What is baked Alaska, and why is it paraded around cruise ships?
Baked Alaska is the cruise equivalent of "The Price Is Right" — a decades-old phenomenon that has, inexplicably, been able to withstand the test of time, with or without Bob Barker.
And when it comes to baked Alaska, cruise ships are a prime place to find the quirky hot-meets-cold dish. Yet do not think, dear reader, that you will simply order this dessert like any other. Oh no. A zealous group of waiters in costumes, having torched the dessert so that it's literally aflame, will parade it around the dining room until a piece comes to rest at your table.
So, what, exactly, is baked Alaska, and how do you make it (should you be daring enough to try)? Which cruise lines host baked Alaska parades, and why is it still such a popular tradition on cruise ships? TPG answers all your burning questions here.

What is baked Alaska?
Baked Alaska is a dessert that consists of a sponge or pound cake base with an ice cream center and a topping of meringue. The dish got its name because you're baking something that is traditionally served cold. (Ice cream = Alaska in this metaphor. Get it?)
If you've ever tried to make baked Alaska, you know it's a tricky feat. Because the dessert's bottom and top layers both have to be baked, its perfectly intact -- if made correctly -- ice cream center is a fascinating and tasty mystery. How does the preparer keep it from melting?
The answer is in the meringue, which acts ingeniously as insulation between the heat source -- either an oven or a blowtorch -- and the ice cream just below the meringue.
Where did baked Alaska come from?
As is the case with many great culinary breakthroughs, baked Alaska's origins are murky. Some sources claim it was invented by Charles Ranhofer, a chef at Delmonico's in New York City in the 1850s. Others say it was created in 1867 by Chef Antoine Alciatore at his New Orleans restaurant Antoine's in celebration of the United States' acquisition of the 49th state that year.
Which cruise lines serve baked Alaska?
Despite its mysterious past, this delectable treat has become a staple on many cruise lines' ships, including those in the Holland America Line , Seabourn and Carnival Cruise Line fleets, to name a few.
In fact, Carnival is known for its baked Alaska parades, which happen once per cruise in the main dining rooms. Waiters carry flaming trays of the sweet treat and weave a route around the tables as cruisers twirl their napkins in the air. It's a bit hokey, but passengers love this throwback to the early days of cruising.
How do you make baked Alaska?
Now, for the most important part: how to make baked Alaska.
As it turns out, baked Alaska is a bit complicated, so I looked to the Food Network for help. More detailed instructions can be found on the network's website , but here's the quick and dirty version. Below that, if you're searching for a tried-and-true cruise line baked Alaska recipe, you can also find Carnival's version in the included photos.
Baked Alaska recipe
Ice cream cake ingredients.
- Vegetable oil.
- 1 pint fruit sorbet.
- 1 pint vanilla ice cream.
- 1 pint chocolate ice cream.
- 1 cup chocolate wafer crumbs.
- 1 loaf pound cake.
Meringue ingredients
- 1 cup egg whites (about 6 large eggs).
- 1 pinch cream of tartar.
- 1 cup sugar.
Alternate scoops of ice cream and sorbet in a metal bowl greased with oil and lined with plastic wrap, saving half of the chocolate ice cream for later. Cover with plastic wrap and press gently to remove gaps between scoops. Remove plastic, sprinkle with wafer crumbs and recover. Freeze about 30 minutes.
Remove the wrap, and add the remaining chocolate ice cream. Cut the cake into 1/2-inch slices, and arrange the slices over the ice cream. Cover with fresh plastic wrap, and freeze for at least 2 more hours.
Make the meringue by whipping the egg whites and cream of tartar with a mixer until foamy. Beat in sugar until the whites are glossy and hold stiff peaks.
Remove the plastic wrap from the ice cream bowl, and flip the contents upside down on a baking sheet lined with parchment paper. Remove the lower layer of plastic. Cover the ice cream completely with meringue, making sure the top is thicker than the sides. Freeze for 3 hours.
Preheat the oven to 500 degrees. Bake until the meringue is golden. Alternately, used a blowtorch to brown it. Allow to cool for 5 to 10 minutes, and put any leftovers back in the freezer.

