From creamy overnight oats and baked oatmeal bars to decadent French toast casseroles and breakfast burritos, there’s enough here to keep you going until the fall!

1. Incredible Fluffy Overnight Buttermilk Pancakes

Yeast in a pancake batter might be a bit scary at first, but you won’t regret trying these overnight pancakes. 

One popular way to make bread is to make the dough and let it rest overnight in the fridge.

This recipe uses the same science, and no, you won’t taste anything from the yeast.

2. Make-Ahead Banana Bread Coffee Cake

What could be better than waking up to a warm slice of banana bread coffee cake? It’s sweet, tender, and topped with a wonderful, nutty streusel for a bit of texture.

Feel free to throw in some chocolate chips, and don’t be afraid to serve with a drizzle of caramel.

3. Triple Berry Overnight Oats

I think we all know that oats are good for us, right? They’re nutritious, high in antioxidants, full of fiber, and can even help to lower your cholesterol.

And for those hot summer mornings when a big bowl of hot oatmeal just seems like too much, you can’t go wrong with a jar of light, fruit, overnight oats.

4. Make-Ahead Breakfast Sandwiches

If you need something a little more filling in the mornings and maybe something to eat on the go, you’ll have to try these breakfast sandwiches. 

Using a sheet tray, you can make and bake a whole batch before wrapping them to freeze. In the morning, pull on (or two) and microwave for a couple of minutes. 

So easy and so versatile! Use any kind of meat you like, and experiment with different cheeses and veggies, too.

My favorite has to be bacon, egg, and mature cheddar cheese with onions and a smear of chipotle mayo .

5. Overnight Sausage Breakfast Casserole

Maybe you’ve had (and devoured) bread pudding at some point. It’s sweet and moist and so creamy. But have you ever tried a savory bread pudding?

This genius little recipe is exactly that! Stale bread cubes with a savory milk and egg mix, cheese, sausage, and peppers. 

Just like with most bread pudding recipes, making this the night before will allow the bread to soak up the custard and flavors, ready to be baked the next morning.

6. Make-Ahead Carrot Cake Baked Oatmeal

This recipe is to die for. The baked oatmeal texture is somewhere between a cookie and a granola bar, and the carrot cake flavors are just perfect for breakfast!

It might look like you’re eating cake for breakfast, but one look at the ingredient list, and you’ll see that it’s actually super healthy. 

I like my carrot cake with raisins and chopped nuts, but you can leave them out if you’re not a fan. 

7. Peanut Butter Banana Oatmeal Breakfast Bars

These breakfast bars are another fantastic on-the-go option. Creamy, dreamy, and perfectly sweet, they’re great warm or cold and travel so well.

They’re made extra healthy with whole wheat flour and unsweetened applesauce in place of white sugar. 

I’ve made these with almond butter, and they were just as good. You can also add extra banana in place of the applesauce to boost the flavor.

8. Apple Hand Pies

You might not think about apple pies being for breakfast, but they’re full of fruit! Why shouldn’t they be?

These little hand pies are almost like round pop tarts, and you can easily make them with store-bought pie dough and canned pie filling. 

9. Freezer Breakfast Burritos

What’s better than a make-ahead breakfast sandwich full of sausage, egg, and cheese?

How about a burrito loaded with potato, scrambled eggs, refried beans, and cheese?

These babies are hot, filling, and the perfect way to fuel up first thing in the morning. And you can so easily change up the filling.

How about hash browns, bacon, and a handful of chopped jalapeños?

10. Make-Ahead Fruit & Yogurt Breakfast Parfaits

The difference between this recipe and a typical overnight oat recipe is the amount of dairy.

Rather than adding just enough milk to soak into the oats, this parfait uses milk and yogurt, making them insanely creamy.

Not only that! These can be made up to three days ahead, making your week that much easier. 

11. Spinach and Bacon Quiche

I’ve always been a huge fan of quiche for breakfast. It has eggs, cheese, veggies and/or meat, and a thin pastry crust.

How is it any better or worse than a bagel loaded with cream cheese and bacon?

