The last few weeks I’ve been featuring recipes made from the veggies I grew in my garden. This week, I’m drowning in peppers so I decided to make my all-time favorite: sweet and spicy pepper jelly.

I try to make pepper jelly every year . I’m a sucker for all things sweet and spicy and I LOVE to eat pepper jelly on a bagel with a schmear of cream cheese.

It’s also excellent served as an appetizer with crackers or used in some recipes to add a flair of sweet AND heat.

Ingredients    1x 2x 3x

  • 7 cups sweet bell peppers varying colors, diced
  • 1 cup jalapeno diced
  • 4 cups sugar
  • ½ cup apple cider vinegar
  • ¼ cup white wine vinegar
  • 1 teaspoon salt
  • 2 tablespoons butter
  • 3 tablespoons red pepper flakes optional, to taste

Instructions  

  • Finely dice the sweet and hot peppers. In a large pot over medium high heat, add the peppers, butter, apple cider vinegar, white wine vinegar, sea salt and red pepper flakes. Stir to combine.
  • Add in the sugar – it should be in a 2:1 ratio with the peppers. Stir the sugar into the pepper mix until it has completely dissolved. Turn the heat up and bring the mixture to a rapid boil.
  • Use a thermometer to monitor the temperature. When the mix reaches 220 F, let it simmer until most of the moisture has evaporated – about 15-20 minutes.
  • While the pepper mixture cooks, sterilize the mason jars and lids. Leave the jars in the water until ready to fill. Keep the jars at a hot temperature so that they don't crack when the hot pepper mix is ladled in.
  • Remove the pepper mixture from the heat. Use a wide mouth funnel and ladle to fill the mason jars. Place the lid on top of each jar and tightly screw on the metal ring.
  • Place the jars in the water bath. Bring to a rolling boil – about 140 – 150 F – and simmer for about 15-20 minutes, until the lids have sealed. Remove from the water bath and place upside down to cool – this will help the peppers disperse evenly throughout the liquid as it cools.
  • Store the cooled jars upright – if sealed properly, the jars should last indefinitely, but I recommend consuming the jelly within a year. Serve with soft cheeses, like a cream cheese bagels; as an appetizer with crackers; or as a sauce base for sweet and sour chicken. Enjoy!

What Kind of Peppers Should you Use for Pepper Jelly?

For this Pepper Jelly recipe, I used a hodgepodge of sweet peppers harvested from my garden. There are red and green shishito peppers, yellow banana peppers, and cute little red and orange mad hatters.

The result of all the colours are very pretty, confetti-like jelly. It looks sparkly and festive, perfect for holiday gift-giving.

What's the Difference Between Jelly and Jam?

Jelly and Jam are both made with fruit. However, they are different products. Jelly is made with the juice of the fruit, while jam is made with the whole fruit. Although jams are thick, they aren't as firm as jellies. Some examples of jelly recipes: Pear Jelly or  Homemade Grape Jelly . And some jam recipes:  Spiced Plum Jam With Cardamom and Cinnamon or  Rhubarb Jam 

This pepper jelly is a little different from other fruit jellies because it does contain little pieces of the peppers.

Pectin: Liquid or Powdered?

I used liquid pectin in this jelly recipe. Simply because it's how I learned to make it and it's a very easy way to make jams & jellies. But if you are following a recipe for jam or jelly, always use the form of pectin that the recipe specifies.

The cooking methods used are different for the two different forms of pectin, so they are not interchangeable. Here's more info on that: Liquid Pectin vs Powdered Pectin

Can You Reduce the Amount of Sugar in this Jelly?

I don't recommend reducing the amount of sugar in this recipe. For jellies and jams, sugar is more than just a sweetener. The sugar works with the pectin and fruit acids to form the gel, and it also acts as a preservative.

If you reduce the amount of sugar, you take the risk of your jelly not setting up. And there is nothing worse than putting in the effort, only to have un-jelled jelly. And besides, aren't jams and jellies supposed to be sweet?

Do You Like It Hot?

I often make hot pepper jelly, too. If you would like your jelly to pack some heat, simply replace some of the peppers with jalapeno or other hot peppers, depending on your desired heat level. And if you don't have hot peppers, you can add a pinch or two of dried red pepper flakes in the cooking process.

I like to make this sweet pepper jelly for gift giving because not everyone likes spice, but everyone does love this jelly.

How to Use Your Pepper Jelly

As I mentioned, these pretty jars make excellent homemade gifts, for holiday gifts or hostess gifts. This jelly is delicious on crackers with creamy cheese, such as brie, and a perfect addition to a charcuterie board. It's great to have on hand for impromptu entertaining. Cheese and crackers get an instant upgrade when you add some pepper jelly.

