Or maybe you’re suddenly whipping up Thai meals, from soups to satays and beyond. You could act like it’s your natural talent — but we’d really prefer you tell folks how much fun you had at Carnival Kitchen! Everybody knows how delicious Carnival cruises are, so we’re getting our culinary pros to share some of their secrets with you. Classes are small, seats are limited — save yours now — but the flavor possibilities are endless, with hands-on instruction in over a dozen culinary disciplines. And for a look (and taste) of how a culinary legend whips up some wows in the kitchen, there’s even a class curated by Emeril Lagasse! Learn your way through three courses of the signature dishes he’s known for, on land and at sea. So the next time you cruise, will you be coming home a cupcake master? The tailgate-party hero who takes things way beyond chips and dip? A brunch ninja making it all look pretty easy — because with a little planning, it actually is! Have a deliciously fun time onboard… and take some skills to-go.

Cooking Up Some Fun in A Carnival Kitchen Class

Level up your culinary skills by attending a cooking class on your next cruise. 

What is Carnival Kitchen?

Carnival Kitchen is an onboard activity first introduced on the Panorama when it debuted in 2019. It’s an evolution of an idea that’s been on the line for years, the cooking demonstration. On most Carnival ships, guests can find a cooking demonstration scheduled during the cruise. It’s free of charge and usually takes place in the steakhouse. During the demonstration, a member of the Fun Squad (Carnival’s entertainment staff) and a head chef from the kitchen walks guests through making a classic Carnival appetizer, main course, and dessert. Guests who attend get samples of the food they’re making and copies of the recipes to take home, but the demonstration itself is entirely hands-off. 

Carnival Kitchen takes that concept to the next level, offering a chance for hands-on experience in a much more intimate atmosphere. The Carnival Kitchen itself looks like something you might find on a Food Network show or “Nailed It.” The room is stunning with beautiful white marble counters, glistening induction stoves, stations with built-in iPads to follow along with the recipe, and lots of stainless steel.

Classes usually last for one to two hours, depending on the course. The classroom has ten 2-person tables set up. The chef will teach the group while two helpers will go around helping those in need. Some classes are scheduled so you can enjoy what you made for lunch or dinner in the attached dining room. For courses with dishes that may take longer to cook, you prepare your food, and then they’re baked after you leave and delivered to you at dinnertime.

What classes does Carnival Kitchen offer?

Carnival Kitchen offers 11 different classes throughout the cruise. The time of the classes will vary per cruise, but you can see a sample schedule below. Typically they offer one course of each during a sailing, except for the pasta and cupcakes class which they try to offer twice.

Cupcake Academy

You’ll work with the ship’s cupcake expert to turn out some beautiful-looking cupcakes. This class takes you through the process from start to finish, from mixing up the ingredients to decorating the final product. The cupcake itself is a standard vanilla cupcake with buttercream frosting, but you’ll get to play with sprinkles, sparkles, and chocolate chips. 

Pit Grill and Smoke Master

This class will cover some great techniques to make you a BBQ expert at home. You’ll learn techniques for both gas grilling and smoking. The class starts with a tour of the barbeque kitchen, and then you prepare a brisket. Because it takes a while to roast, they’ll bring the finished meat to your table at dinner. Don’t worry; you won’t go hungry in the meantime. You’ll enjoy lunch at the BBQ place after the class is over.

In this class, you’ll learn how to make some of Carnival’s signature dishes; tuna tartare from Fahrenheit 555 Steakhouse, saffron risotto from Cucina del Capitano, and their signature warm chocolate melting cake ( here’s the recipe if you want to skip the class and make this at home ). This class is usually during dinner time, and you eat your meal here. 

Bake Shop & Pie Town

Who doesn’t love pie? In this class, you’ll make your own pie crust from scratch and fill it with some delicious goodness. It’ll likely be an apple pie, but there are talks of changing the menu per quarter in the future. You’ll make the pie during the class, then the chef will bake it, and it will be delivered to your table at dinner to enjoy for dessert.

Cake Workshop

Step up your cake decorating game with this class. It’ll cover how to layer a cake, fill it, and various ways to decorate it like frosting and fondant. 

Pizza Master Class with Lunch

This two-hour class takes place over lunchtime and ends with you getting to eat your creation. You’ll learn things like the differences between mozzarella types, how ingredients make a difference, and you’ll get a recipe for a small batch of pizza dough you can make at home.

Tailgate Party

Everyone loves appetizers, and this class helps you make some great party foods. 

Pasta Master Class

Pasta making is as much of an art as it is science. Learn how to make handmade pasta and pair it with some traditional Italian sauces. If you love Cucina del Capitano, this course might be for you; you’ll see how to make some of their signature dishes at home. 

