Thank you Julia. Where I grew up in Croatia, was only 9 km from the Hungarian border. Our dishes are influenced by Hungarian style of cooking. I am sure your grandma was a fabulous cook.

Thanks, yes she was. I hear they don’t make strudel the same anymore. Once the dough was stretches we would put the apples nuts cinnamon etc all over the dough and when done start rolling it up. My cousin was in Hungry last year and was told they just put it in the middle now. She started looking at all the bakeries and sure enough that how they made it. How about in Croatia?

My mother made apple strudel the same way. I don’t know how they make their strudel in Croatia now days. I live in Melbourne, Australia. I endeavour to uphold some of the traditional methods of cooking. In particular the recipes and the way my mother use to cook. She is no longer with us however, a dish she use to prepare always brings back fond memories. 🙂 🙂

Croatian Walnut Kifle Cookies

Kifle cookies are so darn good. We make two different kinds every year during our annual Croatian Cookie baking day. One is from a secret recipe that’s filled with a plum or apricot jam – these are SO good when you eat them fresh from the oven. The jam is warm and the dough is flaky and oh so tasty. The second kifle recipe we make is filled with a walnut mixture and rolled in powdered sugar. These sweet little treats goes perfect with a cup of coffee.

Filling Ingredients:

  • 3 egg whites
  • 1/2 cup granulated sugar
  • 1 1/2 cups ground walnuts

Dough Ingredients:

  • 3 sticks unsalted butter
  • 3 egg yolks
  • 2 cups flour
  • 3 tsp baking powder
  • 1 cup powdered sugar
  • Preheat oven to 350.
  • Line a baking sheet with parchment paper.
  • To prepare the filling, beat the egg whites until stiff, slowly adding the sugar.
  • Slowly fold in the walnuts.
  • For the dough, cream the butter until smooth, then add the yolks and mix until well combined.
  • In a separate bowl, combine the flour, baking powder and salt then gradually add to the butter mixture.
  • Kneed into dough.
  • Divide dough into at least 4 balls and refrigerate for at least 1 hour, when you’re ready to roll the dough out, allow it to come up to room temperature.
  • On a floured surface, roll out each ball, 1 at a time until thin – (if your dough is too thick, there won’t be a good balance between dough and filling).
  • Cut the dough as you would when you’re slicing up a pie – about 1.5 inches in width for each slice (you can make them smaller or larger if you prefer).
  • Place the filing in the center of each slice, then roll them up like a crescent and place on the baking sheet.
  • Bake for 12 minutes, until golden brown on the edges.
  • Remove from the oven and let cool for 10 minutes.
  • Sift powdered sugar over the warm cookies, or you can roll them in a bowl of powdered sugar).

Ingredients (11)

  • 3 egg yolks
  • 1 cup white sugar
  • 250g unsalted butter, softened
  • 2 tbsp dark rum (optional)
  • 1/3 tsp vanilla essence
  • 1 lemon, zested
  • 1 cup sour cream
  • 1 tsp baking powder
  • 500g all-purpose flour, plus extra for dusting
  • Podravka plum jam (sour plum jam, see note)
  • Icing sugar, to serve
  • Step 1 Line a large baking tray with baking paper.
  • Step 2 With a hand mixer, combine the egg yolks 3 egg yolks and sugar 1 cup white sugar in a bowl.
  • Step 3 Add butter 250g unsalted butter, softened , rum 2 tbsp dark rum (optional) (if using), vanilla essence 1/3 tsp vanilla essence , lemon 1 lemon, zested zest, sour cream 1 cup sour cream , baking powder 1 tsp baking powder and combine well.
  • Step 4 Slowly add the flour 500g all-purpose flour, plus extra for dusting , 1 cup at a time, until you have a dough ball, and it’s sticky and light in colour (you may not need the full 500g).
  • Step 5 Wrap dough in cling film and place in the fridge for 30 mins. After 30 mins, remove your dough and preheat your oven to 180C.
  • Step 6 On a dusted workbench, divide your dough into three equal portions, dust with flour and roll out into a circle the size of a dinner plate. Using a pizza cutter, slice your dough into 8-10 equal triangle-shaped portions.
  • Step 7 At the wide end of the triangle, place a dollop of jam Podravka plum jam (sour plum jam, see note) , tuck in the sides and then roll down towards the point. They will look a bit like a croissant.
  • Step 8 Place on a tray and bake for 15-20 mins, or until golden brown. Serve, dusted with icing sugar Icing sugar, to serve .