I love how simple this recipe is. There’s no need to blanch the spinach. Just throw it in!

I highly recommend adding onions and good quality cheese, such as Gruyere.

12. Chocolate Peanut Butter Granola Bars

As much as I like chopped nuts and dried fruits, I crave a little chocolate in the mornings.

And if adding some chocolate chips will encourage the kids to eat these granola bars, I think it’s a fair trade.

For something like this, I prefer chopped peanuts rather than whole roasted peanuts. One cracked tooth is all it takes to leave a scar! 

13. Baked French Toast Casserole

I make a version of this at least once every couple of weeks.

I like to hoard my leftover bread until I have enough and then make this casserole ready for a decadent Sunday morning breakfast .

This recipe keeps it simple with bread, custard, and a spiced, sugary topping.

It’s honestly pretty perfect as is, but I’ll usually throw in some chocolate chips or soaked raisins if I have them. Why not?

14. Apple Cinnamon Overnight Oats

These creamy overnight oats are such a fresh and fun way to start your day.

I was a little hesitant to add so much creaminess to the apple flavor, but it works like a dream. It tastes like a scoop of apple crisp with some vanilla ice cream.

15. Banana Nut Overnight Oats With Walnuts

If you know me at all, you’ll know my love for all things banana runs deep. If I see ‘banana’ in the title, you can guarantee I’m trying it ASAP!

These oats have all that great creamy texture, paired with sweet banana slices and buttery walnuts.

The best way to eat this is to pour it into a bowl, sprinkle over some toasted granola, and drizzle with extra honey.

16. Make-Ahead Banana Nut Baked Oatmeal Cups

Though these might look like muffins, they’re way too soft to grab and eat on the go.

Of course, that’s a good thing! They’re soft, sweet, and just what you’ll need to get your day going.

To make them easier to handle, try portioning into mini ramekins. Wrap and freeze them until you’re ready, then bake and serve right in the dish.

17. Make-Ahead Frittata Squares with Spinach, Tomatoes, and Feta

What’s the difference between a quiche and a frittata? Well, typically, quiche has a crust and is baked in the oven. 

Frittatas are usually started on the stove and either flipped to finish cooking or finished in the oven.

This recipe makes things nice and easy. It’s more like a crustless quiche. No matter what you call it, it’s full of veggies and cheese and can be ready in under an hour.

18. Make-Ahead Breakfast Frittata Muffins

As good as the above recipe is, it’s not the easiest to eat when you’re walking the dog or racing to get to work on time.

Enter: frittata muffins!

These even have potatoes inside to make them extra filling. Just make up a batch and freeze in a big bag.

Pull out as many as you need, and enjoy a quick and tasty breakfast in a matter of minutes.

19. Ham and Cheese Breakfast Casserole

Here’s another sensational savory bread pudding recipe. Ham, cheese, and egg is such a classic flavor blend, and it’s close to perfect when mixed with bread and custard.

If you want to take this to a whole other level, try using leftover croissants and adding a layer of béchamel sauce to create a faux Croque monsieur style dish!

20. Cinnamon Raisin French Toast Bake

If you and the kids are always reaching for the Cinnamon Toast Crunch at the same time, you’ll love this!

While the middle will stay moist and creamy, the top will toast up and give you a fantastic crunch.

Travel breakfast ideas that will help you save money and eat well on your next road trip. Included are no cook breakfasts as well as make ahead breakfasts for a hotel room or even on the road. These ideas could even be used to have on hand for busy mornings when you need a grab and go breakfast.

Saving money on food when traveling

Two ways that we try to save money on road trips is by looking for accommodations that offer free breakfast and also packing our own breakfast, lunch, and snacks to eat on the road instead of stopping for fast food. Not only does eating our own food cost less, it is also more nutritious than fast food.

Travel breakfasts can be a little tricky, but it is totally doable to still eat a good breakfast on the road if you have portable easy recipes as well as a way to pack and re-heat if necessary.

I like to pack a variety of make ahead options, no cook breakfasts, fresh food, and food that requires refrigeration.

