Pampanga is known as the Culinary Capital of the Philippines for all the mouthwatering reasons. A Pampanga food trip is all you need to taste the province’s best dishes.

Only a two-hour ride from Metro Manila, go up north and do what every foodie must do: E-A-T.

Restaurants to include on your Pampanga food trip: Where to eat, what to order

Where to eat in Pampanga, you may ask. Below is a list of must-try restaurants and dishes. These are the places where you can get to taste how authentic the meals are. Also included are the best sellers for each restaurant.

1. Everybody’s Café

Best-seller: morcon.

Everybody’s Café is an exotic restaurant. So expect to see betute (fried stuffed frog), kamaru (fried crickets), and tapang kalabaw (cured carabao meat) on the menu. These items sold out fast, so be there as early as possible if you want to try them.

If your palate is not ready, the restaurant also serves Kapampangan comfort food such as mami, sinigang na sugpo, embutido, and tsokolate (chocolate batirol), which take at least three hours to prepare. But morcon, the house specialty, remains to be Everybody’s Café’s best-seller.

There is a mini shop inside the restaurant. They sell the most delectable sylvannas in Pampanga.

There are two Everybody’s Café branches; one in  Nepo Mart in Angeles and MacArthur Highway in Del Pilar, San Fernando City. Choose the second one because it is the actual ancestral house that was turned into a restaurant.

2. Aling Lucing’s Sisig

Best-seller: sisig.

Sisig is originally from Pampanga. Aling Lucing’s Sisig claims that it’s the first to offer the delicacy made from pig’s head meat (cheeks and ears) and other parts that were considered scrap then. Today, sisig is known as a ubiquitous beer match and is almost always present in every Filipino drinking session. Luciana Cunanan, or simply Aling Lucing, the Sisig Queen, introduced the dish in the 1970s. Incidentally, Aling Lucing claims to serve the best sisig in Pampanga.

The streetside eatery also offers sizzling pusit (squid) on top of the best-seller, sisig. There are many options to choose from a la turo-turo style, including fish, pork, chicken, chicharon bulaklak (ruffled fat crackling), and tokwa’t baboy (fried tofu and steamed pork).

Aling Lucing’s Sisig is located in Glaciano Valdez St., Angeles City.

3. Mila’s Tokwa’t Baboy

Best-sellers: tokwa’t baboy and sizzling sisig.

Another sisig joint in the province that also claims the origin of this indulgent delicacy is Mila’s Tokwa’t Baboy. Their version is on the crispy side, although the same ingredients were used in preparing it. The carinderia began operation in 1989.

Its best-seller other than sizzling sisig is tokwa’t baboy served with its special sauce made from soy sauce, celery, and tomatoes. You have never tasted something like this before for sure.

Mila’s Tokwa’t Baboy is a few blocks away from Aling Lucing’s Sisig. It is located in San Andres St.

4. Café Fleur

Best-sellers: crispy shrimp okoy (appetizer) and crispy pork belly, and macadamia kare-kare (main course).

The famous Chef Sau del Rosario is behind the homey Café Fleur. The restaurant serves classic Filipino dishes but with a French twist. Of course, Kapampangan dishes like pako (fern) salad, buro (fermented rice), and fried hito (catfish) are a staple of its menu.

Café Fleur is also known for unique dishes such as crispy shrimp okoy (shrimp cake) and crispy pork belly, and macadamia kare-kare (stew in peanut sauce)–its appetizer and main course best-sellers, salted egg bibingka (cassava) cheesecake, lamb caldereta with kesong puti (cheese), and pandan (screwpine) sansrival.

The restaurant is located in Miranda St. Brgy. Sto. Rosario, Angeles City.

5. Historic Camalig

Best-seller: armando’s pizza: ang pambansang pizza.

From its name, Historic Camalig used to be the Nepomuceno family’s house and rice barn. The restaurant offers unique pizza flavors, with which the owners dubbed the “pambansang pizza” (national pizza). Armando’s Pizza: Ang Pambansang Pizza is actually Historic Camalig’s best-seller.

Speaking of which, Historic Camalig serves longganisa (sausage) and salted egg-flavored pizzas. Other best-sellers include tinapa (smoked fish), tuyo (dried fish), and chicken adobo pizzas.

Cisan’s, another restaurant in Pampanga that serves Japanese-Thai-Vietnamese dishes, is also owned by the Nepomuceno clan.

Historic Camalig is located a few meters away from Café Fleur. It is specifically located in Camalig Square, Dalan Sto. Rosario, Angeles.

6. The Original Razon’s

Best-sellers: halo-halo and pancit palabok.

