The Italians call them tartufo, but to the French and much of the rest of the world, they're known as truffles. But whatever you call it, this rare, pungent (and highly perishable) fungus that grows under the ground in certain parts of Europe is one of the most expensive foods on Earth, highly prized by chefs and gourmets around the globe. Centuries ago, early truffle-hunters used pigs, with their keen sense of smell, to root these treasures out of the ground… but the piggies usually ate the truffles as soon as they found them! So they began training dogs to sniff them out... like the pooches you'll meet and go truffle-hunting with today at a truffle farm in Grignan… followed by a tasting of products made with this precious ingredient.

Spend some time before sailing getting to know your destination and the excursions. It was certainly my most delicious.

A river cruise lends itself to spontaneity with direct access to destinations. There are no tenders or cities an hour from where you dock. In Lyon, France, the riverside park full of picnickers, cyclists, and bocce ball players right outside the ship compelled me to step out, grabbing a city map on the way off the ship. The afternoon spent lingering in the medieval alleys and Renaissance streets I first spotted on the earlier tour with Viking during the Lyon & Provence itinerary had me hooked on river cruising.

It wasn't just Lyon. I stepped directly out into ancient Roman ruins in Vienne , a castle's sycamore-lined square in Tournon, and the sun-washed walls of Avignon. Make sure to get out and explore on your own. Whether you find a new favorite pastry shop, return to the interesting street from your tour, sample a glass of local wine and watch the world go by, you'll make delightful and unexpected memories. Just remember to pack good walking shoes.

Be Prepared To Make New Friends At Meals

Long and lean river ships maximize space for their guests, and one difference between river and ocean cruising is that there are fewer dining areas and seating times on the river. At first, my natural introversion went on high alert as I realized there were no tables for two in the restaurant. Yet, over the course of my eight-day journey, I encountered delightful fellow travelers with enthralling stories.

Embrace the conviviality of the more intimate setting with a smaller group of guests on river cruises. Get to know your tablemates, and don't be surprised if, at the next dinner, you're looking for faces who were strangers a few days ago, hoping to dine together again.

If you do want a more private dinner or simply to dine al fresco, the tables on Viking's Aquavit Terrace seat two or four. Just arrive promptly; they go fast.

Rooms are Spacious and Bright, But This Tip May Help Your View

I expected that forsaking the size of ocean vessels meant losing space and comfort, particularly in the staterooms. Yet that is not the case on Viking ships. Design elements like precise utility from every surface and Scandinavian aesthetic, make staterooms feel more spacious. Viking’s Longship fleet also has off-set corridors that create a tremendous selection of stateroom classes, comparable to or even larger than many ocean rooms on larger vessels. Most rooms on Viking’s signature Longships have either a floor-to-ceiling French balcony or a walk-out veranda, letting light fill the space. Viking also has some of the largest suites sailing European rivers.

As delightful as Viking’s Longship was, I wasn't ready for how river ships occasionally dock tightly side-to-side, allowing more than one ship to use port. The only impact is that at some destinations your view may be into another room, otherwise blocked by the sister ship. River cruising pros and new dinner friends quietly shared this sworn-by secret: call ahead when reserving and ask the booking specialist to put you on the side least likely to snuggle up with other ships throughout the journey.

Savor a Spot On the Sun Deck When Sailing

There is no better view on a river cruise than the panoramic Sun Deck, especially when sailing. My heart-swelling moment waving to the children on the river bank was one of many on the ship's top deck that pulled my attention away from any attempt to read. Happily, Viking provided plenty of chairs, so there was no need for the frantic rush to snag or save seats.

However, the deck is not always available, as passing under low bridges is sometimes a game of inches. Even when it is not restricted, there are times when the crew fold the canopies down, and you must remain briefly seated for low bridges. Grab a drink, sunglasses and relax. Just make sure to pay attention to the crew's clear instructions when approaching bridges.

Have a Camera – And Umbrella – Ready in the River's Locks

Sailing through a system of river locks is an unusual and mesmerizing experience unique to river cruising. These ingenious engineering feats allow boats to climb upstream or descend downstream with manufactured "steps'' in the river. I was astonished watching the midday sunlight fade as our ship lowered in the lock, my fingers grazing the green algae on the now towering concrete walls less than a foot from the ship's side. I wasn't the only one. When the metal barrier creakily raised to release us and massive gates swung open, another passenger called out that it was like being in a medieval-period movie.