When we went to Florida last year, I made egg casserole the night before, cut it into squares, and packed it in a container in our cooler. We hit the road at 4am when we weren't ready to eat. Then about an hour before we were ready for breakfast, I put it in the hot logic and an hour later we had a hot breakfast. It worked great!

Make a big batch of hard boiled eggs the day before leaving. Then you have portable protein at your fingertips, no re-heating required.

These are easy to make and don't require refrigeration. They are also a kid favorite and contain a mix of carbs, protein, and healthy fat.

No cooking required

If you are in a hurry and don't want to cook at all, stop by the grocery store and pick up some easy breakfast ideas that don't require any cooking at all.

  • English muffins with peanut butter
  • English muffins with avocado
  • bagels topped with cream cheese, ham, or smoked salmon
  • store-bought hard boiled eggs
  • peanut butter or almond butter and apples or rice cakes
  • yogurt with fruit and store bought granola: I find pre-portioning at home in small plastic containers or small mason jars is easier than doing this on the road. Another alternative is store-bought individual yogurt cups and adding fruit on top.
  • fresh fruit: Fresh berries, bananas, apples, oranges, and grapes all make great travel food.
  • applesauce cups or pouches
  • beef sticks
  • string cheese
  • nuts and seeds/trail mix: almonds, cashews, peanuts, pumpkin seeds, sunflower seeds, chocolate chips, coconut chips, raisins, etc.
  • dried fruit
  • cereal with thermos of milk: Fill thermos halfway with milk or plant based milk. Add dry cereal to thermos when ready to eat.
  • cottage cheese with fruit: Pre-portion ahead of time in individual containers.
  • store bought breakfast bars
  • store bought granola bars or protein bars

Spring is here, which means we’re coming out of hibernation mode to soak up the sun and maybe take some warm-weather trips. If there’s ever a time for culinary indulgence, it’s vacation. After all, what good is visiting a new place if you can’t appreciate the local cuisine?

But when your stomach starts to hurt and you feel tired all the time because you’re eating too much heavy, sugar-filled food, it can start to cramp your vacation style.

An easy solution to this common travel problem may be to eat a healthy breakfast.

“Prioritizing a good breakfast while on vacation can set your whole day up for success in terms of blood sugar management, and fuel you up for adventures and exploring,” explained Maggie Michalczyk, a registered dietitian and founder of Once Upon a Pumpkin .

A balanced breakfast that contains protein and fiber will ensure that you don’t experience a huge blood sugar spike, and that you’ll feel fueled up until lunchtime, Michalczyk said. It could also encourage you to make healthier food choices throughout the day, since you won’t have to deal with a blood sugar surge that leaves you craving even more sugar and unhealthy fats.

“With a little pre-planning or a simple game plan, I think there are some easy options that you can bring with you or look for at airport kiosks or stores to help build a healthy travel breakfast that can help ensure you’re feeling good on vacation,” Michalczyk said.

From pre-planned breakfasts that are easy to assemble in your hotel room or Airbnb to options at chain restaurants, here are the best breakfasts to eat on vacation that won’t spike your blood sugar.

Starbucks egg white bites or oatmeal

For better or worse, there are very few towns or cities that don’t have a Starbucks. And fortunately, Starbucks has some excellent healthy (and delicious!) breakfast options.

“I’m a big fan of their fluffy egg bites, as they’re a good source of protein and contain veggies,” Michalczyk said. “I like Starbucks oatmeal, too, because their oats are a good source of fiber. I would ask them to hold the brown sugar on the oatmeal or ask for it on the side so you can control the amount of sugar added.”

Whether you get it at Starbucks or Panera, oatmeal is a great item to order that you can customize to suit your health needs.

Head to the breakfast buffet

Yes, really! If you’re staying at a hotel, there are usually some solid options at the breakfast buffet that will leave you feeling full and energized. “ Make sure your breakfast contains a source of fiber (fruit, veggies, oats or whole-grain toast), protein (eggs, yogurt or scrambled tofu) and healthy fats (avocado, nuts or seeds),” suggested Jenn LaVardera, a registered dietitian and nutritionist for Daily Harvest.