From its humble beginnings as a refreshment parlor, The Original Razon’s became a household name thanks to its halo-halo and pancit palabok, both of the diner’s best-sellers. The owners even included the tagline “The Halo-Halo & Palabok that Made Guagua Famous.”

Razon’s opened in 1972, serving what we now call the minimalist halo-halo. Their version has only four ingredients. The quaint, family-friendly restaurant also has a mini shop inside selling chicharon (crackling), uraro (arrowroot), bottled sardines, and taba ng talangka (crab fat).

Razon’s is located along the MacArthur Highway in Mabalacat, Pampanga.

7. Apag Marangle

Best-sellers: adobong camaru, sizzling balut, and relyenong betute.

Apag Marangle, like Everybody’s Café, serves exotic dishes. What makes the experience more unique is the menu that resembles a banana leaf and the table set inside connecting nipa huts partially submerged in the water.

The menu items are written in Kapampangan but also include the English translation of each. Their best-sellers are adobong camaru (mole crickets in vinegar and soy sauce stew), sizzling balut, and relyenong betute (stuffed frog).

It also offers ningnang (grilled) and pulutan, including tokwa’t liempo (fried tofu and steamed pork belly), sizzling balut, chili garlic camaro, and tugak king bawang ampong lara (chili garlic frog).

The rustic place is huge, with a small pond where the catfish are contained, a play area, a mini zoo with birds and monitor lizards, and a selfie spot. The place is surrounded by greens, so you’ll have a relaxing yet delicious meal.

8. 1956 Downtown Café

Best-sellers: trianggulo, sinigang na lechon, crispy hito and halo-halo.

1956 Downtown Café is owned by another renowned Kapampangan chef, Chef Claude Tayag of the Bale Dutung fame. The restaurant was established to commemorate his birth year.

The retro-styled diner serves unique dishes from crispy aromatic spring duck and lechon taco to halo-halo with crema de pastillas. Halo-halo is one of its best-sellers along triangulo (fried samosas filled with tinapa, pili nuts, and spinach), sinigang na lechon (roasted pig in sour stew), and crispy hito (catfish).

Eating here will make you feel nostalgic with all the memorabilia despite being a relatively small diner.

9. Nathaniel’s Bakeshop

Best-seller: buko pandan salad.

When Nathaniel’s opened in 1994, it mostly offered frozen dessert products such as juices, fruit salad, sylvannas, and its best-seller buko pandan salad. The last one sells out so fast the crew has to replenish the stock on the fridge several times daily.

Now, the selection widens to include chicharon, bucheron (chicken gizzard crackling), cashew-flavored barquillos (crispy waffles), puto pao (steamed buns), and other local delicacies. A bigger portion of the main branch, where the plant is located at the back, is converted into a restaurant.

10. Kusinang Matua ni Atching Lillian

Best-seller: san nicolas cookies.

Lillian Borromeo is famous for her San Nicolas cookies, which is also the Kusina’s best-seller. The kitchen is on the first floor of her house. She hosts cooking demos here. She lives on the second floor. If she’s there, Atching Lillian welcomes an impromptu interview.

Her place is like a mini museum with all her family’s artifacts when cooking. There are old ovens, stone mills, wooden mortar and pestle, sewing machines turned into a table, and hundreds of biscuit molds passed from generation to generation.

Kusinang Matua ni Atching Lillian is not actually a full-blown restaurant, but including it in the list is a must too.

11. Apag Marangle

13. Kalidad Coffee

This community-forward cafe in Pampanga is known for its simple and straightforward coffee menu. Individuals who have not developed an affinity with caffeine are not left out either, as the coffee shop offers non-coffee beverages and snack items. However, if you wish to try something different, be sure to sample their signature Kalidad Coffee or Cloud Americano. 

14. Cafe Rooftop

Moon Cafe is one of the most popular cafes in Pampanga, owing to its Korean-inspired Instagrammable interiors. The brainchild of Cafe Fleur’s owner and chef, 25 Seeds, is a farm-to-table concept restaurant that serves reinvented modern Filipino dishes. The restaurant exudes a modern homey feel despite being the Dycaico Ancestral House, an abandoned mansion built in the 1920s. The restaurant’s must-try dishes are Mushroom Tom Yum, Fried Vegetable Dumplings, Three Cheese sandwich, Sous Vide Duck with Adobo, Pinakbet Ratatouille, and Elote.

They are open Tuesday to Sunday from 11:00 AM to 9:00 PM. They are closed on Mondays.

