Taste cheese at an authentic Idiazabal cheese farm and drink Basque cider from the barrel on this full-day tour.

You will learn first hand from a shepherd about the techniques of cheese-making before tasting the farm's Idiazabal Designation of Origin cheese.

Next, head to a Basque Cider House in Astigarraga, without a doubt one of the towns with the greatest cider tradition in the entire Basque Country.

Here you will enjoy a typical cider house lunch with delicacies such as cod omelet, fried cod with green peppers, “txuleta” (a big rib eye steak), Idiazabal cheese with quince and walnuts and self-serve cider.

At the end of your tour you will be taken back to your accommodation in San Sebastian.

Get ready to immerse yourself in the rolling mountains of Basque Country for a wonderful cheese experience in a family owned Idiazabal cheese farm.

This experience is fun, dynamic and interactive as you will see and will be part of the whole cheese-making process led by the shepherd. 

The cheese farm tour finishes with a wonderful cheese tasting paired with some local cider/wine in a beautiful txoko (the Basque common lounge).

The Basque Country is the only region authorised to produce Idiazabal Cheese (The Spanish parmesano). This D.O. comes from sheep that graze the green valleys of the Basque Country. The breed is known as Oveja Latxa.

The Basque Country, and specifically San Sebastian, is world renowned for its food. We owe a lot of the current hype regarding our cuisine to our marvelous Michelin star chefs and awarded restaurants.

Historically, however, this reputation is based on the fresh quality of our ingredients, the hard labour of our farmers, and the delicious recipes of our grandmothers that have been safeguarded and perfected through generations. This tour is designed to celebrate this effort.

By the hand of a local, you will escape the busy city life and drive into the rural heart of the Basque Countryside, where all the magic takes place. We will head first to an Idiazabal Designation of Origin Cheese Farm where you will learn about the elaboration process of our most beloved cheese and enjoy a tasting of some of the products of the farm.

After the visit to the cheese farm, we will go to a Basque Cider House for lunch to discover a cozy environment where locals meet to enjoy traditional dishes of the Basque Country paired with natural Basque apple cider.

A typical Basque Cider House Menu includes:

Walk along the farm’s facilities with the owner, offering us a deep knowledge into the production, starting with the milking process of the sheep, obteining the first milk, you will be making your own fresh cheese! We will be tasting a sort of different cheeses pared with local wines or cider.

Continue the tour visiting the local white wine «Txakoli» region, exploring the vineyards of a family owned winery. Enjoy their Txakoli wines, produced with local grapes which grow along the slops on the surrounding hills, facing to sea. The secret of the wine, starts here!

After learning about the production of this local wine, you will be tasting them with some local tuna, chilli peppers and a pintxo!

A different tour we had planned on cancelled last minute and we found this tour the day before and signed up, not sure what to expect. Our group had a GREAT time! Our tour guide, Izaskun, picked us up promptly and even on the drive out of town started telling us about the history of the areas we were driving through. She was very knowledgable about cider and cider houses but also gave us more insight about history and culture of the Basque region. She did a great job of showing us around the orchard and the cidery. Sampling cider is an experience in and of itself and the food was great (so much food!). I don't think there is anyway we could have gone to the cidery on our own and gotten as much out of the experience. At the end, Izaskun offered to drop us off in Pasaia so we could go to the Albaola boat museum and showed us where to pick up the bus back to San Sebastian. Definitely worth the time to check out the museum and it was very easy to get back to San Sebastian on the bus. We could not have been happier with this experience and highly recommend it! Our guide, Izaskun, was simply wonderful and shared all of her local knowledge about cider, cider houses, and Basque culture in general. We were privileged to have Izaskun as our guide. It was a nice drive from our accommodation in Gros and Izaskun regaled us with the history and events in the region. We were very fortunate to visit the Aburuza Cider House. Even though it was the evening tour, we were still able to take a look at at the cider processing area and gained a good understanding of the method. Then it was dinner. This was substantial. Please bring along a large appetite. First course was cod omelette, then hake with peppers. All the time a super crusty loaf of bread on the table to accompany. Then the hero of the dish was this humongous steak (txuleta) to be shared. Be forewarned, they like it rare. But so tender and flavourful. Then cheese and quince to finish off. But the highlight for us was going into the cider room that had several large vats. You bring your glass and get ready to catch the arcing stream of cider when the staff opens up the tap. This allows the cider to aerate. For us it was such a novel way to taste the Cider and experience the camaraderie with other cider lovers. Jonas Vingegaard’s Tour de France defence in doubt after Basque crash

The Tour de France champion, Jonas Vingegaard, was taken to hospital with a broken collarbone after a serious crash on stage four of the Itzulia Basque Country.

Vingegaard also suffered several broken ribs from the high-speed accident that also included Remco Evenepoel and Primoz Roglic among a group of 12 affected riders. “It was a nasty crash, but fortunately he is stable and conscious. He remains in hospital as a precaution. Thank you for all your messages,” Vingegaard’s team Visma-Lease a Bike said in a statement.

Six riders went to hospital after the incident, including the Australian Jay Vine, who was diagnosed with a fractured cervical vertebra and two fractures in his thoracic spine. “Fortunately, there were no neurological problems and there are no other serious injuries or skull injuries,” Vine’s UAE Team Emirates said in a statement.

