Quality, territory and emotions: these are the main features of the new Sapori Ticino initiative "Ticino Gourmet Tour". "We want to start a virtuous path with customers, locals and tourists, to highlight our restaurant, our territory and the production of quality ingredients. How many times have we been on holiday and wished we could call a local friend and get advice on a restaurant where we could stay well and perhaps combine a meal with a visit to the area? This is Ticino Gourmet Tour, a brand created to bring together under the same "hat" a careful selection of restaurants that make quality and the exaltation of local ingredients their philosophy, but which at the same time can carry on the typical Mediterranean welcome that distinguishes the southernmost Canton of Switzerland", these are the words of Dany Stauffacher, CEO of Sapori Ticino and promoter of the initiative in collaboration with Ticino Turismo, GastroTicino, Ticinowine, CCAT and the Regional Tourism Organisations. 70 different restaurants, with different proposals and standards but brought together to describe and offer, through the kitchen, a taste of the identity of that territory, Ticino, which has always been appreciated and that encloses within its only 110 km of extension, a vastness of scenarios really very interesting, earning the nickname of "Sonnenstube" (sunny living room) of Switzerland just for its tourist vocation, its climate and its welcome. From starred restaurants to local osterias, from terraces overlooking the lake to restaurants in the old town centres, the Ticino Gourmet Tour is ready to accompany you on your discovery of all that is beautiful and, why not, good in Ticino, with the guarantee of Sapori Ticino, a company which has made the promotion of food and wine in the area its objective for many years.

Angelo Trotta - Director of the Ticino Tourist Agency According to the Swiss Tourism Monitor, a study commissioned by Switzerland Tourism, food and wine are among the main reasons why tourists choose Ticino as their holiday destination. Not to mention that about 30% of visitors' budgets are spent in this sector. Ticino's food and wine culture, which is closely related to that of Lombardy, has nothing to envy from the most renowned ones, and the fact that many of our restaurants are mentioned in the most important guides - Michelin and Gault Millau - bears witness to this. In a global context in which this theme is increasingly becoming a driver of tourist interest, the challenge for our destination is to effectively present and enhance our offer, as well as to develop certain segments with particular potential. In this regard, the "Ticino Gourmet Tour", an initiative by Dany Stauffacher in which we will be involved as partners, will play a central role. The aim of the project is to give visibility to the gastronomic excellences of our territory that stand out for their authenticity and quality, in a network perspective.
An ambitious project, therefore, which will help us to further convey the concept of "Ticinesity". This is one of the values that we hold most dear and which is expressed in our dishes, in our local products, in the savoir-faire, in the welcome, in the service and in the atmosphere.

Ticino Gourmet Tour: Directory of Gastronomic Experiences
Planning a trip to the Swiss canton of Ticino? Then you should check out the new Ticino Gourmet Tour website — available in English, French, German and Italian. It offers an online directory of gastronomic experiences in Switzerland’s Italian-speaking canton. Search by region to discover restaurants, vineyards, hotels, activities and more. The four regions include the following: Ascona – Locarno, Bellinzona and Valleys, Lugano and Mendrisiotto.
According to the Ticino Gourmet Tour, visitors to their region spend on average about 4.5 hours each day at the table for mealtimes. Given this estimate, they want to help people find the best places to experience Ticinese cuisine. This Swiss canton offers a wealth of culinary specialties for you to try, such as polenta, risotto, cured meats, local cheeses, wine and spirits, and many others.
Dozens of Ticinese Restaurants to Choose From
The restaurants listed in the directory must go through a rigorous selection process, demonstrating an emphasis on local ingredients. At the same time, Ticino Gourmet Tour wants to highlight modern interpretations of traditional Ticinese dishes. When you search for restaurants, you can filter the list by category, such as grottos, family restaurants, pizzerias or vegetarian dining. This platform highlights the work of talented chefs in the region, such as Egidio Iadonisi of the Olimpia restaurant in Lugano. For a press event with a group of chefs from Ticino at the Hôtellerie de Châtonneyre in Corseaux (Vaud), Mr. Iadonisi prepared a comforting dish of stewed veal with a hearty Ticinese polenta. His restaurant in Lugano, centrally located in the Piazza Riforma, is known for its Mediterranean specialties and pinse (traditional Roman pizza).
Gastronomic Activities
In addition to restaurants and hotels, Ticino Gourmet Tour highlights gastronomic activities by region. For example, you’ll find information about food and wine tours and thematic trails in the vineyards. You can also learn about where to taste Zincarlin cheese , one of Switzerland’s Slow Food Presidi products. Not only that, but you’ll also find recipes via RSI Food from the region.
Ticino’s Rich Culinary History
From its mountain valleys to the shores of Lake Lugano, Ticino offers a wealth of gastronomic experiences. In addition, it’s home to several thousand winemakers, with Merlot grapes representing about 80 percent of the land devoted to vineyards. To help visitors connect to all these wonderful places and experiences, this online directory presents all this various information in one convenient place.