4 Restaurants We Tried in Pampanga: A Food Tour Itinerary

When TLC invited us to join them in retracing Anthony Bourdain’s steps in touring Pampanga, we were definitely psyched. We’re fans of great food and fans of Bourdain, so we started off bright and early to join TLC and SkyCable for the FoodSteps Culinary Tour in Pampanga for a day of eating and learning.

Kusinang Matua ng Atching Lilian Borromeo

Address: Brgy. Parian, Mexico, Pampanga

Lilian Borromeo is a force to be reckoned with. When we arrived she was organizing the buffet of Kapampangan breakfast dishes including tamales, meatloaf, longganisa, dinuguan, and a host of several other dishes that were homemade and served fresh. We filled ourselves with breakfast while she went around, made sure the buffet was refilled before dishes ran out, and talked to a few of us. She said she was a fan of Anthony Bourdain, but did not know exactly who he was, self-deprecatingly saying “Pag matanda ka na di mo na inaalam talaga, basta papanoorin mo kapag nandiyan” (When you’re older, you don’t really pay attention, but you watch when you see them).

She started her demo of baking the famous Panecillos San Nicolas and shared her experiences of making them. Charming and humble, she told us why she’s making sure the recipes of the 16th century are still in circulation, saying there are people making old things new, but that she wants to start from the root and make sure the original recipes aren’t forgotten.

Unlike most chefs, she shares all her secrets and tricks with the crowd, and lightheartedly cracked jokes often, with a demeanor that only endeared her more to everyone. We listened and asked questions, and after the demo, the line to take pictures with her was understandably long as we all wanted to remember this sweet, amazing woman who is living gracefully, and so joyfully.

Happily filled with breakfast, we piled into our Luxe Bus again and travelled the 30 minutes to Bale Dutung, Claude Tayag’s family home. We knew we were in for a treat, as we had been told that ten courses would be served, the food that Bourdain had eaten when he had visited, plus a few more courses to complement those. Starting off with a salad, we ate leisurely through the ten courses, with Chef Claude introducing each course with the history and background of each dish. While each course had its own appeal, our table raved about the lumpiang ubod, adobong pugo and the seafood kare-kare.

One woman at the other table even cried after being asked how she liked the kare-kare, saying it was the best kare-kare she’s ever had. Four hours of eating did not seem quite enough to absorb all of the information and delectable quality of each plate set before us, and we left moaning in contentment to head to our next stop.

Susie’s Cuisine

Not really a restaurant. More like a food store. Susie’s Cuisine did not leave us wanting, and sent us bags of Pampanga’s best kakanin, and until a few days later (with a ton of restraint to not eat it all in one sitting), we were still enjoying their sylvanas, and our favorite, carabao milk pastillas, perfect with a cup of coffee for merienda.

Café Fleur was the last stop for our Pampanga food tour, and while we thought we couldn’t fit in another bite in our bellies, the cooking demos by the three in house chefs of Tamales Pampaguena, Okoy and Sisig got us excited for the food to come.

As Chef Chloe explained, the street food served in the café are elevated concepts to not just look great, but use herbs they grow in the garden, and are made of ingredients sourced locally. With a backdrop of the old house they converted into the multi-concept restaurant, it was the perfect end to the day.

Every stop we went to, while offering different cuisine, all had the same things in common: People committed to showing the best of what Pampanga has to offer, and a passion for making things delicious. It was a delight to experience and be in the presence of people who pride themselves in their region’s cuisine and are sharing their expertise to locals and outsiders alike. The world is ready for Filipino food and where better to start but at home, tasting what our local chefs have to offer, and sharing it with the world. We left the day prouder of our heritage as Filipinos, and as eaters, to have gone through that marathon of eating and lived to tell the tasty tale.

Filipino Food Tour in Pampanga with World Street Food Congress!

Pampanga is one the food capitals of the Philippines.

In this Filipino food tour blog post I’m going to share with you some local food gems, mostly in Pampanga (but in Manila as well), that I had a chance to try on a full-on 15 hour food tour frenzy with Makansutra.

Makansutra , founded by KF Seetoh – a Singaporean food personality and advocate for the preservation of street food – had an idea to organize a street food festival of vendors from around the world in one place serving authentic local dishes.

So when I was invited to join KF Seetoh and team for a food tour in the Philippines prior to the main World Street Food Congress 2017 event, I was excited to go.

Although we enjoyed a few local restaurants in Manila as well, much of the 15 hour Filipino food tour was in Pampanga, just north of Manila, a region that’s known throughout the Philippines for their food.

