Rooftop garden puts fresh vegetables on the menu at Saskatoon's Royal University Hospital

Patients and staff at Royal University Hospital in Saskatoon have a fresher option for vegetables at the hospital's cafeteria these days.

That's because the food is being grown six floors up, in a garden on top of the hospital's roof.

Vanessa McCubbing, a Saskatchewan Health Authority employee who helped develop the garden, said the pilot project was created as a way to get locally sourced food into the hospital for patients and staff.

"Rooftops are generally unused spaces," said McCubbing. "We thought it was a really fun opportunity to grow local food."

Saskatoon hospital has a new rooftop garden

The food in the garden — which was planted in July — is grown in aeroponic towers. The plants' roots sit in a tub-like structure and are sprayed with a nutrient-rich mist to help them grow.

McCubbing said more than 70 kilograms (around 160 pounds) of produce have been used in the hospital's cafeteria through the project so far.

"It's pretty low-maintenance — no weeding, which is great, low labour, very ergonomic," she said.

There are also nutritional benefits, since when vegetables are shipped by truck, nutrients are often lost in the transfer between the field and the table.

Melanie Marushechka, a food services employee at the hospital, has been hard at work this summer growing and harvesting the food, which has mainly included lettuce, herbs and tomatoes.

"We look at our menu options that we're serving in the cafeteria for today as well as tomorrow, and we come up and harvest the things that would go along with those menu items," she said.

From there, the vegetables are used for salads in the cafeteria, or as side items for meals delivered to patients.

Marushechka said the garden is also pesticide-free, which is ideal for patients who can't tolerate food sprayed with chemicals.

The garden, she said, has attracted attention from hospital patrons.

"They're shocked that we're growing something here on the roof," she said. "It's sparking their mind as to how to grow things, how to be sustainable here in Saskatoon."

Rooftop gardens have many benefits: researcher

Wanda Martin, an associate professor in the college of nursing at the University of Saskatchewan, said the project helps people connect with where their food is coming from.

"When you're eating food that really looks good and is really fresh, you're more willing to consume it," said Martin. "So it enhances your opportunity for well-being when you're a patient in the hospital."

Martin said the garden could also become a crucial source of food as climate change continues to impact growing conditions around the world.

"As [other growing regions] get warmer and there's opportunities for food systems to fail, having localized food systems … can prevent some challenges in the future." 

Rooftop gardens, said Martin, can also reduce the carbon footprint of a building.

Asphalt roofs generate a considerable amount of heat, but plants can trap the heat and use it to grow.

Martin herself has been part of the work around the garden. She hopes with enough funding, a feasibility study can be done to see if a greenhouse could be built on the roof to keep the garden running year-round and provide food to the wider community.

The project will wind down with this year's growing season, and the aeroponic towers will be placed into storage for the winter.

If it's continued next year, staff hope to experiment with other crops such as strawberries and continue to grow flowers that were planted this year to add some colour to the garden.

"Food matters — food is medicine" said McCubbing. "Having that involvement in being able to produce food that is consumed within the health-care system is really rewarding."

Marushechka said the hospital normally has quality food.

"But I think the benefit of having things like this is it's at its freshest."

Day 1 Port Elizabeth

Welcome to South Africa and to Port Elizabeth. In the afternoon, your CEO will provide a welcome briefing and a guided orientation around Port Elizabeth. Later on, choose to join your new friends and CEO for an optional group dinner.

Exclusive Inclusions:

Day 2 day trip to addo national park.

Experience the wildlife and landscapes of Addo Elephant National Park during a morning safari drive with knowledgeable guides in search of rhinos, lions, buffalo, leopards, and of course, elephants. Have a picnic breakfast out in the bush and finish the drive in the afternoon. There will be free time to have lunch in the area before returning to Port Elizabeth to spend a leisurely evening on your own.

Meals included:

Day 3 port elizabeth/tsitsikamma.

After breakfast depart for Tsitsikamma National Park, part of the famed Garden Route on the South Coast of South Africa. The area is valued for its diverse natural and cultural heritage. Enjoy a CEO-led hike along the Mouth Trail and wander along a winding boardwalk through the forest. In the afternoon partake in the Big Tree walk with your CEO, which will take you through indigenous forest to an eight hundred-year-old Yellowwood towering over the rest of the canopy. The remainder of the evening is at your leisure.

Day 4 Tsitsikamma

Enjoy an entire free day in the Tsitsikamma area. Choose between optional activities like, the Woodcutters’ Journey, a tree canopy tour, a seasonal whale watching excursion, or whitewater tubing. Your opportunity to remain active awaits. Have dinner with the group back at the hotel in the evening.

Day 5 Tsitsikamma/Knysna

In the morning the group will visit the Robberg Nature Reserve featuring stunning coastal scenery and some of the best hiking in the country. Walk along the Gap Circuit and see evidence of the prehistoric break-up of the supercontinent of Gondwanaland some 120 million years ago.

Travel onwards to Knysna for an orientation drive along the waterfront, through the town centre, to the hip eateries and shops on Thesen Island, and through the lush landscapes of the Knysna Forest full of indigenous trees. Arrive back in town for a free afternoon to enjoy optional activities or to simply relax in the beauty of your surroundings.

Day 6 Knysna

Breakfast will be had at the hotel before an included visit to The Knysna Heads, which enclose and form the Knysna River Estuary. Visit some of the main attractions on the Eastern Head, walk along a pathway at the foot of the cliffs and learn about the importance of the land to the local population. Spend the remainder of the day as you wish and try some of the optional activities, like an oyster tour which the area is known for.

Day 7 Knysna/Franschhoek

Rise early for a long, but jam-packed day of epic scenery and unforgettable sights as you drive the more scenic way from Knysna to Franschhoek. First stop is the harbour town of Mossel Bay to visit the lighthouse and walk in the area. Drive along Tradouw Pass next, through the lesser-known gem of Gatplaats Nature Reserve for a short walk and enjoy hilly views to reach the town of Barrydale. Have an included outdoor lunch at a local restaurant and enjoy a wine tasting. Arrive to Franschhoek in the evening and have dinner on your own.

Day 8 Franschhoek

Start the morning off with a CEO-led orientation walk along Franschhoek’s main street. The remainder of the day is free for optional activities like a guided bike tour Stellenbosch, a history and art tour, or perhaps a winery visit in a region celebrated for its delicious grape varieties. Dinner this evening will be on your own.

Day 9 Franschhoek/Cape Town

Leave the picturesque winelands of Franschhoek behind this morning and depart for Cape Town. Stop along the way to walk up the city’s iconic Signal Hill and site of the Noon Gun, one of Cape Town’s oldest living traditions. Enjoy the fantastic views from the top and catch a full glimpse of Cape Town's many landmarks. Spend the remainder of the afternoon on your own exploring the city before an optional group dinner.

Day 10 Cape Town

Enjoy breakfast and then depart for Table Mountain. Ride to the time on the cable car and explore the area on hiking trails leading to scenic views before riding back down. Spend the afternoon on your own partaking in one of the many optional activities in the area. Tonight, choose to attend a group dinner to celebrate your beautiful day in this vibrant city.

Day 11 Cape Town