Notes: if you can’t find sour plum jam, normal plum jam is fine - it will just make a sweeter biscuit! You could also use Nutella o crushed walnuts.

Jam Crescent Cookies (Croatian Kifle) – melt-in-your-mouth, soft and flaky cookies filled with your favorite jam.

Croatian KIFLE - Jam Crescent Cookies

Probably every family in Croatia owns at least one recipe for their favorite Kifle or Kiflice (crescent cookies). There are so many different kinds: with or without yeast, filled with walnuts, poppy seeds, cheese or jam. The most popular kinds of jam are apricot, plum or rose hip.

Some Kifle are more soft and pillowy while others are buttery, flaky or crispy. My recipe is both soft and flaky with slight lemon aroma. This time I used plum jam for filling. You can use strawberry, raspberry, currant or any other jam that you like. Nutella should also work great in this recipe.

Croatian KIFLE - Jam Crescent Cookies

Kifle are good warm or cold and can be kept for days or even weeks in a closed container. No refrigeration is needed. Kifle can also be frozen.

Melt-in-your-mouth jam filled crescent cookies a necessary part of every party, big or small.

Croatian KIFLE - Jam Crescent Cookies

  • 3 2/3 cups (500 g) pastry flour
  • 1 1/2 tsp baking powder
  • 2 sticks + 5 tsp (250 g) butter or margarine
  • 2/3 cup + 3 Tbsp (200 ml) sour cream
  • 1 Tbsp powdered sugar
  • 1/2 tsp lemon zest
  • a pinch of salt
  • about 1 1/2 cup jam (apricot, plum, rose hip or any other type)
  • powdered sugar for dusting
  • Mix (either with hands or using mixer or food processor) flour with baking powder, butter, margarine, sour cream, powdered sugar, lemon zest and salt. Do not overwork. Wrap the dough in plastic and chill it in the fridge overnight or for about 1 hour in the freezer.
  • On a lightly floured surface, roll one-fourth of the dough into a thin circle. Cut the circle into 6 triangles and put about 1/2 teaspoon jam on each one. Jam should be firm rather then runny so that it does not spill out from cookies. Roll triangles into crescents, starting at the wide end (see video below for instructions).
  • Arrange cookies on a baking sheet (they won’t expand a lot). Bake them in preheated 350 F (175 C) oven for about 15 minutes in regular oven or about 12 minutes in fan oven. They should still remain pale in color.
  • Transfer the crescents to a wire rack and dust them with powdered sugar.

To show you how to roll jam cookies, I found instructions on YouTube. The recipe for cookies is different then mine, but folding method (starting at 3:20 minute) is the same:

Could you please clarify the amount of butter/margarine to use.

It is: 2 sticks + 5 tsp OR 1 cup + 2 Tbsp OR 17 1/2 Tbsp OR 8.8 oz OR 250 grams butter or margarine.

It is better that butter is cold because dough will be more flaky. The circle of the dough should be approximately 10 inches wide. Please look at the video above from 2:40 minutes to get the feeling about the size.

Is pastry flour the same as all purpose flour or is it something else?

Pastry flour has lower percentage of protein, about around 7-8 percent, then all-purpose flour. It produces lighter, more tender pastries. You can substitute it by mixing 1 cup of all-purpose flour (minus 2 tablespoons) with 2 tablespoons of cornstarch.