Bulalohan sa España

1. Bulaluhan sa España

Our first stop on this epic Filipino food tour was a small carinderia (local Filipino restaurant) located at the back of a petrol station in Manila called Bulaluhan sa España.

This is a place where you’ll find an amazing version of bulalo, a beef bone marrow soup.

The broth has been boiled for so long that it has a rich meaty flavor, and some of the marrow begins to melt into the broth. It’s pure meaty goodness.

Also here, I really enjoyed a Filipino eggplant dish that was flattened and coated in egg (tortang talong), as well as the plate of extra crispy deep fried pig fallopian tubes.

Atching Lillian

2. Atching Lillian

We then took the 1 hour drive to Pampanga to start feasting.

Atching Lillian is an extremely special lady who is legendary for preserving traditional food from Pampamnga (known as Kapampangan cuisine ). She’s so well known for her food that her single name is associated with the purest and the most traditional Kapampangan cuisine in the country.

She doesn’t run a typical restaurant, but she cooks from her home, and you have to call ahead to make a reservation in her private dining room.

Many of the traditional dishes she cooks are challenging to find elsewhere, and have a unique story and history that surrounds them.

One of the most interesting dishes that I wanted to try at Atching Lillian were her version of Filipino tamales, since Mexican tamales are always something I enjoy eating.

While Mexican tamales are typically made with corn flour and wrapped in corn husk then steamed, these tamales were made from rice flour and wrapped in banana leaves before being steamed.

The rice flour was very pudding like in texture, while the filling included eggs and bits of meat. They were delicious, and had that banana leaf aroma to them as well, like you get when you cook anything in a banana leaf .

Eating at Atching Lillian was a once in a lifetime opportunity to learn about traditional food from Pampanga, she’s truly a special lady.

Taldawa Pampamnga

I’ve been a huge lover of goat since before I can remember. As a kid growing up in Kenya, one of my favorite activities to do was hang out and eat roasted goat . So anytime I have the opportunity to eat goat I’m usually quite happy.

Taldawa is a local restaurant, or more like backyard eatery, in Pampanga, that serves only goat and duck, both of which are raised either right in the yard where they are being served, or very nearby.

We tried 3 main dishes, kaldereta – a goat stew with tomatoes and carrots and potatoes, goat sinigang – a Filipino sour soup, and lastly duck adobo – one of the Filipino national dishes made with duck.

All three dishes were stunning, the meat was so tender, and really tasted like real natural meat – that’s the way I like it.

The goat sinigang soup was rich and oily, full of meaty flavor and the chunks of goat were fall off the bone tender.

Taldawa restaurant

Throughout my number of trips to the Philippines I’ve eaten quite a few versions of adobo, but this was my first time to eat duck adobe.

The bite sized chunks of duck were stewed with soy sauce and vinegar until ultra tender. It was salty, and wonderfully tender.

25 Seeds

4. 25 Seeds

Along with KF Seetoh and the Makansutra team from Singapore, Chef Sau Del Rosario, a renowned Filipino chef, was also along with our group on the food tour.

Chef Sau is originally from Pampanga, and one of his signature restaurants is 25 Seeds located right in the center of Angeles City.

Although you’ll find some modern interpretations of Filipino dishes at 25 Seeds, one of the things I really liked is that they use local high quality Filipino ingredients in their dishes.

Pampanga is famous for its original sisig , a Filipino dish of chopped up pigs face.

But KF Seetoh and Chef Sau masterminded a progression of sisig and created a sisig paella – and it was exactly as good as it sounds.

First chef roasted the pigs face, then chopped it up, and sauteed it with onions and magarine and light spices. He then added rice, and covered the mixture with banana leaves to steam and bake it.

Final step of the paella was to top it with diced chilies, cilantro, and calamansis all around.

It was brilliant, gooey rice with the chewy bits of pig face, all wrapped up in an incredible smoky flavor.

Susie's Cuisine

5. Susie’s Cuisine

Located in the heart of Angeles City in Pampanga, Susie’s Cuisine is known for serving desserts, and just about all Filipinos with a sweet tooth are bound to know about them.

I have to be honest and tell you that I’m not into sweets, so Susie’s Cuisine wasn’t my favorite stop on this Filipino food tour in Pampanga. However, I did taste their signature desserts.

The first dessert I tried was tibok tibok , which is made from both carabao’s milk and coconut milk, and had a gooey pudding like texture.

The second Filipino dessert I sampled is called sapin-sapin, a glutinous rice flour cake with coconut milk and plenty of sugar. Traditionally the purple layer was flavored with ube , a Filipino purple yam.

A couple bites of the desserts was enough for me, they were very sweet.