If you have a toaster in your Airbnb or hotel room, avocado toast can be a great option. “Avocado is a good source of healthy fats that increase satiety,” Michalczyk said. “Grab whole-grain bread if available, as it contains more fiber, and top it with an egg if you can for more protein.”

Panera oatmeal

If you’re vacationing somewhere with a Panera outlet, take advantage of the oatmeal. “Oatmeal is a great breakfast starter, but it can be boring if you don’t spice it up. Panera has a tasty cinnamon-spiced steel-cut oatmeal with strawberries and pecans,” said Kim Rose, a registered dietitian with Lose It! “To accentuate the flavor profile even more, sprinkle on a touch of cardamom. Cardamom pairs well with cinnamon, rendering a warm, citrusy flavor that’s pleasing to the tastebuds.”

Overnight oats

All you need for this easy travel breakfast is a fridge, since you can assemble the ingredients ahead of time. “Protein-packed overnight oatmeal is a great option,” Abby Grimm, registered dietitian for FWDFuel , said . “Combine rolled oats, your favorite protein powder, eight ounces of almond milk, almond butter, and chia seeds, and mix together.”

Hard-boiled eggs

A smelly option, sure, but you can pre-boil some eggs and keep them in the fridge of your hotel or Airbnb, then grab a few for breakfast every day. “Eggs contain high-quality protein at 6 grams of protein per egg,” Michalczyk said. “I’ve also seen them pre-packaged at some airport kiosks.”

Find a local cafe

Often, the breakfast options at a cafe will be healthier than what’s available at chain restaurants — and less expensive. “Exploring coffee shops is the way to go when you’re out and about,” Rose said. “You can enjoy their unique culinary expertise and still indulge in your favorite breakfast dishes while making healthy choices. For example, seasonal fruit, egg white or veggie omelets, and any type of herbal, spiced or green tea are nutritious and delicious additions.”

Bring a few packets of oatmeal

Michalczyk noted that packets of plain oatmeal are great to have on hand “because you can quickly make them with just water in your room and can almost always find a piece of fruit at the airport and nuts to add on top for a balanced breakfast.”

As the saying goes, breakfast is the most important meal of the day — and making an effort to start your day on a healthy note might just make your vacation.

oats – High on my Budget Grocery List , oats are a fantastic player for breakfast. Make them into homemade granola, baked oatmeal, or overnight oats. You can even cook a batch of slow cooker steel cut oats and freeze them in single servings.

breakfast meats – Typically you might see bacon, ham, sausage at breakfast, but don’t rule out sausage balls, salami, or sliced turkey to include in breakfast bento boxes. Remember you can freeze ham you might have leftover from the holidays and work it into breakfasts.

yogurt – Yogurt is great to keep on hand for smoothies,  yogurt parfaits , and plain eating. It’s also a great way to add protein to baked goods. Sub instead of buttermilk. For best value, buy the bulk tub; there are so many ways to dress up plain yogurt .

fresh fruit – There are so many great ways to serve “nature’s candy” with breakfast. Apple slices with a nut or seed butter, fruit kabobs, fruit salad, pre-cut  grapefruit sections ,  apple compote  or applesauce are all good options.

protein powder – This is a great item to keep on hand for quick protein. You can include it in smoothies, overnight oats, and baked goods.

baking ingredients – With flour, sugar, and a few other key ingredients, you can bake up all kinds of make ahead breakfasts, including  scones ,  breakfast cookies ,  muffins ,  banana bread , waffles, pancakes, breakfast, coffee cake , cinnamon rolls, donuts, and energy bars. All of these can be baked, cooled, and frozen.

oats – Oats are a key breakfast ingredient! There are so many great oat recipes for you to try for your morning meal.

breads – Sandwich bread, english muffins, baguette, and bagels are all great to keep on hand. Make breakfast sandwiches, French toast casserole, or Bagel boxes .

vegetables – Potatoes, sweet potatoes, spinach, muchrooms, and onions are all great to include in your savory breakfast dishes. Making a sweet potato hash at the beginning of the week is a great make-ahead breakfast idea.

cheese – Cream cheese, especially Flavored Cream Cheese or Sweet Cream Cheese is a breakfast staple, but don’t forget cheddar or Swiss to add to egg casseroles or breakfast sandwiches.

sauces and spreads – Peanut butter, butter, jam, honey, maple syrup, and Nutella are all fun toppings to add to your sweet breakfast items.