Princess’ past passenger program, Captain’s Circle is one of the most generous programs. When reaching Elite level, one of the benefits you’ll receive is a mini bar set up. This includes small liqueurs, beer, soft drinks and water bottles.
Princess Cruise Tip : You can exchange these items for others in a similar range (beer for another beer etc.) with room service. You may also switch out the entire mini bar for the New Grounds Coffee Package .

From what I remember the menu said it was:
Vanilla Vodka Creme de Cacao white Raspberry liqueur
Didn't mentioned what measures they used (but think of the fun you'll have getting the right balance).

Princess cruise cocktails price 2023 + cocktail menu list on Princess cruise ships
There are tons of cocktails you can order on a Princess cruise ship!
The cost of a cocktails on a Princess cruise ship is mostly around $10 to $11, plus tip.
There are a bunch of different types of cocktails you can order on a Princess cruise ship, including classic cocktails, signature cocktails, tropical cocktails, and frozen cocktails!
Cocktail offerings and prices subject to change!
There may be more cocktails available if you ask a bartender.
There may even be a cocktail competition among the cruise ship bartenders, in which the bartenders come up with their own drink.
Your order is your vote!
Below are the cocktails that were available to order for room service, which means you can also order it at bars around the cruise ship, and anywhere around the cruise ship that you see a waiter, like on the lido deck.

What cocktails are included in a Princess plus package or Princess premier package?
If you have a Princess plus package or a Princess premier package, then a drinks package is a part of that.
So if you have a Princess package, almost all cocktails are included.
Cocktails with the Princess plus package
If you have a Princess plus package, you get the Princess Plus drinks package .
The Princess Plus drinks package includes cocktails under $15.
Almost all cocktails are under $15, so almost all cocktails are included in the Princess plus package!
If you do want a cocktail that’s over $15, then you will pay for the price of the cocktail, less $15.
For example, the Amaretto Manhattan cocktail is $18.
If you have the Princess Plus package and want this signature cocktail, you will pay $3 for it, since $18 is $3 over $15.
Cocktails with the Princess premier package
If you have a Princess premier package, you get the Princess Premier drinks package .
The Princess Premier drinks package includes cocktails under $20.
Pretty much all cocktails are under $20, so basically all cocktails are included in the Princess premier package!
There is one cocktail on the list below that is over $20.
The most expensive cocktail is a signature cocktail that costs $22.
👆 Cocktails up to $20 each are included in the Princess premier package.
Room service and drink delivery on a Princess cruise ship through the Princess app
In addition to ordering your cocktail in person from a bartender or waiter, you can also order your cocktail to be brought to you through room service, and anywhere on the cruise ship, for a one-time fee for the whole cruise.
Once you are on the cruise ship, you will open up the Princess app, and then look for “order.”
Then, you can select “beverages” and then the category of cocktail you would like.
Then, order the specific cocktail you would like!
Depending on the cocktail you order, you can specify how you would like your drink.
You might have to scroll to see this option.
So always scroll to see if there’s a spot to add details!
How to order a cocktail your way
- Choose how you want your cocktail
- Choose if you want a garnish with your cocktail
- Choose if you want salt or sugar on the rim with your cocktail
Some cocktails will allow you to specify details on how you want your cocktail.
Whether you see one or more of these options will depend on the kind of cocktail you order!