6. Makansutra Hawkers

After finishing with the desserts at Susie’s Cuisine, we drove back to Manila. The traffic was brutal.

Located at SM Megamall in Manila, KF Seetoh recently opened Makansutra Hawkers, a hawker food court serving dishes mostly from Singapore and Malaysia.

At this point we took a quick break from the eating to attend the World Street Food Congress 2017 press conference where KF Seetoh and a number of others spoke about the event that will bring together unique street food dishes and stalls from around the world into a single food market in Manila.

After the event, they served up a full spread of food at Makansutra Hawkers market.

Probably my favorite dish was the claypot rice, which has to be one of the world’s most comforting of all dishes. It brought me right back to a hawker center in Singapore .

7. Zubuchon Lechon

It wouldn’t be a complete Filipino food tour without lechon on the menu.

Lechon, the famous Filipino style of whole roast pig, is often known as one of the best versions of roasted pig in the world.

Years ago, Anthony Bourdain went to Zubuchon in Cebu, Philippines and proclaimed it as the “Best pig ever.”

Since then Zubuchon has become a legend and they even opened a branch in Manila, serving the same pig recipe.

There’s no other way to say it other than the lechon was spectacular.

The skin is easily one of the most crispy things you can possible put in your mouth, and the meat underneath is so soft and tender it melts in your mouth. The combination of both at once is heavenly.

Manila street food

One of the things I love the most about KF Seetoh and Makansutra, and why I support them, is that they are aiming to look to the future of street food and find a solution to preserve so many incredible family recipes and stories.

I’m not sure if we know all the answers or ever will, but the World Street Food Congress event, is certainly making steps in the right direction and is an amazing initiative to preserve the best street food.

I had a fantastic time on this Filipino food tour, mostly in Pamapanga, but also eating at a few places in Manila. I hope that this post will give you just a taste of the multitude of flavors and dishes to try in the Philippines.

Oh wow Mark! Great blog! Brought back so many wonderful memories from my childhood days when I was doing my summer vacation in Pampanga at my grandmother’s house. All those tasty food and desserts she cooked in her kitchen. My favorite is Tocino. Have you tried that food? Pampanga makes the best Tocino. I now live in Europe so seeing your food blogs makes me miss food in the Phils so much. If you happen to be in Frankfurt, let me know. I live in a place full of restaurants. It’s the first time I’ve seen any of your vids. I have become an instant fan. Next time you are in Quezon City, you should try Pochok’s Bangusan (grilled milkfish), a hole in a wall restaurant along Chino Roces Avenue, Quezon City. They serve grilled milk fish with a tomato celery salad spread on top of the deboned milk fish. I also love their nilagang baka (boiled beef with chinese cabbage and corn). The place is packed during lunch hours, a testament of how good the food is!

Great post! I’m fairly familiar with Kapampangan cuisine but the tour seemed to focus on less known stuff. I’ve been wanting to try Mexican tamales, I knew about those before learning we had our local version! I do like our local version though, it’s like a distinctly Southeast Asian take on the dish with the ground peanuts/achiote mixture, the glutinous rice paste and banana leaf wrap 🙂 You can find this in other Luzon provinces not just Pampanga. Sometimes we can buy this from rice cake vendors outside church after Sunday mass. I wish you could have tried other Kapampangan food like bringhe, carabao tapa, betute or frog legs, fried mole crickets, palabok, aligue (crab roe/fat sauteed in oil), and my favorite deep fried fish with fermented rice paste (called buro or balo balo kinda like koji rice I guess) wrapped in mustard leaves. Susie’s is also famous for its palabok, rice noodles with a shrimp gravy with fried garlic, scallions, hard boiled egg and chicharon (some versions have tinapa or smoked fish). They have some nice empanadas as well (although I personally buy my meat pies from a different Kapampangan store). If you went up further North to Nueva Ecija you’ll find kesong puti or kesilyo (quesillo) or salty water buffalo cheese wrapped in banana leaves. The flavor is similar to haloumi 🙂 Anyway I’m so happy you were able to feature Filipino cuisine, it’s more than balut and adobo 🙂 Next time you’re here do try the foods of Bacolod and Iloilo, it’s seafood and chicken galore and their spiced vinegar sinamak is the best in the Philippines 🙂

I’m particularly intrigued by Kapampangan cuisine — not only does everything look yummy, but also complex. Rasoi Indian Restaurant

Rasoi is a decent restaurant serving Indian cuisines just along the same street as Paizano’s. Believe me, you can barely taste the strong and bold spices of their wide variety of Indian dishes savory to the tongue, from the original Indian Naan bread, the creamy tomato sauce of this orange-colored Chicken Tikka Masala, flat bread Roti, and more dishes to delight your palate! One of my favorite is the samosa with this spicy bottle mint sauce. Not a fan of hot sauce but Samosa plus the dipping sauce was just fantastic!

