Dangerously drinkable, naturally sparkling wine from Bergerac. Petillant Naturel, or Pet Nat for short, is a sparkling wine made in the 'methode ancestrale', which is to say, bottle with residual sugar which then continues to ferment in the bottle, finishing relatively dry with pleasantly frothy bubbles. This bottle is a natural progression for Prosecco drinkers looking for something a little more interesting, while still being easy and fun to drink. Bright with acidity and tart orchard fruit, think underripe white peach, which balances the slight sweetness at the front. The finish is bone dry, with lovely clean minerality. You might have heard the phrase “pét nat” doing the rounds — but what actually is it?
Our resident wine expert Stacey Smith gives us the lowdown, while recommending her favourite tried and tested bottles.
What does pét nat mean?
A pét nat or — to give it its full name, pétillant-natural — is French for “natural sparkling”. Often referred to as champagne’s cooler, older brother, these wines are made by bottling the grape juice before it has finished fermentation. The carbon dioxide given off during this process is then trapped in the bottle and absorbed into the wine. Et voilà — a natural sparkling wine.
Sounds simple, but this ancient winemaking technique is incredibly tricky to master. Bottle too late and the resulting wine will be flat; bottle too early and the results could be, quite literally, explosive. A good pét nat requires a skilled vigneron, who will bottle the juice at a specific density to achieve the perfect pressure, alcohol and sweetness.
How is pét nat different from champagne?
Aside from how it’s made, most pét nat wines are best consumed young and fresh (within one to three years), while vintage champagne can take years to fully mature.
What should I eat with pét nat?
From sushi to fish and chips, or anywhere you’d normally drink champagne, a pét nat makes a great alternative. If in doubt, it’s always worth remembering that what grows together, goes together, so opt for cuisine from the same locale.
Should pét nats be chilled?
Like any sparkling wine, pét nats benefit from being served chilled. We’d recommend between 6-8ºC for whites and only slightly warmer for rosés or reds. If you’re dealing with a particularly hazy liquid, store the wine upright to allow the sediment to sink to the bottom before pouring. In terms of glassware, you could go for champagne flutes or regular wine glasses. We’re even quite partial to a laidback tumbler over an informal lunch.
How we test
We presented our panel of expert and consumer testers with 25 organic and natural wines, whittling this down to find the best-tasting pét nats for 2021. They were looking for red, white and rosés , with exciting yet easy drinking palates, suitable for every occasion.
Tenuta di Tavignano Il Pestifero Organic Pét Nat
Part of Tenuta di Tavignano’s ‘I Love Monsters’ range — a series honouring traditional winemaking techniques — this hazy Italian white is a blend of organic verdicchio, malvasia and sangiovese grapes. The result is refreshing, with a gentle lemon sherbet fizz, notes of white pepper and freshly picked herbs. Simple, but intense, it’s not as funky as some pét nats out there, making it an ideal talking point at your next dinner party.
Domaine Le Roc Roc'Ambulle Pét Nat Négrette
At just 9.5% this natural rosé is easy on the alcohol too, making it ideal for long, lazy lunches in the sun. A combination of ripe summer berries, coupled with fresh apple and pear, gives this wine a slight cider vibe, underscored by refreshing grapefruit acidity. It’s a little sweet, a little farmy, and very fun.
Niepoort Nat'Cool Drink Me Baga
Practising a “hands-off” winemaking approach, Niepoort’s red pét nat has all the lightness of a pinot noir with a summery edge. You’ll find just the lightest bubbles, which provide a faint buzz, with layers of ripe red fruit and a fresh floral note. A delightful red for the summer months, we’d suggest pairing with roast pork.
Fabien Jouves Somnam’bulles Blanc Pét Nat
Vegan, low intervention, certified biodynamic and organic; Fabien Jouves’ unfiltered pét nat is a great example of a natural wine. Not one for the faint-hearted, it’s a flavourful style with a sherry-esque aroma and savoury palate, free from sulphites. Another fun fizz that would work well with laid-back canapés.

Not as serious as champagne, but a serious step up from prosecco, this easy going fizz is a joy to drink. Full of bright acidity and crisp, clean stone fruit, you can expect refreshing minerality and a bone-dry finish. Team with sushi or smoked salmon starters.

ALBERT DE CONTI, Saint-Julien d'Eymet Certified Organic by Escort It all began back in 1963, when Albert de Conti, whose parents emigrated from Italy in the 1920’s, bought some land with his wife Odette in the little village of St Julien d’Eymet, 20km south of Bergerac. He planted several hectares of vines, cereals and also had some cattle (polyculture was widespread in the region at the time). In 1990, their son Francis took over and decided to merge his vineyard with that of his cousin Luc and became his partner in Château Tour des Gendres in Ribagnac. His son Guillaume joined him in 2011, followed by his second son Paulin 2013 and in 2017, Yann Lecoindre as cellarmaster. Five years on and this trio of ‘youngsters’ have decided to breathe new life into Primode Contis home village of St Julien d’Eymet. They’ve taken over Francis’ vineyard and created Domaine Albert de Conti. The terroir of this 30 hectare vineyard is made up of limestone-clayey and silty clayey soils. The oldest vines were planted by Albert in 1966, and the eponymous parcel (la Vigne d’Albert) is an original combination of a multitude of native grape varieties.The vines have been farmed organically
for many years now and the team hope to go even further by using certain biodynamic and agroforestry methods, in order to restore and strengthen the natural balance of the land