Some other ways to use Pepper Jelly:

  • Glaze for grilling salmon, pork, or chicken
  • Glaze for baked ham
  • Topping for baked brie
  • Sauce for chicken wings or meatballs (toss the hot wings or meatballs in jelly for a restaurant-style appetizer)
  • Spread on a turkey sandwich (so good!)
  • Dip for egg rolls or spring rolls (Just heat in the microwave)
  • Spread on toast or biscuits
  • Topping for pancakes or waffles
  • Shake with a little vinegar for a delicious, tangy salad dressing

  • ▢ Jars, lids, & screw bands

Ingredients

  • ▢ 1.5 cups sweet peppers preferably three colours, finely diced
  • ▢ 3 cups sugar
  • ▢ ¾ cups apple cider vinegar
  • ▢ 1 pouch liquid pectin 85 ml

Instructions

  • In a large stainless steel or enamel pot, combine diced peppers, sugar and vinegar
  • Over high heat, bring to a boil, stirring constantly, and boil for one full minute
  • Stir in liquid pectin, bring back to a boil, and boil hard for one full minute.
  • Remove from heat and ladle into hot, sterilized jars.
  • Put on lids and twist screw bands just finger tight
  • Process in boiling water bath 10 minutes
  • Allow to cool, in which time you should hear the pop of the sealing jars, and your jelly will thicken

My jelly did not thicken. It’s pepper drink not jelly. I’m so upset and sad. Now what do I do? Can I pour it back in a pot tomorrow and cook like normal for about 15-20 minutes? Or dump it all??

Hi Trayce. I'm so sorry that your jelly didn't set. If you followed the recipe exactly, and your pectin was not expired (always check the expiry date), it should have worked out fine. But yes, you can cook it again. Here is a link to instructions: What to do when your jelly doesn't set Good luck!

Sweet and Spicy Chile Pepper Jelly

When is it done? Try this test: When the liquid has reduced by two-thirds, drop a spoonful onto a chilled plate and drag your finger through; if the jelly holds a trail that doesn't fill back in, it's ready. Learn more in this video.

Ingredients

Makes about 3 cups

Preparation

Pulse bell peppers and chiles in a food processor until very finely chopped (be careful not to purée). Transfer to a large saucepan and add sugar and vinegar. Bring to a boil, reduce heat, and simmer until liquid is reduced by two-thirds, about 1 hour.

Transfer jelly to heatproof jars; cover and chill until set, about 4 hours.

DO AHEAD: Jelly can be made 2 weeks ahead. Keep chilled.

Where does hot pepper jelly come from?

Regardless of how it came to be, hot pepper jelly truly found its stride in the South. The combination of heat and sweetness is highly revered in southern cuisine. Over the years, hot pepper jelly has become an integral part of Southern food traditions. It’s topped everything from biscuits and cornbread to cheese boards and even glazed hams. In fact, some claim that no Southern holiday gathering is complete without the presence of hot pepper jelly. I would have to agree with them.

Eventually, hot pepper jelly started gaining popularity beyond the Southern regions. It started making its way into kitchens across the country. Its unique blend of flavors and easy recipe with common ingredients made it a favorite among home cooks and professional chefs alike. Today, you can find hot pepper jelly not only in artisanal shops and farmers markets but also on the shelves of your local grocery store.

Hot pepper jelly not only tastes delicious but is also very versatile. People use it to add a spicy kick to both savory and sweet dishes. Its bright color adds a festive touch to any table. It makes a simply delicious appetizer with just some cream cheese and crackers. This jelly makes a killer glaze for not just ham but also duck! There’s one chicken chain that has pepper jelly dipping sauce. It makes a delicious dipping sauce for chicken or spring rolls.

How do you make cranberry hot pepper jelly?

I cannot stress how simple this jelly is to make. For those that don’t make jelly, there’s only one special ingredient you can get at any grocery store. And that’s pectin. Other than that, the process of making homemade hot pepper jelly is surprisingly simple and with very few ingredients. There are cranberries, jalapenos, bell peppers, cider vinegar, sugar, and pectin. That’s it!

I wanted little jars to make this jelly. I usually only keep quart jars around for various uses, but I wanted little jars so I wouldn’t have to open a large jar and either stash it in the fridge for a while or wind up eating the whole jar myself. So, I went to Good Will and found a bunch of little jars with no lids. Thankfully, I had lids. But they’re usually easy to find at Walmart or your local grocery store.