Opens at 11:00 and closes at 23:00, the only Indian restaurant in town is open for the curry lovers 365 days in a year! Yes, definitely no break in the kitchen just to serve authentic Indian cuisines all year round!

Clark Museum

Our first Angeles experience started with the relaunching event at Clark Museum. I consider this as one of my favorite part of the Angeles tour. Historical pieces, art exhibits, traditional and native hunting tools  of the Aeta tribe, volcanic rocks from Pinatubo and more local relics.

There is this area in the museum with lanterns displayed, lighted Christmas lanterns! And they have this gigantic lantern which is powered by a machine that when you turn the steering wheel, it produces a sequence of switching on and off of the lights.

And from the museum, we headed to the intriguing 4D theater. We were brought back to the past, from the moment Angeles City became a permanent quarter of the American forces, to the catastrophe brought by the eruption of Pinatubo, up to what Angeles City has become today.

Museo ning Angeles

In 1999, Kuliat Foundation, a non-stock and non-profit organization started their first step on preserving city’s rich history, culture and tradition with full support from the local government and city tourism office. In order to further promote city tourism, they worked hand in hand with the ongoing development of the heritage district. Beginning to open doors to the public, making there mark as a Food Capital, particularly with their ever famous Sisig, and sharing preserved culture that the city has.

Museo ning Angles is divided into four gallery, Sukulan Gallery, Vicente Alvarez Dizon Gallery, Balikdan Gallery, Culinarium, and the newest, Cafe Museo. Cloudy day yet just perfect for a cup of Tsokolateng Batirol and Putong Babi at Cafe Museo. We even witnessed how Chef Richard personally prepares the Tsokolateng Batirol. This warm melted tablea (pure cacao beans) chocolate drink is stirred by a wooden Batirol which is the key to its perfection. Putong Babi on the other hand is Angeles’ local version of pork buns. Made of a half slice Pandesal, egg, mashed Camote and fried in lard which gives us the idea on where its name was derived as Babi in kapampangan means Pig. The sweetish creamy taste of Tsokolateng Batirol is definitely best with the fair salty taste of the Putong Babi on a perfect drip drop cold weather.

Culinary shocker frogs and crickets, dished out for a cooking demo at the Culinarium area of the Museo. As a big fan of bizarre food, both exotics definitely won my palate hands down. What makes Betuteng Tugak (stuffed frog) a favorite is the filling, the organic flavorsome spices that enhances the taste of the meat, taste even better than Chicken. Adobong Kamaru (cricket), simple yet embraced by serious flavors of great piquancy with these crunchy cricket legs tickling your tongue.

Pamintuan Mansion

This mansion was built around the 80’s by Don Florentino Pamintuan in which ownership was later passed on to the Tablante family. Later on, the property was donated to the Central Bank of the Philippines, passed on to the national government, Department of Finance and to the National Historical Commission of the Philippines (NHCP).

The first and only anniversary celebration of Philippine Independence Day (12th of June 1899) was held at the Pamintuan Mansion. It also served as the Malacañang of the North whereas the first Philippine president of the republic, Gen. Emilio Aguinaldo, was said to moved the seat of government from Cavite to Angeles, making the mansion as the headquarter.

A tour inside the mansion, we were pointed to the main entrance where the Señora’s calesa goes in and the reception area where certain parts are said to be restricted from those who don’t belong to the “alta sa ciudad” or unwelcome visitors/relatives.

Mansion was being developed as they built public comfort rooms plus a class room type audio visual room for the kids to learn. Quite fine architecture can be seen inside the mansion, a mixture of Victorian and local influence. It’s a lucky day for us since the mansion is not yet opened to the public, but we were allowed to visit the place. Inauguration of the mansion as a museum was held last August 2015.

Center for Kapampangan Studies

Quick walk from Mueso ning Angeles, just crossing the streets and we finally entered the largest university outside Manila, the Holy Angel University. We were heading to the Center for Kapmapangan Studies, which is located inside the university. Few steps, as we reached our destination, trees welcomed us, trees with quite interesting names. Most of the town names in Pampanga were derived from these trees: Dau, Balacat (Mabalacat), Panipuan, & Betis.

The Center for Kapampangan Studies promotes culture preservation of the local Kapampangans, from local craftsmanship, paintings, and other historical pieces of the city itself.