Ticinesité authentique, unique et différenciante : dans les plats, dans les produits locaux utilisés, dans le savoir-faire, dans l'accueil, dans le service, dans l'atmosphère. Se rendre dans un restaurant portant le label "TGT" doit devenir une expérience particulière.

Ticino Gourmet Tour: from the lake to the plate

The lakes are an important resource for the area, with their incredible variety of fish which represents a great wealth now well consolidated in the regional culinary tradition
The waterways in Ticino are numerous and, in addition to transmitting energy and serenity, they offer opportunities for well-being, sport, entertainment and many other activities: Lake Lugano or Ceresio, a small natural basin with its irregular shape and Lake Maggiore , a large pre-Alpine lake with a Mediterranean charm, are very popular destinations for tourists. The restaurants with their terraces on the lake shore offer warm and welcoming hospitality which is completed with a tasty, refined and quality gastronomic offering.
Trout, perch, whitefish, char, pike and zander, as well as eel and tench are the fish most cooked by the chefs of Ticino Gourmet Tour : carpione or with risotto are the most traditional recipes, but there are also various reinterpretations in a more modern key.
Chef Raffaele Giannone of the Bottegone del Vino restaurant in Lugano offers a lake dish from the Ticino lake culinary tradition: Pike perch fillet au gratin with thyme .
Ingredients for 4 people:
- 300g of pike perch fillet
- a sprig of thyme
- a soup spoonful of breadcrumbs
- a head of late radicchio
- a courgette,
- a bunch of bruscandoli
- a teaspoon of honey mustard
- 3 tablespoons of EVO oil.
Peel the carrot and cut it into cubes together with the courgette. Wash the bunch of bruscandoli. Then sauté the carrot in the pan, after a couple of minutes add the courgette and cook over high heat for about three minutes. Leave the vegetables crunchy. Cut the radicchio 1 cm wide, sear it in a pan and leave it crunchy.
Cook the bunch of bruscandoli in a saucepan with oil and a drop of water for a few minutes. Then place the pike perch fillet on a baking tray covered with baking paper, add salt on top and bottom, add a sprinkle of breadcrumbs and thyme, sprinkle with oil and bake at 180° for eight minutes.
Heat the carrot together with the courgette and radicchio, place the vegetables on a plate and place the fillet, bruscandoli and a drop of oil on top before serving.

In Ticino, homemade risotto is a culinary classic that can be enjoyed in almost every restaurant in the region. The people of Ticino are passionate lovers of this dish and like to spend hours discussing the perfect type of rice, the ideal white wine and the right cooking time to prepare the “one and only” risotto. They are particularly proud of the fact that the first Swiss rice was grown in the Terreni alla Maggia.

Rice has been grown in Ticino for just over twenty years. However, the original inspiration for risotto came much earlier from neighboring Italy. The dish found its way through the festive tables of Ticino, evolving into different variations that were combined with local produce and flavors.
Nowadays, risotto can be found almost everywhere in Ticino: in traditional grotti, where it is prepared in the traditional way, in gourmet restaurants, where each chef brings their own inspiration to the dish, and in village squares during carnival, where it is often served alongside the typical Luganiga sausage.
Risotto in Ticino is not only a delicious dish, but also a symbol of the region’s culinary diversity and proud identity. The people of Ticino value their traditional dishes and are at the same time open to new culinary creations and adaptations. Risotto is therefore a culinary experience that reflects the uniqueness of Ticino and captures the hearts of guests from all over the world.

We learned more about the cultivation of risotto rice and cooked a delicious tomato risotto with luganighetta, a Ticino sausage specialty, right next to one of the northernmost rice fields in Europe in our beautiful outdoor kitchen.