Now, Princess Cruises is unveiling new programming designed to help guests learn more about this dazzling celestial spectacle.
This summer, the cruise line is rolling out a new experience called “Voyage to the Stars” as part of its “North to Alaska with Princess” program. "Each season in Alaska we strive to deliver enriching experiences for our guests to feel immersed in the beauty and local culture of this spectacular destination," says Terry Thornton, chief commercial officer of Princess Cruises. "After receiving our highest guest satisfaction ranking ever last season, we knew we wanted to design elevated programming to further connect our guests to all of the wonders of the 49th state for our 55th anniversary season."
This summer, Princess will offer 158 departures on 14 unique itineraries—its biggest season yet. Travelers will visit 17 destinations on seven ships.
In addition to the new Northern Lights offering, Princess is offering a wide array of activities and activations during trips to No. 49. For example, guests who sail aboard Majestic Princess and Discovery Princess can go fishing during the day, then eat their own catch for dinner. The cruise line is also offering salmon cooking demonstrations, a four-course seafood pop-up dining event and 13 new shore excursions.
On land, the cruise line is also rolling out a new geocaching expedition program at its five Princess Wilderness Lodges. Princess is also serving Alaska-themed cocktails, mocktails and appetizers, plus a new Alaska tea experience, cooking demonstrations, cocktail-making classes and more.

Get a room on a level that does not have other things (like dining rooms, etc.)
Get a mid level or higher room (not a lower room)
and as you mentioned balcony forward - either side works.

This Alaska cruise line “guarantees” a Northern Lights viewing
The immersive experience is on all its Alaska cruises in 2024
Celebrating 55 years of cruising to Alaska, Princess Cruises is rolling out an immersive experience that “guarantees” your Northern Lights viewing—even if it’s just inside the shipboard planetarium. Hopefully, you’ll also see the Aurora Borealis in the real sky, too!
The Voyage to the Stars experience debuts with 2024’s cruise tour season and is part of the North to Alaska with Princess program, which showcases local storytellers, cultural experiences, and Alaskan culture. For the first time ever, guests will enter a planetarium in the ship’s theater for an engaging show with live imagery to get everyone ramped up about the beautiful phenomenon nature offers. Alaska is one of the places where you’re most likely to see the Northern Lights —but the planetarium show is a great precaution in case it’s not the right season or weather to see them. And hey, if your kid is young enough, they may actually think they saw the real thing.
Astrotourists love sky-based phenomena like meteor showers and last month’s total solar eclipse , and the Aurora Borealis is one of the most spectacular things you can ever crane your head back to see. #BucketList, ammirite?
Besides Northern Lights viewing, Princess's Alaska cruises offer five glacier viewing experiences on seven ships and 91 different cruises to Glacier Bay National Park .

Hi everyone! Here's hoping someone has the recipes for the 2 Martini's that my husband and I had on the Carribean Princess:
Quantum of Solace Martini, and
Skyfall Martini.
At the time the staff wrote the recipes down for us and now that I want to make them, I cannot find the recipes. :(:loudcry:
Here's hoping with my fingers crossed!

While I don't have the specific amounts for those two martini's, I do have a photo of the menu from the ship with the ingredients listed. These are two of my favorites from the Bond Collection!
Quantum of Solace: Absolute Citron, Chambord, and grapefruit juice
Skyfall: Stolichnaya, Triple Sec and Blue Curaçao

We bought a deck of playing cards at Crooner's with martini recipes on them.
the Dunes recipe is as follows
3/4oz of coconut rum
3/4oz of melon liqueur
3/4oz of banana liqueur
1/2oz of pineapple juice
1/2oz of sweet and sour
shake vigorously with ice, stain and serve in a pre chill martini glass.
A dunes is my favourite drink in Crooners. It will also be the first drink I order when we board the Sapphire in 2 weeks time.
I also have a deck of the playing cards and neither the skyfall or

If you don’t care for a real martini try a Vesper.
Next time you cruise ask the staff at Crooner's if they have any of their special decks of playing cards. There is a recipe on every one. :)

Tanquery 10 was the all star I had on Princess. Can’t remember the recipe, other than Tangueray of course!

A Baked Alaska Parade is when, during dinner, crew members will parade through the main dining room of a cruise ship carrying baked Alaska desserts, while the passengers dining in the room twirl their napkins in the air. Baked Alaska is a classic dessert that consists of three main components: cake, ice cream, and meringue.

The Toasted Almond is good too. In the Explorer's bar, on Ruby Princess, they make a drink called the Mayan Heat.

The so-called Baked Alaska parade is usually the last night. Sometimes they will hold it the next to last night if the last day is a late port day.