Sushi Making 101

Sushi making looks difficult, but it can be surprisingly easy once you get the hang of it. You’ll learn how to make some amazing sushi rolls in this class. Take the skills from this class, and host your own sushi-making party when you’re back on land; your friends will love it. You’ll start by making some sushi rice and then learning how to roll it with some pre-cut fish. You’ll also make some tasty dipping sauces to go along with it. 

Morning Hustle

Want to up your brunch game at home? This class will give you some great ideas that aren’t too time-consuming. You’ll learn to make some sea day brunch favorites like smoke ham frittatas, huevos rancheros, and overnight-soaked french toast. 

It’s an Ice Cream Kinda Day

You’ll start with a three-ingredient recipe and learn how to add your own twist with unique flavor and mix-in combinations.

How to book a spot in Carnival Kitchen?

Classes are relatively small people with only 20 or so people class, so book ahead of time. The easiest way to book is to use your Cruise Planner (at Carnival.com ) and add them. The classes are found under “Specialty dining.” You can wait and book online, but currently, Carnival Kitchen is only available on some of Carnival’s biggest ships. With so many passengers, spots fill up quickly. 

How much does Carnival Kitchen cost?

A class in the Carnival Kitchen costs $40 per guest. Guests must be 12 years old or older to participate.

Review: Carnival Kitchen on Carnival Panorama

Among the highlights of our recent cruise on the Carnival Panorama’ s inaugural sailing was getting to try out the new Carnival Kitchen. The idea of taking a cooking class, led by members of Carnival’s culinary team in a state-of-the-art kitchen, was intriguing.

The big question was whether the for-fee experience would prove entertaining enough that people would want to pay for it.

When you enter the cooking studio, which is located on deck four, it’s almost hard to remember that you’re still on a ship. There are rows of countertops, with each student getting their own work station which is equipped with everything they’ll need during the class, including a tablet on which the instructor is live-streamed.

Why, you might ask, do you need a live-stream if the instructor is right there, in front of the class?

The tablet can give you an overhead view, making it easier to see and understand exactly what you’re supposed to be doing at any given time. The tablet also lists the ingredients and measurements, making it easy to follow along.

A really nice touch is that the instructor is wearing a microphone and, thanks to speakers around the room, even those with less-than-perfect hearing should be able to hear every word.

The Types Of Classes Offered

There are currently 15 different classes offered. Not all classes will be available on all sailings, and the line-up can change at any given time, of course. Among the current classes are:

  • Pizza making
  • Cake workshops
  • Pasta making
  • Pit Grill and Smoke
  • Masala Tiger
  • Tailgate Party
  • Far East oriental cooking
  • Cooking a classic Carnival dish including tuna tartare from Fahrenheit 555 steakhouse, saffron risotto from the Cucina del Capitano family-style Italian restaurant, and of course, the cruise industry’s most popular dessert, Carnival’s warm chocolate melting cake.

How Much The Classes Cost & How to Sign Up

Each course costs between $30 and $59 per person. The classes last about an hour unless you’re doing one of the more elaborate, two-hour sessions, which feature not only the cooking class but the opportunity to enjoy what you’ve created at a special table within the dedicated space.

There are a variety of classes offered throughout the cruise, and with only 18 spots open per class, they fill up fast. To sign up, swing by guest relations to find out what’s available.

You can also sign up for a class via the Carnival Hub app.

One piece of advice: If you’re thinking of taking a class, it’s better to sign up sooner rather than later. Otherwise, you could miss out.

The Culinary Kitchen Experience

You probably won’t be surprised to hear that upon arriving at the Carnival Kitchen, you’re first asked to wash your hands. Hey, safety first! Then, you’re assigned to one of the 18 workstations which make up the bulk of the space, each with its own stovetop, ingredients, utensils and tablet.

After the introduction and an overview of what you’ll be making, the chef walks you through the process, step by step. During our session, we were making an apple pie, so we started making the crust from scratch with flour and a mixing bowl.

From there the instructor walked us through each step, offering tips as to how to make the perfect pie crust. A few people were having difficulty, so the chef’s assistant made her way around to offer a little assistance.

Each work station is has a flat surface stove, as well as drawers for ingredients and utensils.

We didn’t actually get to eat the pies during the class, because they still needed to be baked. But of course, what good is a cooking class if you don’t get to taste what you made? So they make arrangements for your finished pie to be delivered to the restaurant you’re having dinner at that evening — whether you’ll be in a specialty restaurant or the main dining room — or to your stateroom.

This is an approachable way to cooking, even if you’re not much of a chef on land. I’m not a bad cook, but I never really imagined myself making a pie from scratch. I’ll also confess that ultimately, my pie crust came out a little on the dry side. That doesn’t, however, take away from the fun I had giving it the old college try.