I start by prepping the jars. I ran them through the dishwasher to make sure they were super duper clean. Then I heated up some water in the microwave until it started to boil. That’s about 5 minutes for my microwave. Then I dropped the rings and lids in the water and let them chill while I prepared the jelly.

I used fresh cranberries. Yes, they have natural pectin, but peppers have a lot of moisture in them. So, I erred on the side of caution and added in the pectin. The first time I made hot pepper jelly without the cranberries, it didn’t set up. Set up means it didn’t gel right. I had to cook it again, add more pectin, and it finally set up. This is why I would rather add the pectin than have to recook a jelly again.

I finely diced all the peppers. There’s only one jalapeno in this recipe, but feel free to add more if you want more heat. Or change it and try a serrano, habanero, ghost pepper, or that new one that’s hotter than a ghost pepper. I don’t want all that heat because I like to taste my food.

When you chop the peppers make sure there are no seeds in there. I was very thorough about removing them all from the peppers and the cutting board before I chopped my peppers. Some say to wear gloves when handling jalapenos. If your skin is sensitive you might want to do that. Mine isn’t. But I do make sure to wash my hands thoroughly before touching anything else.

Put the cranberries and peppers in a large, non-reactive pot. You don’t want the vinegar to do anything to your pot so make sure it’s a stainless steel or similar pan. Yes, you can use a non-stick pan, but I like to see the color of the jelly as I’m cooking it. Stir in the vinegar and let the cranberries and peppers simmer for 10 minutes.

Yes, I know this recipe says jelly, but technically it’s not. It’s just what I’ve always called it. I mean, what Nana always called. It. A jelly is just the juice of a fruit or vegetable. This is more a jam if you want to be technical. Not many people now know the difference between jelly, jam, preserve, marmalade, or butter. So, I’m calling this jelly.

After the cranberries have popped open and the peppers are nice and soft, stir in the sugar. Yes. 4 cups of sugar. You could try the low sugar method, but you might need additional pectin. I’m not a huge sweets fan, but I love the sweet tart flavor in this jelly. So, I used all 4 cups and loved every bite!

Bring the mixture to a full rolling boil. That’s a boil that does not slow down when stirred. When it reaches a full rolling boil that’s when you stir in the pectin. I used a whisk to make sure it completely dissolved evenly throughout the pepper mixture. Bring it back to a full rolling boil and boil hard for at least 1 minute but I usually do 2 minutes. Then you remove the mixture from the heat.

Carefully ladle the hot pepper jelly into the sterilized jars. I have a funnel specifically for filling jars with jams and jellies. It’s come in handy many times. I use it for this, and I also use it to pour a homemade spice mix into the jar, too. Sometimes I get a little messy and drip in the rim of the jar. So I keep a wet paper towel handy to wipe the rims. If you don’t, it could make a mess like it did to me!

Nana taught me to screw on the lid and flip the jar upside down. However, when I did this one of the jars looked like it exploded! Either it had a mess rim and didn’t seal, or I didn’t screw the lid on tight enough. Either way, I had a sticky mess all over the cutting board.

Turning the jars upside down for 5 to 10 minutes allows the rubber in the top to get hot and expand. After about 10 minutes you turn the jars over. Doing this will ensure that the lids seal tightly. I always thought it was to make sure the fruit or whatever was in the jam didn’t just sink to the bottom.

What does cranberry hot pepper jelly taste like?

The first bite has the vibrant sweetness of cranberries shining through. Their tart flavor plays off the cider vinegar and sugar in this hot pepper jelly. Mine wasn’t too hot. It’s hit or miss with the jalapenos. But I’m okay with it not being super hot. However, the heat of the peppers does complement the sugar and the sweetness of the cranberries.

And this really does look like jelly. There aren’t many lumps in this recipe at all. It’s smooth, delicious, and perfectly pourable over a brick of cream cheese. That’s how we always eat this delicious hot pepper jelly; poured over cream cheese with Ritz crackers. Always Ritz. Because they’re my fave.

Cranberry Hot Pepper Jelly

  • 2 cups cranberries
  • 1 cup bell peppers
  • 1/4 cup jalapeno peppers
  • 1 cup vinegar
  • 4 cups sugar
  • 7 ounces Sure-Jell

Instructions

  • Start by prepping the jars. Either run them through the dish washer or sterilize them in a pot of boiling water. Place the rings and lids in a bowl of boiling water and let sit until the jelly is ready to pour into jars.
  • Finely dice the jalapenos and bell peppers. Add the peppers with the cranberries and vinegar to a large pot and simmer for 10 minutes.
  • Stir in the sugar and bring to a full rolling boil (one that doesn’t go away when you stir it). Add the pectin and stir with a whisk until the pectin dissolves. Bring back to a full rolling boil and boil for 2 minutes.
  • Remove the jelly from the heat and ladle into the sterilized jars. Fasten the lids and rims and turn the jars upside down for 5 to 10 minutes. Carefully turn them over and allow them to cool completely.

