mix of various cuisines: Indian (mostly North Indian,... with the occasional Himachali dish too, like sidu), Western (sandwiches, pastas, risottos and so on), and some perennial East Asian favourites. We had dinner here one day and tried the chicken noodle soup (East Asian style), the chicken pepper steak, and a fish and chips from the ‘Scooby’ menu, for children, for our daughter. All were pretty good. Since we were staying at the Cecil, our room tariff included a buffet breakfast at the Restaurant. While the items/sections on the buffet are the usual—cereals, fruit, cheeses and cold cuts, Western breakfast items, dosas/idlis/etc, parathas, and so on—the quality of pretty much everything on the buffet is excellent. Also, in a pleasant change from the usual, the eggs made to order don’t just include the more predictable omelettes and scrambles, but also more uncommon (but delicious) egg dishes, such as akuri, shakshouka, and Turkish-style eggs. I went there just to have lunch this time as it was my short trip to Shimla. But Oberoi Cecil Shimla is always the best and I feel so nostalgic whenever I visit this hotel. The Restaurant, The Oberoi Cecil, for a fine-dining experience

Step back in time at this legendary restaurant, where a whiff of the Raj still lingers. Wood panelled walls, tall French windows that frame the lush mountains and a dress code (no shorts for men or flip flops)—the setting is as critical to the experience as the meal. The menu is a mix of international, Indian and local Himachali food, which comes with a five-star twist. Stuffed with oriental mushrooms, sidu (a Himachali snack, like a steamed bun) is served on a bed of spinach with burnt chilli. The Army Camp Soup is served with burnt garlic, onions and lemon, and poured in the bowl right in front of you. Don't skip the slow cooked chicken—one of their signature dishes. Shimla Book Café, to experience a social experiment This is for the day when you want to bite into the light-as-a-cloud cream roll, away from the chatter of The Mall, with just a book for company. Apart from its stunning location near the Ridge overlooking the Himalayas, what sets this tiny cafe apart is the staff. In a state with one of the country's boldest open prison policies, authorities have handed the running of the café to jail inmates. The food, all prepared in the prison bakery, is limited to snacks like burgers, pizzas and pastries, but is attractively priced, fresh and tasty. Ridge, Takka Bench, 10am–8pm

Dimsum, for Happy Hours on momos There is something comforting about digging into momos in the hills and this place serves really good ones with three different sauces. Other classics in this 25-seater restaurant run by a friendly Chinese family such as chilly chicken and chowmein are equally appetizing. This is also one of the few places in the city to serve pork, so head here if you're craving good old chilly pork. On certain days they also offer pork spare ribs as the special of the day. We love the fact that they have Happy Hours on momos: grab a plate of at half the rate (Rs75) from 3-6pm, Monday to Friday. Next to Baljees, Middle Bazar, The Mall; Noon—9.30pm

Wake and Bake Café, for the breakfast and views The food is not its only draw: with yellow windowpanes and walls decked in art, this cafe has a happy vibe. They serve English (bacon and eggs) and Israeli breakfast staples (eggs and hummus) till noon. Pizza by the slice is not your typical New York slice but four rectangular slices of bread. We can't deny that the variety is huge (more than 20). The crepes and waffles, made from buckwheat, are available in sweet and savoury versions. Apart from pastas, toasties and sandwiches, the Middle Eastern fare is worth a try. Grab a seat by the window on the second floor and watch the world stroll by at The Mall. The two versions of the dham—Kangri and Mandyali–are served on rotation through the week. Both include four to five curries prepared with a variety of lentils and dairy products. Soon, savour the taste of Himachali ‘dham’ at tourism eateries

Himachal pradesh tourism development corporation restaurants and hotel will introduce the brassware-cooked meals, “dham”, to their menus.

Tourists will soon be able to relish the flavours of the traditional “dham” feast at Himachal Pradesh Tourism Development Corporation (HPTDC) restaurants and hotels across the state, with the state set to introduce the brassware-cooked meals to their menu.

Speaking of the move, aimed at popularising Himachali cuisine and drawing more people to the hill state, HPTDC and tourism development board vice-chairperson Raghubir Singh said, “I feel that there is a need for fresher branding of foods in our hotels, to keep up with the pace of the growing restaurant industry. Foodies are always looking for something different.”

“Traditional Himachali cuisines will be available at almost all the hotels,” Bali, a legislator from Nagrota Bagwan, added.

While HPTDC’s flagship hotel in Shimla, Holiday Home, prepares a select few traditional cuisines for the visitors, a separate menu specialising in Himachali food will be introduced multi-cuisine restaurant.

“Dham”, a traditional multi-course meal prepared by a “botis” or head chefs and comprising different elements including rice, lentils, curries cooked in large brass “charotis” or brass cauldrons, sits atop the corporation’s list of new menu items..

Different parts of the state champion their own recipes, ingredients and rituals associated with the meal. The annual celebrations to honour the village deities are traditionally the days when “dham” is prepared, as are birthdays, death anniversaries, weddings.

“‘Dham’ is synonymous with the important days of a Himachalis’ lives, and we wish to take the same to restaurants so that the tourists also get a taste of Himachali food,” Bali said, adding that all the tourism-owned restaurants will now have separate corners or space for serving Himachali food under the name of “boti dham”.

The food catalogue will also display Himachal’s best-kept secrets when it comes to traditional recipes. Story of ‘dham’

The beginnings of the Himachali “dham” are storied and go back over a millennia to the time of King Jaistambh of Chamba. As per folklore, impressed by the wazwaan feast of Kashmir, Jaistambh asked his botis or cooks to prepare a similar course, albeit without meat, back home. Their endeavours made way for the “dham” as we know it today — a meal comprising seven to eight dishes, made sans onion or garlic and served on a pattal or leaf plate. Today, it has gone from being temple fare to finding its way into banquets and other celebratory tables.