Don’t have a bakery nearby? No worries! These easy-to-make jam rolls will be part of your staple in no time 😉 They will make you drool with whatever filling you choose. I used plum jam for this batch and the flavor was exquisite!

Ingredients

  • 300 ml (1 1/4 cup) sunflower or canola oil
  • 150 ml (3/4 cup) boiling water
  • 10 g (1 tbsp) baking powder
  • 500 g (4 cups) all-purpose flour
  • 200 g (1 1/2 cup) powdered sugar for coating
  • 10 g (1 tbsp) vanilla sugar for coating
  • favorite jam or Nutella for the filling

Preparation

  • Preheat the oven to 200 °C (395 °F).
  • In a large mixing bowl combine oil and water.
  • Add baking powder and mix well.
  • Gradually add flour mixing with spatula until you form the dough. You can use a stand-up mixer or your hands as well.
  • Divide the dough into same-sized balls – I got 16 balls from this dough.
  • On the floured surface roll each ball (with the roller or with hands) until thin and put a tsp of jam on each one.
  • Roll them and place them on a baking sheet covered with parchment paper.
  • Bake until golden, for about 15-20 minutes.
  • Hot rolls coat in the mixture of powdered and vanilla sugar.

Note: Cool them off before you eat, for more crunchiness.

Somewhere between a scone and shortbread biscuit are kiflice; plum-filled crescents that look like mini croissants. while the dough itself isn't sweet, the jam filling and the icing sugar topping gives this pastry a sweet hit..

Ingredients

  • 200 ml thickened cream, at room temperature
  • 125 g butter, softened
  • 300 g (2 cups) self-raising flour, sifted, plus extra for dusting
  • 185 g (½ cup) good-quality plum or berry jam (see Note)
  • Icing sugar, for dusting

Instructions

  • Preheat oven to 200°C (180°C fan-forced). Line a large oven tray with non-stick baking paper.
  • Place the butter and cream in large bowl and use a wooden spoon to mix until well combined and creamy. Sift in the flour, ½ cup at a time, until just combined. Use your hands mix until a soft, smooth dough forms.
  • Turn the dough onto a lightly floured bench, and use your hands to knead for 3-5 minutes until the dough is smooth and not too sticky.
  • Divide the dough into four even portions. Take one portion and knead with your palm for a minute and shape into a ball. Use a lightly floured rolling pin to roll out the dough portion on a piece of baking paper into a round about 30cm in diameter and 3mm thick (see Baker’s tips). Use a large sharp knife or pizza cutter to cut into 8 even wedges.
  • Place 1 teaspoon of jam at the thick end of a wedge. Fold the opposite dough corners on either side of the jam inwards and press to seal and enclose the jam. Starting from the wide end, roll up the dough wedge into a roll. Place on the lined tray about 2cm apart. Repeat with the remaining dough and jam to make 24 pastries in total.
  • Bake for 15-18 minutes until golden and cooked through. Remove from the oven and cool on the tray.
  • To serve, place the icing sugar on a plate and toss the cooled pastries in the icing sugar to coat well.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.

With a tender flaky outer cookie and luscious filled center, it’s not a surprise that Croation kiflice, or jam-filled crescents, are an absolute favorite dessert amongst grown-ups and kids alike.

Whether it’s a birthday party, wedding, shower or any other special events, it’s not truly a celebration if there aren’t kiflice! You will find these jam-filled crescent cookies at any Croatian gatherings and they’re typically the first to be devoured!

The mixture of delicate, flaky pastry, tart jam or other filling and sweet sugar coating make them an irresitable dessert. This recipe makes a pretty large batch (64 cookies) so they’re perfect for feeding a crowd. Moreover, any leftovers freeze really well, so you can pull them out if company comes over or to enjoy with your afternoon tea.

Filling Options for Kiflice

While we love our kiflice filled with jam, there are a number of ingredients you can use instead, based on your tastes:

  • Jam : plum, apricot, quince jams or quince paste work best. They are slightly tart and a bit firmer so they con’t melt when heated. Strawberry is not ideal.
  • Nutella : great for chocolate lovers!
  • Walnuts : Combine 1 cup of ground walnuts with a 1 tbsp warm milk, 3 tbsps sugar and 1 tsp vanilla to create a paste.