The Kapampangan also has their own indigenous writing system, the Kulitan, in which most of its characters came from various Asian countries. They even have this computer where you can type words and it will translate these words to the Kulitan writing.

Bale-Balayan

Bale-Balayan, the museum for the poor, was founded by an artist with the love for culture and arts preservation, Mr. Peter De Vera. A museum and music-and-dance training center, Bale-Balayan provides the less-fortunate members of the society the opportunity to develop and show their craft and artistry.

From Cordillera inspired library and reception area in the entrance, we moved to the Spanish influenced area of the museum. They have this prayer room area, where the “Our Lady of Montserrat” is placed. They also have there own interpretation of the station of the cross, influenced by social, political and environmental issues. These art pieces are made of real human blood stains which they collect from the flagellants who partake and scourge themselves in public every Semana Santa. They also have this Asian influenced meditation room with various wood and metal sculptures, crafted by the locals and some imported from other Asian countries.

We even witnessed a great performance from the children as they played native instruments and we had some snack and treats whilst watching them (I love the Tanglad tea that they served).

Basic safety tips as shared by the owner, specially along the Pro’s Area, if out of control and heading for an obstacle that you wanna get away from,  you just need to let go of the handle, and if you fall in the water, keep an eye all the time. Watch out for other wakeboarders and handles that travels at around 30 km/h. Of course, you don’t want to get hit by those handle in the head. Just pay attention. Life vest and helmet will be provided by the staff upon registration. They also have shower rooms within the area. Planned to just try wakeboarding in the Beginner’s area but we don’t want to waste time with the long queue so we moved to the Pros area, assuming that we can go along with all those wakeboarding enthusiasts who can lift there boards and jump off the ramps! A real kickass experience, I’ll definitely comeback! (for more wipeout experience haha)

There’s a lot to see and experience in the food capital of PH and their great efforts on preservation of history, culture and customs truly deserves a great commendation. Food Trip: Pampanga

Located just a couple of hours from Metro Manila, Pampanga is a great choice for those looking for a unique food trip destination relatively near the metro. This province in Central Luzon is known as the “Culinary Capital of the Philippines,” known for being the birthplace of chefs who learned cooking techniques from Spaniards during the colonial period and passed down family secrets through generations.

It’s always difficult to come up with a list of “where to eat” in a destination, and more so when you’re writing about a place that’s known for their great cuisine. Like all food trip guides, this list is by no means definitive. It’s based on places that I have personally tried during media tours & from recommendations of friends who live in the area. If you only have a limited time, these are just some suggestions where to eat. WARNING: Putok-Batok post ahead.

Aling Lucing’s Sisig

Sisig, a dish made of grilled, diced pork cheeks, ears, liver, onions, and pig brain, is pretty much synonymous with Pampanga. The country’s most popular pulutan (food paired with beer) is credited to Lucia Cunanan of Angeles City, who popularized it by using discarded ingredients from Clark Air Base. When in Pampanga, it’s a must to visit Aling Lucing’s Sisig.

This unassuming streetside eatery serves the most authentic Kapampangan Sisig, as well as other specialties like Chicharon Bulaklak (fried pork intestines), Tokwa’t Baboy (Boiled Pork with Fried Tofu), barbecue and Pako Salad.

Mila’s Tokwa’t Baboy & Sisig

Mila’s is a humble carinderia operating since 1989 that’s reputed to have one of the best sisigs in Pampanga. The classic sisig is well-seasoned and crispy, pretty good on its own (but preferably with rice). The Tokwa’t Baboy, with crisp and fresh golden fried Tofu, Pig Ears and a delicious blend of Home-made Soy Sauce with Celery and Tomato is hands down the best Tokwa’t Baboy I’ve ever tried.

A vintage style restaurant serving Filipino food with Claude Tayag’s twist. Specialties include talangka rice, Kare Kare, Duck Dishes and Hito Pork Belly Adobo. The Crispy Bagnetta, a hefty serving of deep-fried pork rolled up like donuts, looks really good, but was a bit on the salty side.

We really liked the Trianggulos (Fried samosa with spinach, tinapa, kesong Puti and pili nuts served with Tomato Sofrito Dip) and Crispy Aromatic Duck (served with Chinese pancakes, mango salsa and hoisin sauce). They also sell bottled products here by Claude Tayag including buro (fermented rice sauce).

A cafe with pretty interiors that serves Kapampangan cuisine with a twist inspired by Chef Sau del Rosario’s travels. I wasn’t able to try their main dishes but the place is a good option for desserts and hot chocolate. We tried the Tamales Pampanguena, a modern take on a dish made traditionally wrapped in banana leaves and steamed. This version uses coconut cream, ground rice flour, annatto, quail egg, and peanuts.