This raising and lowering ritual has one lesson you must learn. As the metal gate that sealed the lock rises, water will pour off in a brief torrent as you pass under. If you're out on the Sun Deck or Aquavit Terrace, you and your belongings may get wet unless you take cover. Viking crew distributed red umbrellas in anticipation, and there were always chuckles amongst the passengers as we ducked under. On the river everything is an adventure.

Too often in my travels I’ve scurried about, checking a sightseeing box only to be left wanting more later. River cruising with Viking slowed things down, allowing me to enjoy the nostalgic journey down one of Europe’s great waterways, sailing in understated luxury. Yet, I was surprised by how much river cruising opens up the destinations – both the iconic cities and smaller towns. With more time in ports and Viking’s diverse cultural, adventure and culinary tour options, I came away with personal stories and a real sense of place.

Only my feeling of wanting more was incurable and even heightened by the pleasures of river cruising. I found myself nodding along with a table of women next to me on Viking’s Aquavit Terrace. Previously known as Emerald Waterways, Emerald Cruises transports travelers across some of the most popular rivers in Europe and Asia, including the Danube, the Rhine, the Douro and the Mekong.

From the Danube to the Mekong, Australian travel company Scenic Luxury Cruises and Tours offers lavish, all-inclusive river sailings with an emphasis on customization. The more upscale sister brand of Emerald Cruises, Scenic affords travelers the opportunity to do as much or as little as they want while on board and ashore.

What to expect: Enrichment activities are hand-picked by the line's "Journey Designers," and vessels provide a top-notch level of service thanks to their high crew-to-passenger ratios. In fact, each passenger receives a designated butler who can complete nightly turndowns and make laundry arrangements, among other tasks.

Spacious suites on board are larger than those on most other riverboats (ranging from 160 to 510 square feet). High-tech balcony controls allow lodgers to let in as much air as they'd like with the touch of a button. Cruisers will also enjoy special in-room touches like pillow menus, slippers and robes.

When it comes to dining, Scenic sources local ingredients and culinary inspiration from the ports visited on the itinerary to provide an authentic experience. All meals are included in the base cruise fare, along with beverages, gratuities, Wi-Fi access, shore excursions and electric bicycle usage in select destinations.

What to expect: CroisiEurope is known for its wide range of destinations and is one of the only river cruise lines that operates custom-built ships on Germany 's Elbe river, the Guadalquivir and Guadiana rivers in Spain and Portugal, and Venice 's canals. Onboard accommodations are relatively basic, which keeps the cruise fare to a budget-friendly minimum. The cruise line aims to provide the best value for money in the cruise industry. Cuisine is focused on French food with some local flair in the main dining room, which is included in the cruise fare.

The passenger mix on a CroisiEurope cruise is relatively international, featuring large contingencies from France, Germany, the U.K. and North America. Inside the Olympic effort to clean up the River Seine — and why it may be spoiled by a rainy day

PARIS — Meandering down the Seine R iver , the light breeze, gentle current and the sun’s glistening rays weren’t the only things the three kayakers were hoping to catch on a warm spring day — they were also on the hunt for garbage. 

By attaching nylon stockings to the side of their kayaks, they scooped up even the smallest fragments of plastic, as well as the everyday detritus of life in the French capital that washes to the river’s surface every time it rains. The members of the Arc de Seine Kayak club then sent what they had collected to be tested for bacterial levels. 

“My kayak capsized this morning and I’m OK,” a laughing Paul Maakad told NBC News on Sunday, at the Pont de Sevres in central Paris. 

But while Maakad, 40, and his fellow boaters said they were not scared of getting into the river, with less than 100 days to go before the 2024 Paris Olympics , fears are growing that events like the marathon swim, the triathlon and the paratriathlon could be postponed or canceled because of high pollution levels, or that the flotilla-based opening ceremony could be affected.

Earlier this month, Tony Estanguet, the president of the Paris Organizing Committee, expressed confidence "that it will be possible to use the Seine,” but admitted that the swimming leg of the triathlon could be canceled if pollution levels are too high. "It’s what we want to avoid, of course,” he said .

His comments came days after a French charity warned that bacteria, including “pollution of fecal origin,” was far higher in the river than permitted. 

As part of an ambitious plan to open up the Seine to public swimmers by 2025 — after being illegal for 100 years because of dangerously high pollution levels — France has spent 1.4 billion euros ($1.5 billion) on altering and upgrading the city’s antiquated sewage system, which now includes a 13-million-gallon overflow tank called the Austerlitz Basin. 

But in August, the swim portion of the test marathon event was canceled because the river failed pollution tests.