Anything that you can make in advance as well as make in bulk is a good option for feeding a large group. Think about bulk batches of egg casserole, sweet french toast that can be reheated in the oven, or even a pancake breakfast cooked on several large electric griddles.

Foods that can be eaten out of hand are ideal for travel breakfasts. Things such as muffins, breakfast sandwiches, quick breads, and breakfast bento boxes all work well.

You can do make ahead eggs. Just be sure not to overcook them as they will cook further on reheat. This is a great meal prep to get a start on the day.

We do alot of breakfast burritos, banana and pumpkin bread and muffins. There are almost always cheese sticks, hard boiled eggs, single serve applesauce cups, yogurt in the fridge and bananas and or cantaloupe. There is always cereal, oatmeal packets and crackers in the pantry. The older grandsons think it’s great.

Yummy Recipes that Travel Well and Look as Good as They Taste

From easy brunch recipes to make-ahead desserts, these dishes that travel well include something for just about every occasion, whether you’re going to Grandma’s house for a family get together or meeting your posse to plan your next girlfriend getaway.

We polled our Facebook readers for their favorite holiday potluck recipes they take when they travel, and these 30 came out on top. These foods have all been proven to travel well in the car, making them ideal dishes to bring to your next event.

We’ve broken them up into three different categories — brunch, appetizers and dessert — so you can easily find a dish that works for you.

If none of these potluck recipes work for you, just pick something that won’t be disturbed by a sharp turn or hard brake on the drive over. And make sure it’s something that tastes good whether you serve it at room temperature or cold.

If you really want to bring something that you’re worried might be disturbed when you travel, take the advice of our Facebook readers: Bring the ingredients separately and assemble the dish when you arrive. This works great for things like salads, veggie plates and even cheeseballs.

1 1/2 cups old-fashioned rolled oats

3/4 cup all-purpose flour

3/4 cup whole-wheat flour

1 teaspoon ground cinnamon

3/4 teaspoon baking soda

1/2 teaspoon salt

2 large eggs

1 cup unsweetened applesauce

1/2 cup whole-milk plain strained (Greek-style) yogurt  

1/4 cup honey

1 teaspoon vanilla extract

1 cup raisins

Preheat oven to 350°F. Line bottom and sides of a 9-inch-square baking pan with parchment paper, leaving a 1-inch overhang on all sides. Lightly coat with cooking spray.

Whisk oats, all-purpose flour, whole-wheat flour, cinnamon, baking soda and salt together in a large bowl.

Whisk eggs, applesauce, yogurt, honey and vanilla together in a medium bowl until combined. Add the egg mixture to the flour mixture; stir until just combined. Fold in raisins until evenly distributed. Pour the batter into the prepared pan; smooth the top.

Bake until set and a wooden pick inserted in the center comes out clean, about 25 minutes. Let cool in the pan on a wire rack for 15 minutes.

Using the parchment overhangs as handles, remove the bars from the pan. Cut into 9 (2 3/4-inch-square) bars. Serve warm or at room temperature.

To make ahead

Store in an airtight container at room temperature for up to 3 days, refrigerate for up to 5 days or freeze for up to 3 months.

U.S. issues travel warning for Israel with Iran attack believed to be imminent and fear Gaza war could spread

Tel Aviv  — Israel is bracing for a worst-case scenario that U.S. officials believe could materialize within just hours — the possibility of a direct attack on Israeli soil by Iran in retaliation for a strike almost two weeks ago that killed seven Iranian military officers. Iran has vowed to take revenge for Israel killing its commanders, who were hit by an April 1 strike on the Iranian embassy in Syria's capital.