As with most butter pastries you want to try to keep the butter cold to get a nice flaky result. Shred the cold butter to help mix it well with the flour, work quickly and try not to handle too much with your hands.

How to Make Kiflice

Preheat oven to 355F.

Dissolve yeast and sugars in warm milk and let sit for about 5 minutes.

In a separate bowl combine eggs with sour cream with a fork. Add in the yeast mixture.

Shred 1 cup of cold butter (after shredding, butter will measure more than 1 cup so be sure to measure butter before shredding).

In a large mixing bowl, combine flour and shredded butter and mix until blended together. Add in the yeast mixture and mix on medium speed until combined (1-2 minutes).

Remove from mixer and kneed briefly to form a large ball. Then divide this into to 7 to 8 evenly sized smaller balls. If dividing into 7, then the kiflice will be larger than if dividing dough into 8 balls. Work one ball at a time and place the other balls in the fridge in the meantime.

Roll each ball to about an 8 inch circle. Cut each circle into 8 triangluar slices (like a pizza).

Add 1-2 tsps of filling (we used plum jam) to the wide edge of the triangle (as much as will stay in when the pastry is rolled).

  • Turn the corners in a little bit (helps to keep the filling from draining out).
  • Starting on the wide side of the triangle, roll each triangle to form small crescent shapes.
  • Arrange onto ungreased cookie sheet or parchment paper about 1” apart.

Bake at 350 for 14-16 minutes, until slightly golden.

Once your kiflice are baked you can place them on a wire rack to cool. Alternatively, while they’re still warm, you can dip them in sugar (a combination of granulated and vanilla sugar).

There you go! You are a Croatian pastry goddess! Just be warned – once you bring this treat to your next gathering, you’ll be asked to bring them all the time!

Kiflice Recipe (Jam Filled Crescent Cookies)

Ingredients    1x 2x 3x

  • 1 tsp instant yeast
  • 2 tbsp sugar
  • ½ cup milk warm
  • 2 egg yolks
  • 3 tbsp sour cream
  • 3 cups all purpose flour plus extra for kneading
  • 1 cup cold butter
  • 1 cup plum jam or other filling of your choice
  • 1 packet Vanilla sugar

Sugar Coating

  • 1 cup granulated sugar
  • 1 packet vanilla sugar

Instructions  

  • Preheat oven to 350°F.
  • Dissolve yeast with sugar and vailla sugar in warm milk. Put aside for 5 minutes.
  • In a separate bowl combine eggs with sour cream with a fork. Add in yeast mixture.
  • Shred cold butter.
  • In a large mixing bowl, combine flour, shredded butter and mix until blended together. Add in yeast mixture and mix on medium speed until well combined.
  • Remove from mixer and knead briefly to form a large ball.
  • Divide into 7-8 even-sized balls. If making 8 balls, the finished kiflice will be smaller in size.
  • Keep dough in fridge until ready to roll.
  • Roll each to an 8 inch circle. Cut each circle into 8 triangluar slices (like a pizza).
  • Add 1-2 tsps of filling to the wide edge of the triangle (as much as will stay in when the pastry is rolled).
  • Bake at 355°F for 14-16 minutes, until slightly golden.
  • Dip in a small bowl of sugar (mix of granulated and vanilla sugar) while still warm.

Oh no Mary! The key is that the butter needs to bake and not melt. So 1) was the butter cold-ish when you were working with the dough? 2) was your over pre-heated to the right temperature before putting the kiflice in? Jane

One of the things I love about Christmas is all the Christmas cookies. Today’s Croatian recipe is a bonus – it’s a two-for-one.

Two of my favorite Croatian Christmas cookies. Like all other festivities in our house, during the lead up to Christmas the cake Mafia, lead by my mother , get their heads together and produce some spectacular Croatian cookies and other treats. We hope you like them.