Evenepoel’s team Soudal-QuickStep revealed the Belgian must undergo surgery on a fractured collarbone and fractured scapula. Roglic was the least affected of the big-name trio involved and he headed for the team car having received medical attention. The incident took place when the peloton was descending around a tight right-hand bend with less than 40km of the stage to go, one riding sliding out of the road and on to the bank, sparking a chain reaction as more followed.

The race was then neutralised until the finish, with only the six riders who had been at the front being allowed to sprint for the finish to try to win the stage, victory eventually going to the underwhelmed South African Louis Meintjes, who admitted it was a hollow triumph.

“It’s a sad day. I wish all the guys who crashed all the best and wish them a fast recovery,” Mattias Skjelmose, who took the overall race lead from Roglic, said at the finish. “My mind is with the guys who crashed, and right now I am not thinking about the leader’s jersey.”

Vingegaard won the Tour de France in 2022 and 2023 but with this year’s event starting on 29 June, doubt now hangs over his ability to defend his crown.

This year’s Masters Club dinner, at which Faldo will again be present, will give past winners a taste of Rahm's home Basque region, as part of variety of dishes hailing from Spanish cuisine.

Among the starter options is Rahm's grandmother's home cooked inspired Lentil Stew, along with a mix of tapas and pintxos including spicy Basque chorizo.

The menu then sees crab salad served before a choice of ribeye steak or turbot.

For desert, it’s a puff pastry cake served with custard and Chantilly cream.

Jonas Vingegaard has been taken to hospital along with leading Australian rider Jay Vine after some of the world's best cyclists suffered injuries in a mass crash at high speed in the Itzulia Basque Country race in Spain. 

The reigning double Tour de France champion Vingegaard was reported to have suffered a broken collarbone and several broken ribs but was "conscious" after the alarming crash that threatens his hopes of a famous treble in July.

Vine, last year's Tour Down Under winner, also ended up crashing heavily in a concrete ditch and was taken away by ambulance.

The 28-year-old was later diagnosed with a fractured cervical vertebra and two fractures in his thoracic spine, with no other major injuries or head trauma. 

It was a disastrous day for another modern-day great too, with Remco Evenepoel, the 2022 world champion, managing to walk away from the crash despite suffering what his Soudal-Quick Step later confirmed was a fracture to his right collarbone and to his right shoulder blade.

He will need surgery on Friday in Belgium.

Giro d'Italia champ Primoz Roglic, who had been the overnight leader, also abandoned the race after giving a thumbs-up to cameras from the team car to show he was OK.

In all, 12 riders near the front of the peloton were involved in the crash, which happened with about 35 kilometres left of the fourth stage between Etxarri Aranatz and Legutio, in northern Spain.

The leaders were making a sweeping right-hand turn on a slight but swift descent, with some sliding off, sending others off the road into the ditch.

Denmark's Vingegaard, who has been in spectacular form and was favourite for the 2024 Tour de France, had to be carried to the ambulance in a neck brace and needed oxygen after treatment at roadside by doctors.

He had begun the week-long race on Monday with an exceptional time trial that had left him second behind only Roglic at that stage and revealed afterwards that the Itzulia had been only a late addition to his schedule.

Earlier on Thursday, Roglic's teammate at BORA-Hansgrohe, Lennard Kamna, was reported to be in a "stable condition" in intensive care after he had collided with a car during a training ride in Tenerife.

Two-time Tour de France champion Jonas Vingegaard was "conscious"in hospital his team said following a mass crash which resulted in stage four of the Tour of the Basque Country race being neutralised on Thursday.

Danish Visma-Lease a Bike rider Vingegaard, Remco Evenepoel, Jay Vine and Steff Cras were among several riders who were taken to hospital following the incident, while Primoz Roglic was also involved in the crash and did not finish the stage.

Several of the 12 riders involved in the crash fell into a concrete ditch after sliding off on a corner with around 35 kilometres to go in the run from Etxarri Aranatz to Legutio, in northern Spain.

The 2022 and 2023 Tour de France champion Vingegaard was taken to an ambulance on a stretcher, while Belgian Evenepoel was walking but his team Soudal Quick Step confirmed he was also going to hospital.

"Jonas is conscious and will be examined in the hospital now," Visma said on X, formely known as Twitter.

"Thank you for your messages. More updates later," they added of their 27-year-old star.

Roglic, who also abandoned the race, offered a thumbs up to television cameras while sitting in the Bora-Hansgrohe team car, to show he was not significantly injured.

UAE Team Emirates said their Australian rider Vine was also taken to hospital but was conscious and talking, along with Team TotalEnergies rider Cras.

The crash happened on the descent from the Alto de Olaeta after a rider in the front of the peloton slid off the road on a right-hand bend.

A six-man breakaway were allowed to continue to try and race for the stage win in the final 18km.

"The race is neutralised until the finish line, the six leading riders will compete in the stage but the stage times will not be counted for the general classification," race organisers said.

"The bunch will go in neutral until the finish line," he added.

Earlier Thursday Roglic's team-mate Lennard Kamna was in a "stable condition" in intensive care after a collision with a car during a training ride in Tenerife.

Roglic, who also fell on Wednesday in stage three but quickly recovered, was leading the overall standings from Evenepoel by seven seconds at the start of racing on Thursday.

Friday's fifth and penultimate stage is a 175.9km ride north from Vitoria-Gasteiz to Amorebieta-Etxano.