Two U.S. officials told CBS News that a major Iranian attack against Israel was expected as soon as Friday, possibly to include more than 100 drones and dozens of missiles aimed at military targets inside the country. Sources have told CBS News the retaliation could include attacks carried out both by Iranian forces, and proxy groups around the region that it has been funneling additional arms to for weeks.  

The officials said it would be challenging for the Israelis to defend against an attack of that magnitude, and while they held out the possibility that the Iranians could opt for a smaller-scale attack to avoid a dramatic escalation, their retaliation was believed to be imminent. 

Asked Friday how imminent he believes an attack is, President Biden responded, "I don't want to get into secure information, but my expectation is sooner than later." The president urged Iran not to move forward, saying his message to Tehran was: "Don't."

Tehran has not indicated publicly how or when it will return fire, so it's unclear how far Iran's leaders will go. If they decide to carry out a direct attack on Israel, there's fear it could blow Israel's ongoing war against Iranian ally Hamas up into a much wider regional conflict.

With the Iranian retaliation expected at any time, the U.S. State Department on Thursday warned Americans in Israel not to travel outside major cities, which are better protected from incoming rocket fire by the country's Iron Dome missile defense system. The latest guidance noted that travel by U.S. government employees in Israel could be further restricted with little notice as things develop in the tinderbox region.

"Whoever harms us, we will harm them," Prime Minister Benjamin Netanyahu vowed Thursday as he visited troops at an Israel Defense Forces airbase. "We are prepared … both defensively and offensively."

Iran-Burning Flags Of The U.S. And Israel

On Saturday, all U.S. embassies in the Middle East were put on high alert and required to hold emergency action committee meetings. Diplomats in Lebanon and Israel were specifically told not to travel to certain areas within those countries.

Sima Shine, a security expert and former official with Israel's national intelligence agency Mossad, told CBS News it was a dangerous moment for the region, and the "most worried" she has been. She said anxiety over an all-out war was likely just as high "on both sides, in Israel and in Iran."

If Iran does choose to strike Israel directly, it could involve a complex missile and drone attack similar to the one Iranian forces launched against a Saudi oil facility in 2019 .

"They will try to do it on the military or some military asset," Shine predicted. "But the question will be the damage. If there would be many injured people, killed or injured … I think it has the potential for a huge escalation."

Shine stressed, however, that she still believes neither side actually wants a regional conflict.

U.S. "really trying to avoid war"

The U.S. sent a senior general to Israel this week to coordinate with the close American ally on any response it might make to an Iranian attack. Speaking Friday on "CBS Mornings," America's top military officer said, "we're really trying to avoid war."

"This is part of the dialogue that I have with my counterparts within the region, to include the Israeli chief of defense, who I talked to yesterday," said Joint Chiefs chairman Gen. Charles Q. Brown, Jr., adding that the U.S. military was "doing things not only to prevent a war, but at the same time, one of my primary things is to make sure all the forces in the region are protected."

"My role, as the chairman of the Joint Chiefs, is to plan and prepare," Brown said. "That's one thing we do very well."

Brown's Israeli counterpart, Chief of the General Staff Lt. Gen. Herzi Halevi, "completed a comprehensive situational assessment on the readiness of the IDF for all scenarios," Israel's military said Friday. 

"The IDF is very strongly prepared, both offensively and defensively, against any threat," Halevi was quoted as saying in the statement. "The IDF continues to monitor closely what is happening in Iran and different arenas, constantly preparing to deal with existing and potential threats in coordination with the United States Armed Forces." 

The IDF said the visiting U.S. general, Central Command chief Gen. Michael Erik Kurilla, was taking part in the IDF's situational assessment.

The dilemma for Iran, said Israeli expert Shine, is to figure out how to deliver its promised response to Israel's attack in Syria, but in a way that does not lead to further escalation. Likewise, Shine said Israel could choose to show restraint when it responds to whatever Iran eventually does.

If either side gets the balance wrong, the consequences for the region, and even the world, could be dire.