Tips To Get The Most Out of Carnival Kitchen 

  • Wear clothes you don’t mind getting messy. You are given an apron, but there’s a good chance you’ll still get some on yourself.
  • If you’re sailing solo, you don’t have to worry about being paired up with someone you don’t know. Each guest has their own workstation and will embark on their own culinary adventure.
  • By the same token, each person who signs up will be charged.
  • Don’t be afraid to ask for help. The instructor is a trained chef and they, or their assistant, will happily lend a hand.
  • Sign up for the class you want early, as they’re likely to fill up quickly.

A far cry from the buffets of old: Cruises are catering to foodies

Lunch at Veranda, one of the restaurants aboard Star Legend, featured a bountiful charcuterie table, filled with local market finds.

“I’m changing the menu for tomorrow,” Joseph Kalynuik, executive chef of Windstar Star Legend, said as we walked through the Mercato delle Vettovaglie in Livorno, Italy. “I’m looking for local charcuterie, cheeses, truffles, lavender, limoncello. Look at all this!”

We were on the “Market Tour with the Chef,” a popular excursion offered on Windstar cruises. The market is beautiful, located in an historic 19th-century building, designed by the Italian architect Angiolo Badaloni, and modeled after Les Halles, the central market in Paris.

But this was more than a look-see through the historic 1894 market. Chef Kalynuik was on a buying mission, looking for the best local ingredients to include in the ship’s restaurant dishes.

“Va bene!,” a cheese vendor said to our small group, offering us slivers of pecorino sardo al tartufo. It was aged, firm and salty, laced with the earthy taste of truffles. Kalynuik bought a kilo of the cheese, along with links of local sausages.

We trailed Kalynuik through the market, tasting and buying along the way: disks of creamy camembert, bags of fresh Meyer lemons, a variety of salumi, marinated peppers, olives and anchovies, truffle chips, and honey.

The next day the fruits of our labor were in full view. Lunch at Veranda, one of the restaurants aboard Star Legend, featured a bountiful charcuterie table, filled with the market finds. Also, on the menu were sausages with peppers and onions, truffle risotto, Bolognese fettuccine flavored with local meats and spices, and a shrimp and crab dish in a limoncello-flavored beurre blanc. Later that evening at Windstar’s Amphora restaurant, we enjoyed a warm camembert appetizer, topped with a lemon-flavored fig jam, drizzled with honey.

“Our guests are keen on trying new and adventurous dishes, predominantly local, authentic foods,” Kalynuik said. “It’s about experiencing the local culture through food.”

We’d joined a recent seven-day Barcelona to Rome Mediterranean cruise aboard Windstar’s Star Legend to check out its updated culinary offerings. Windstar is the official cruise line of the James Beard Foundation , and the official cruise line for the National Health Association. On our cruise, we not only went to market with Kalynuik, but also joined his cooking class to learn how to make chicken and mushroom vol-au-vent (“Remember to coddle the cream!” Kalynuik advised) and Italian seafood chowder. We had lunch at the Star Grill by Steven Raichlen, cookbook author, TV host, and founder of Barbecue University, where we dined on bourbon-brined turkey breast, tender smoked pork shoulder, and burnt ends.

Lunch and dinner menus in the main restaurants included dishes from James Beard-winning chefs, like Annie Pettry’s glazed wild shrimp and Spanish chorizo dish, Paul Berglund’s roasted rack of lamb with preserved green and red tomatoes, Duskie Estes’s prosciutto and watermelon salad, Amy Brandwein’s grilled filet of branzino, and Irene Li’s coconut dashi clam chowder. A James Beard award-winning chef was not aboard our cruise, but Windstar has already hosted 48 James Beard award-winning chefs on board, and will host chefs Omar Anani, Tanya Holland, and Loryn Nalic on upcoming 2024 culinary cruises. They’ll conduct on-board cooking demonstrations, lead market tours, host a special multicourse dinner, and provide multiple recipes to be featured on Windstar’s menus on all its cruises.

“Not only will you get to eat their food — you’ll get to know them,” says Windstar president Christopher Prelog. “You may even learn a few tips and tricks for being a better cook yourself, and you’ll definitely have a richer and deeper travel experience because of it.”

If we were on a gluten-free diet or committed to only healthy eating (sadly, we’re not!), there were plenty of options. Windstar, in partnership with the National Health Association, offers whole foods, plant-based, SOS (salt, oil, and sugar free) and gluten-free appetizers, soups, entrees, and desserts in all its main dining venues.

Windstar showcases what’s happening throughout the cruise industry: an across-the-board effort to upgrade culinary offerings.