Christmas Cookies Recipe (Two Ways Jam & Coconut)

One of the things I love about Christmas is all the Christmas cookies. Today's Croatian recipe is a bonus - it's a two-for-one.

Ingredients

Jam cookies.

  • 500 g plain flour (3 1/2 cups)
  • 300 g cubed butter (20 Tbls.)
  • 5 Tbls. cream
  • 4 egg yolks
  • Pinch of salt
  • 1/2 lemon juiced & the rind (no pith)
  • 200 g jam (2/3 cups) of your choice - we love plum!
  • Cookie-cutter. We like to use a star cutter with and without a center hole

Coconut Ball

  • 200 g of powdered milk (1 1/2 cups)
  • 1 cup of sugar (you can use less if you wish)
  • 2 Tbls. vanilla extract
  • 120 ml water (1/2 cup)
  • 200 desiccated coconut (always use fine desiccated coconut so that it's easier to roll)
  • 125 g butter (9 Tbls.)
  • 100 g skinned & toasted hazelnuts (2/3 cup)

Instructions

Jam cookies.

  • Rub the flour and butter in a large bowl with your fingers
  • Mix in the cream, egg yolks, salt and lemon juice & lemon rind with your hands until it turns into a pastry ball. Let it rest for 1 hour
  • Warm the oven at 180°C. Prepare a baking tray lined with baking paper
  • Roll the pastry out to a thickness of 3-4mm
  • With cookie cutters cut out the shape of your choice. Remember to make an even number of cookies with and without holes
  • Bake for about ten mins - or until light brown. Repeat until all the cookies are baked and allow them to cool
  • Spoon the jam onto the cookies without holes - you can also use a piping bag to make the jam application easier. Add the second cookie on top - if needed add a little more jam to the center
  • Finally, arrange the cookies on a plate and sprinkle them with powdered sugar or you could do as Christine - a reader suggested and brush the top with egg white, and dip them in ground walnuts, instead of the powdered sugar. Either way - dobar tek .

Coconut Balls

  • Warm the water with butter and sugar in a medium-size bowl
  • When it comes to a boil, simmer for another 5 minutes and set aside to cool slightly
  • Add to the bowl vanilla, powdered milk and half of the desiccated coconut, stir through and pop in the fridge to cool - while you are waiting for it to cool
  • Once cooled, roll the mixture into small balls - adding a skinned hazelnut into the center of each coconut ball
  • Roll each of the balls into more desiccated coconut, place onto a decor

I make them every year, using my great grandmas recipe!

Ohhh nice – what is her special touch?

Its in this recipe too, but the lemon rind. Just give it that extra zip! We love ours with raspberry jam too, but im going to try plum this year.

We also brush the top with egg white, and dip them in ground walnuts, instead of the powdered sugar.

I have a general question. In many (if not most) of the Croatian cookie recipes I find on the internet, the recipe calls for “vanilla sugar”. What is that equivalent to in the United States?

Just buy the real thing, as I am not sure what the subs are:

Put a vanilla bean into a container holding granulated sugar. After several weeks the sugar will have a vanilla flavor to it. You can use a vanilla bean in which you have already stripped out the seeds or one that is completely whole.

Its called vanilla sugar in English too. you can find it in any shop rite or other grocery store in the baking section.

I would love to see the recipe for those star cookies. I used to make those but lost my recipe… crying over here 🤪

Thank you for the jam cookies recipe! I’m hoping to make a batch for Christmas. I might be misremembering but I recall my Mom adding some ground almonds to the dough… we also brushed the cookies (filled with apricot jam) with egg white and added almond slivers. So many happy memories making these with Mom. If I were to add some almond flour – how much could I substitute in? Would I need to alter/add any other ingredients for the cookies to still turn out? It was awful. They were plain af: It’s just pie dough… with jam on it. Why would I want that?? Would not recommend, threw them out.