Hot-Pepper Jelly Beans Are Perfect for Fans of Sweet Heat

Some like it hot … and some like it even hotter. Jelly Belly, it so happens, now has jelly beans for both kinds of people.

The gourmet jelly bean company has just launched a line of five spicy jelly bean flavors for heat-seeking candy eaters that get “ progressively hotter ” as you go along. The new Fiery Five line has been released under Jelly Belly’s out-there, taste-challenging BeanBoozled brand , which heretofore has invited experimental types to eat jelly beans that look the same, but taste either yucky or yummy, depending on your luck. (That mottled little bean could be either “Toasted Marshmallow” or “Stink Bug,” either “Buttered Popcorn” or “Rotten Egg,” “Tutti-Frutti” or “Stinky Socks” – ew .)

With the BeanBoozled Fiery Five, though, the “game of risk” challenge is more spice-tolerance than gross-tolerance. (The packaging includes a warning stipulating that the jelly beans are recommended only for healthy people over age 13.) Each of the five “true-to-life” flavors -- sriracha, jalapeno, cayenne, habanero and Carolina Reaper – get hotter as you progress through them, so while sriracha provides only “a light burn” Carolina Reaper promises to pack “a major punch.”

Early taste testers have described the flavors as moderately hot and scarily accurate (if not always enjoyably so) – and apparently that was the idea behind the candy.

“We knew it wouldn't be enough to just knock your socks off with the heat; the candy also has to taste like the actual pepper or sauce,” Irena Miles, Jelly Belly’s director of research and development and quality assurance, said in a news release . “Our goal was to capture the right flavor notes while simultaneously building an appropriate level of heat. "

And capturing the level of heat was more nuanced than you might expect.

"We had to consider not only how to balance the vegetative notes in the flavor with the heat, but also how that heat presents itself and builds over time,” Luz Osbun, Jelly Belly’s research and development, noted. “Jalapeno has a sharp build and a quick fade, while Carolina Reaper builds quickly and stays hot for a while after. Our jelly bean versions for Fiery Five had to act like the real thing."

The Fiery Five jelly beans, available online and in stores, come in a variety of packages, many of which include spinner wheels to turn eating them into a game. In February, the line will introduce a colorful BeanBoozled Fiery Five tin with a large spin wheel built into the top.

The spicy beans, which are made with real chili-pepper puree, have already gotten a warm reception on Instagram .

“I ate all 5. Last one took about 10 minutes to stop burning,” wrote one early adopter, punctuating the comment with three (count ‘em!) thumbs-up emoji.

“I tried them they are really spicy,” chimed in another, who didn’t seem to be complaining.

There also appears to be a growing call for an expansion of the line: “what about ghost pepperrrr,” was but one of several urgent pleas for that flavor.

Maybe someday Jelly Belly will make a ghost pepper jelly bean, heat seekers, but in the meantime, you may want to get these while they’re … hot.

Pepper Jelly

T his homemade Pepper Jelly is sweet and spicy. It’s spreadable, and perfect on a cheese plate or charcuterie board. It might just become one of your favorite appetizers ever!

It’s really easy to make, it just takes some time to cook. If you can chop and you can boil something, you can make this pepper jelly. And, it’s really budget friendly!

This recipe comes from pepper jelly cheese balls via Take Two Tapas . I first shared it in 2020.

I make this pepper jelly recipe with no pectin all the time, and so do many of my readers, so I knew it had to have a space of its own. And it’s a perfect time to share it for Tailgating Snacks Month!

Tailgating Snacks Month

Happy October! If you’re new here, October is the month that we celebrate all that is yummy snacks!

This is our tenth year doing tailgating snacks month, and I love all the fun that we have doing this event with you guys!

What is the difference between pepper jam and pepper jelly?

Ok, so a jam has fruit in it and a jelly is just made from the juice.

So, in all actuality, this should be called pepper jam. But let’s be honest, no one calls it that!

Different recipes will have different peppers, but this recipe calls for a combination of red bell pepper, green bell pepper, jalapeño peppers, as well as ground black pepper, and ground cayenne pepper.

But feel free to customize it to whatever peppers you have. Maybe your garden produced lots of yellow bell peppers or Serrano chilies.