As the starting gun to the Games approaches, Fluidion, one of the companies the city of Paris contracted to monitor bacteria in the water, exclusively shared its findings with NBC News.

A sample of water collected by the Pont Alexander III bridge, in the city’s center, showed E. coli levels two-and-a-half times the level considered safe for swimming. 

But that in itself isn’t necessarily a concern for the Games themselves, according to Dan Angelescu , the CEO of Fluidion, a tech company that develops water testing products. 

“In the summer when there is a lot of sunlight, when the water flow, river flow rate is really low, and when there is no rain for several weeks, let’s say two or three weeks without rain, you can actually reach really good water quality conditions,” he said in an interview this month.

But he added that even a small rain event could make E. coli levels shoot up. 

“You may swim in very polluted water and nothing may happen to you, or you may swim and you may develop itches, or you may develop infections, or you may catch a strain of E. coli that may be pathogenic," he said. "Those aren’t very common, but they exist, and that could get you really sick.” 

Austerlitz Basin Paris River Seine

But he cautioned that exposure to other pathogens associated with the presence of E. coli could lead to contracting a norovirus, diarrhea “or you could get certain diseases that can really kill you.”

In a bid to boost public confidence, French President Emmanuel Macron and Paris Mayor Anne Hidalgo have both promised to swim in the river to prove its cleanliness.

Pierre-Antoine Molina, a director of public policy in Paris, said he would follow suit. In an interview Monday, he said that water pollution in the river “has been gradually improving.”   

He added that the work to upgrade the city's sewage system had led to the modernization of wastewater treatment plants and an improvement in the network that separates wastewater and rainwater. 

Olympic organizers began working with Paris officials three years ago to clean the Seine, a venue for Paris 2024 Olympic swimming events.

“It’s an ancient city going back to Roman times, so inevitably that’s a big task,” he said, adding that a lot of buildings had been gone up after World War II “and the sewage system did not always cope.” 

Around 30 miles downstream from Paris, Edouard Combette, 50, showed no fear as he plunged headfirst into the storied waterway, which has inspired artists like the impressionist painter Claude Monet.   

“Life is good here,” he said after coming up for air, adding that he didn’t know whether the water was completely safe.  

“Don’t drink the water. You can swim, but don’t drink,” he said. “I haven’t heard of anyone dying or getting sick.”

There are upsides and downsides to cruise excursions: transfer times cut down on your time at the actual attraction, and the tours are usually very crowded. Excursions are not usually included in the price of ocean cruises, and they can be pretty pricey. However, the payoff is seeing bucket-list monuments like Rome's Colosseum or the Acropolis in Athens .

On a river cruise, you walk off the ship directly, avoiding long lines and time spent on a bus. Most stops on river cruises include a walking tour, but many lines also offer other activities. A cruiser in Reddit's r/Cruise forum wrote about visiting a winery, a cheese farm, and a castle on their river cruise. Excursions are usually included in the price of a river cruise.

Now, we want to address what most of you are probably thinking. Traditionally, river cruises are seen as a haven for retirees. On Reddit's  r/Cruise forum, one poster writes that excursions on river cruises tend to be "very, very slow" because of the older participants. However, some companies are trying to kick that reputation and attract a younger crowd. Avalon, for example, offers different types of excursions — active, discovery, and classic. Fitter participants might go for a hike, and those looking for a more leisurely experience can tour a museum.

Amenities And Prices

Ocean cruise ships are much bigger than riverboats. An ocean-going ship can have thousands of passengers; riverboats usually have no more than 250, often fewer. Blogger The Sophisticated Life writes that cabins on riverboats tend to be smaller than those on ocean cruises, and the overall experience on the river is more intimate.

In terms of amenities, ocean cruises have much more to offer. Traditionally, river cruises have had cabins, a restaurant or two, and not much more. As one poster in the r/Cruise forum on Reddit puts it, "The ship is just your floating hotel." Ocean cruises, meanwhile, are floating resorts. They offer guests swimming pools, gyms, spas, theatres, casinos, shops, and multiple restaurants serving food from around the world. River cruises are much more sedate.

Last but certainly not least, you'll want to consider the price. The base fare of a river cruise tends to be more than that of an ocean cruise. However, the price of river cruises usually include shore excursions, some drinks, and Wi-Fi, while ocean cruises often don't. These extras can add up, so price your package carefully. Overall, river cruises are quieter and stop at smaller ports. Ocean cruises take you to major attractions and offer non-stop entertainment.