“Cruise clients, particularly more seasoned and discerning sailors, are seeking a more personalized experience and elevated culinary excellence, delivered in a more comfortable ‘country club’ atmosphere,” says Elizabeth Cincotta, founder and luxury travel designer of Rising Tide Travel, which specializes in luxury cruises.

Kristin Karst, cofounder and executive vice president of AmaWaterways, agrees, “Delving into regional food and wine specialties has become an important part of how travelers experience a destination,” she says. “A heightened culinary focus enables our guests to develop a deeper and more nuanced appreciation for a country, its history, culture, and people.”

Major cruise lines have responded in a big way to the demands of a more discerning and food-wise clientele. Today, it’s not uncommon for cruise lines to offer celebrity chef tie-ins, cooking classes, local market excursions, specialty restaurants, and a variety of healthy options. For example, Silversea has a new culinary program called S.A.L.T. (sea and land tours), that includes food excursions, cooking classes, chef’s tables, and an evolving restaurant that adapts to each port. Oceania, with celebrity chef Jacques Pepin as its executive culinary director, has a state-of-the-art Culinary Center, offering classes from international master chefs, immersive culinary tours (e.g., an Argentine dinner at a local’s residence, traditional Irish bread making in Belfast, or a Paella workshop in Alicante), and a host of specialty restaurants, including Toscana’s serving authentic Italian dishes, Polo Grill’s steakhouse fare, Red Ginger’s Asian flavors, French country cuisine at Jacques, and the Dom Perignon Experience at La Reserve. Regent Seven Seas has introduced its new Epicurean Perfection programming, including specialty restaurants, special tastings, deck-top regional barbecues, on-shore culinary, wine, and spirits tours, hands-on cooking classes in its state-of-the-art Culinary Arts Kitchen, and specially curated Spotlight Voyages designed around specific culinary interests. AmaWaterways, the first river cruise line member of the La Chaîne des Rôtisseurs, offers at least one wine or culinary-focused excursion on all its itineraries, while others, like Essence of Burgundy & Provence and Taste of Bordeaux, include six tours designed to showcase the culinary experiences in these regions. In 2024, the cruise line will offer more than 70 wine-focused cruises.

Our winter Mediterranean cruise began in Barcelona. But it wasn’t until the final day onboard, docked in Rome, that we were able to snag a seat at Cuadro 44 by Anthony Sasso, touted as one of the world’s youngest Michelin-starred chefs. It’s an intimate, 40-person-or-so restaurant with an open kitchen and warm, inviting vibe. We enjoyed glasses of house-made sangria and plates of Jamón Ibérico, Cantabrian anchovies and marinated olives, poached cod, and romesco pork belly. It was a far cry from the grand ballroom dinners and buffets of old.

Disney Cruise Line names its newest cruise ship

I t was bound to happen sometime, but Disney Cruise Line waited until its last of three new sister ships to name one Disney Destiny.

The sister ship to Disney Wish, which debuted out of Port Canaveral in 2022 and the soon-to-debut Disney Treasure arriving in Central Florida this December, the third ship in what was originally called the Trident class had its keel laying ceremony Wednesday at the Meyer Werft shipyard in Papenburg, Germany.

It won’t start sailing until 2025, and its home port has yet to be named, but among the details revealed for what will be the eighth ship in the cruise line’s fleet was the theme of the vessel, “Heroes & Villains.”

As such, the filigree artwork for the bow will be of Minnie Mouse wearing a superhero-style outfit complete with a cape.

The cruise line said among the characters from which it will mine features on board will be classic Disney animation films, “The Lion King,” “Hercules” and “One Hundred and One Dalmatians.”

Disney of course owns plenty of good vs. evil intellectual property including Star Wars and Marvel.

“The Disney Destiny will celebrate our most legendary Disney stories and characters, bringing them to life in new and exciting ways exclusively for Disney Cruise Line guests,” said Sharon Siskie, senior vice president and general manager for the cruise line, in a press release. “As we continue to expand our fleet, the Disney Destiny will further strengthen our position as a leader in family cruising.”

Just like Disney Wish and Treasure, Disney Destiny will be powered by liquefied natural gas, a cleaner burning fuel that’s part of the cruise industry’s efforts to reduce emissions.

All three are the 144,000 gross-ton, 1,254-stateroom vessels but still targeting the 4,000-passenger capacity of its older ships, 2011’s Disney Dream and 2012’s Fantasy. The line’s first ships are the smaller Disney Magic that debuted in 1998 and Disney Wonder in 1999. They come in at 84,000 gross tons with 875 staterooms.

The line also is finishing construction for an Asia-bound cruise ship named Disney Adventure that will be the largest in the fleet at 208,000 gross tons.

Disney Wish became the line’s first new ship in more than a decade. It continues to do short three- and four-night Bahamas sailings while Disney Treasure will pick up seven-night trips to the Caribbean.