I recommend staying with 2 sweet bell peppers and one or two hot peppers. Though, if you like it really spicy, feel free to up the heat!

I don’t usually can the things I make. We eat them, enjoying them when they’re made.

But if you would like to do so, please follow the instructions from the USDA’s National Center for Home Food Preservation or the official site from the makers of Ball jars.

I have heard from many readers that they can this using a water bath method with no problems.

If you’re the canning type, it will make fantastic holiday gifts.

So, you can make this pepper jelly recipe  without canning it, or with canning it if you prefer.

How to serve

If you’re in need of serving inspiration, here are some great ideas: 

Make pepper jelly shrimp for dinner. It’s an easy sweet and sour type shrimp.

I love it over roasted salmon! Here’s my recipe on how to roast salmon .

Try pouring the pepper jelly over a block of softened cream cheese or goat cheese and serve some crackers with it. It makes a really easy appetizer that everyone loves! Kind of like this baked pepper jelly cheese dip recipe.

Serve the pepper jelly on a cheese plate or charcuterie board with some crackers and apple slices.

Spoon it over chicken or tofu for an easy and impressive dinner.

Serve it over ribs, pork roast ,  lamb burgers , or chicken for a sweet and spicy meaty meal.

I served it at a super bowl party once and it was the most popular thing. Everyone asked for the recipe!

Spread it on a sandwich, especially a grilled cheese sandwich or a burger.

It also makes a festive holiday appetizer.

How to make

Wash and trim the peppers. This includes the bell peppers as well as the jalapenos.

Try to cut off all the white ribs of the bell peppers. They just aren’t that pretty, and won’t add anything to the jelly. Remove all seeds.

Chop the peppers into fairly small pieces.

You can also chop the peppers in the food processor. To do so, give them a rough chop and pulse them in the food processor until finely chopped. You may want to do this in batches, so you don’t crowd the bowl; they will chop more evenly if you don’t crowd the bowl.

Pro tips about working with hot peppers:

First, you can adjust the heat to your preference. It’s easy to customize, just use more or less jalapenos. Use Serrano chiles for more heat. Or, go all out with ghost chiles!

Also, keep in mind that the same kinds of peppers are not always the same heat and spice level. There’s no real way to tell until you taste.

Much of the heat of peppers is in the membranes and seeds. You can keep the white membranes and the seeds of the spicy peppers in the jelly if you wish.

If you want a mild jelly, be sure to remove all the membranes and seeds.

Peppers get hotter as they get older. If the pepper has white lines on the outside and is a bit wrinkled, expect more heat because the pepper is most likely older.

Be sure to wash your hands after working with hot peppers. And don’t touch your nose or eyes after working with the peppers.

Continue making the jelly

  • Mix all pepper jelly ingredients in a heavy-bottomed saucepan, and bring to a boil over medium heat.
  • Reduce to low and simmer, stirring occasionally, for about 2 hours or until reduced by about ½, making about 2 cups of pepper jelly.

Words of wisdom: Don’t inhale the aromas of the pepper jelly as it cooks. You’ll burn your nose! Also, I like to make this on a day where I can open all the windows and let the vinegar and pepper smells dissipate.

  • The longer the jelly is allowed to simmer, the thicker it will be.
  • Allow jelly to cool completely. It will thicken as it cools.

Store the pepper jelly in an airtight container like a mason jar in the refrigerator for up to 2 weeks.

I find a {affiliate link} wide mouth canning funnel to be really useful in getting the jelly into the jars.

Troubleshooting: My jelly didn’t set properly

Different things can make a jelly come out differently each time. From the size of a pan to the fact that some peppers have more liquid in them than others. The altitude and the cooking time and heat under the pot will all have an effect.

If you find yourself with a jelly that doesn’t set up or is too thin, simply pop it back on the stove and cook it a bit longer. Even if you already placed it in the fridge.

If your jelly is too thick, stir in a bit of water. You may need to heat it back up to get it to all stir in properly.

I’ve tried to make this jelly in the crock pot, and it has never set properly for me. It seems fairly straight forward, low heat for a few hours. Or maybe high heat for a couple of hours.

But it’s never worked right for me and I always end up popping it back on the stove to finish cooking.

If you try it in the slow cooker and it works for you, please let me know the time and temp you cooked it at.

How to Store Pepper Jelly

For longer storage, keep it in the freezer.

To Freeze: Pour jelly into containers and apply lids securely. Be sure you leave some empty space at the top when filling your jars to allow to expansion in the freezer. Store in freezer for up to 4 months.

When properly canned, the pepper jelly should last for up to one year in a cool, dark place.
