Pago de Carraovejas marks the origin of Alma in 1987, when the winery was born with its first nine hectares and the dream of becoming a benchmark and one of the best wineries in the Ribera del Duero. After more than thirty years of trajectory, quality, passion for detail, sustainability and innovation continue to be the driving forces.
An illusion back in the 70s was the origin of everything. José María Ruiz, a young Segovian full of curiosity and curiosity started what today is this great project in Ribera del Duero linked to the Ruiz Aragoneses family. In 2007, Pedro Ruiz, José María’s son, took over the reins of the project to give it a new focus and go further to make it what Alma is today.
An unique terroir at Ribera del Duero
The vineyard is located at an average altitude of 850 meters above sea level. Three varieties of vines are grown on our estate: tinto fino (tempranillo), cabernet sauvignon and merlot. We work several types of viticulture adapted to the orography of the estate, which can be defined as traditional viticulture in the valley and mountain viticulture, in some cases with slopes of over 30% and in others with a system of terraces on very steep slopes.
Pago de Carraovejas winemaking
Pago de Carraovejas combines a unique winemaking system that combines gravity, the use of yeasts and bacteria from the terroir and a delicate integration of wood for aging. Always from the exhaustive control of all the processes in which the passion for detail is non-negotiable.
All raw materials are of the highest quality. To this end, during the harvest a triple selection is made: after the selection in the vineyard, a double selection is made at the table: cluster and berry. Only those berries that meet the optimum requirements to enter the winery are selected.
The grapes are always transported to the fermentation tank by gravity, without pumps, pipes or hoses, through a small tank called OVI and through 500 kg rolling tanks -ORIS-. At Pago de Carraovejas we were pioneers in using the gravity fermentation system in Ribera del Duero. To maintain our identity.

Pago de Carraovejas is the respect for the origin, the soul of a path and the emotion of a road to travel. Pago de Carraovejas is the interpretation of the valley; the maximum expression of the terroir. From a prism of balance and a fresh character, the wine shows volume and, at the same time, agility. Round and vibrant.
Only in exceptional vintages. El Anejón evokes the unique personality of the terraces that welcome the Carraovejas Valley. The three varieties planted in the estate are found in its elaboration, its balance shows its delicate and intense character.
Cuesta de las Liebres
Exceptional viticulture at the limit. Cuesta de las Liebres defines the virtues of this steep slope and the extreme viticulture that takes place here. The cradle of an exciting Tempranillo. The expression of a precise and pure vineyard.
Oenotourism
Wine tourism in Ribera del Duero has in Pago de Carraovejas a reference. Visits to the winery allow visitors to learn in detail about all the processes involved in winemaking. During the visit, a selection of Alma Carraovejas wines are tasted accompanied by a unique gastronomic proposal prepared by the Ambivium* team.

Ribera del duero.
The story of Pago de Carraovejas began in the 1970s, founded by Jose María Ruiz; it is one of the oldest family-owned wineries in Ribera. This vineyard spans 438 acres of vineyards, with the remainder being undeveloped land. It has built a reputation internationally as one of the most prestigious wineries in Spain. Located on a steep slope perpendicular to the Duero River and parallel to the Duratón. In 1991 when the first vintage reached the market, it instantly became one of the region's most notable reds.
Altitude 2,720 feet
The vertically-trained vines are situated along the southeast facing, rolling hills of the Botijas River Valley. Its tertiary soil consists of mostly limestone, clay, and sand, dating back 66 million years and imparts a recognizable floral and mineral nuance to the wines. With long, cold winters and intensely hot, dry summers, along with significant daily temperature fluctuations, grapes fully ripen throughout the day and retain freshness during the cool nights.

Pago de Carraovejas El Anejón 2019
Grown on a 19-acre plot facing the Peñafiel Castle, sloped terraces of calcium-rich limestone soil provide for nuanced and structured wine. Produced only in exceptional vintages, El Anejón is an expression of its land in liquid form.
Fermented with indigenous yeast in large Foudres then aged 12 months in new French oak and 36 months in the bottle, El Anejón boasts great minerality, bold black fruit flavors, a deep floral bouquet and toasted spice notes.

Pago de Carraovejas Cuesta de las Liebres 2019
Grown on our most coveted plot of just 9 acres at 3,000 feet above sea-level and unique for its steep slope, limestone soil and vertically-trained vines, Cuesta de las Liebres is a radical wine produced only in exceptional vintages.
Fermented with indigenous yeast in large Foudres then aged 24 months in new French oak and 24 months in the bottle, it is full of nuanced black fruit sensations, mineral notes and sweet spice from prolonged ageing. Only produced in exceptional vintages (no 2016 or 2017).

A dream way back in the 1970s was the origin of the Pago de Carraovejas wine cellar. Today, the soul and emotions of a truly committed team maintain this dream of creating a unique legacy. Pago de Carraovejas is origin. Starting with its first nine hectares, this project soon became a dream of becoming a benchmark wine cellar in the heart of the Ribera del Duero. It all began over three decades ago, when Pago de Carraovejas was founded in response to a dream by José María Ruiz to create a great wine in one of the areas that had the greatest potential at that time. The scope of what started out as an ambitious dream has been hugely extended over the years since the company was founded and a new era began in 2007 when Pedro Ruiz joined the project. This new leadership brought a fresh business perspective that, faced with the exponential growth of Pago de Carraovejas, decided to accept new challenges in the field of sustainability and to use these as the criteria that would govern the company’s activities; innovation as the driving force behind progress and development; and enotourism as the means of opening up the project to all their customers with transparency and integrity.
The present and future philosophy of Pago de Carraovejas involves creating unforgettable experiences around wine, committed to unique projects in pursuit of a higher purpose, with a commitment to building a unique legacy. This is the philosophy that has been a driving force throughout the history of Pago de Carraovejas with different projects in harmony with Alma Carraovejas. The challenge is to be able to find the inspiration every day to develop authentic products and services, based on an organisation that is happy and sustainable within itself and its environment, seeking constant improvement, to achieve maximum quality through innovation, stubbornly preserving the culture of the organisation and the people who make it up as a heritage”.

Exclusive wine experiences at Pago de Carraovejas in Ribera del Duero, Spain
A complete wine experience in the heart of Ribera del Duero featuring two tastings; the first one with two wines and the second with three, each accompanied by a seasonal culinary proposal Guests also have the option to enjoy a full lunch at our restaurant after the tour.
We will start with an introduction to the surrounding area, vineyard and winery. This will be followed by a tour through the facilities, concentrating on what makes Alma Carraovejas unique. The first stop will be our barrel room where you will enjoy two of our wines with two seasonal food pairings specially designed by our restaurant. The tour will then finish off with a second wine tasting of three wines with three food pairings. All of the above includes great views of the iconic Peñafiel castle. Once the tour is finished, you will have the option of enjoying a full tasting menu at Ambivium restaurant. There are two set menus that will vary depending on the season and that can be paired either with our wines or international wines, always carefully selected by our sommeliers.

Tempranillo.
Tempranillo traces its origins to the Iberian Peninsula. It's still most associated with Spain, notably the Rioja and Ribera del Duero regions. It is also widely grown in Portugal, where it's known as Tinta Roriz. There are some notable plantings in Argentina, too.