Since it was raining during our food trip, the Tsokolate Batirol (which came in Green Tea. Chocnut, Polvoron and Sili Flavors) were great. They also have interesting desserts like Brazo de Calamansi, Salted Egg Bibingka Cheesecake and Lechemon (Leche Flan + Mamon).

Cafe Fleur also has a small concept eatery called Leh-Leh, which serves Thai Comfort Food and Babo, a more elegant dining area specializing in Avant-Garde Kapampangan cuisine on the top floor of the same house.

Historic Camalig Restaurant: Home of Armando’s Pizza

  • Address: 292 Sto. Rosario Street, Angeles City, Pampanga
  • Type of cuisine: Pizzeria
  • Price range: P150-P400/pizza (depending on size)

Situated in a  two-story Spanish-colonial bahay-na-bato  structure, t he Historic Camalig Restaurant specializes in hand-rolled crispy crust pizzas with native toppings, the original recipe of which was pioneered back in 1973. Try the  Doy’s Kapampangan (longganisa, salted duck egg (ebun buru), onion and pickle relish or  Armando’s Pizzas: Marco’s 3-Way (sun-dried tomatoes &  kesong puti  in three Filipiniana flavors: tuyo ,  tinapa  & classic chicken  adobo ). They also serve Baked spaghetti smothered with rich red and white sauces, deep-fried chicken wings and Kamias Shake.

Another place where you can try exotic dishes and authentic Kapampangan dishes is Apag Marangle, a popular dining destination among locals and nearby residents of Bacolor, Pampanga. Bestsellers at he restaurant which gets its name from the Kapampangan term for “food laid on the fields” include Nasing Marangle (fried rice with bagoong & pork), bringhe (local version of palla), betute (deep-fried frog) and ginisang camaru (sauteed mole crickets).

Sanikulas Cookies

Chef Lillian Borromeo or “Atching Lillian” is known for her Kapampangan dishes and pastries like Sanikulas (San Nicolas cookies), made of arrowroot (oraro) flour, sugar, and eggs and formed with traditional wooden molds. She runs “Kusina ni Atching Lillian,” a restaurant in Parian, Mexico, Pampanga where she offers breakfast and lunch buffet for her guests and baking demos.

Chicharon or pork cracklings are another favorite pulutan among Pinoys. You can easily buy this all around the metro, but the first class Chicharon with Laman (more solid and tasty than the puffy airy variants) comes from Guagua, Pampanga. Deadly, but yummy.

The First Craft Beer Microbrewery in Angeles City, named after the destructive Mt. NOTE: I know that there are lots more popular places in Pampanga including Everybody’s Cafe, Angeles Fried Chicken, 19 Copung Copung Grill, Tollhouse and more that I haven’t tried yet. There’s only so much you can eat in a weekend and I look forward to going back for the next food trip. What other restaurants in Pampanga can you recommend?

There are some restos that are near each other but others are far. I suggest you check each of the resto’s locations on Googlemaps and decide which you can visit. It’s also better if you have private transportation.

The Pampanga day tour for foodies

There was zero attention to healthy cooking—just the way i like it..

Every time I get a request for a day tour for foodies, no miss, it’ll have to be in Pampanga. For a foodie like me and those asking for the gastronomic food trip, the distance of the drive is acceptable. Plus, they really have name forgetting and food that’ll make one faint.

Pampanga has so much good food that I’m sure each restaurant is known for a particular if not a few dishes. Poch Jarolan of Everybody’s Cafe is known for his kare kare, tidtad, morcon, longanisa, and more. Mila’s is known for her sisig, pako salad, chicharon bulaklak, tocino barbecue, and tokwa’t baboy. Susie’s Cuisine is known for her tibok-tibok, sapin-sapin, and chichiria.

How has Kapampangan food become so good and popular? I learned that in early Spanish times, the ships the conquistadors rode were repaired in the docks of Pampanga. It is for this reason the cuisine in Pampanga is heavily influenced by Spain. Spanish influence brought about dishes like morcon, afritada, caldereta, leche flan, and bringhe. Sisig, on the other hand, is an Angeles original without a trace of Spanish influence.

Every time I visit Pampanga—Angeles to be more specific—I make it a point to visit a restaurant. Over two months ago, I got an invite for a birthday lunch for the siblings Vic Batungbacal and Maricris Encarnacion. The joint party was marked on my calendar because these siblings, who love to eat and are well travelled, always enjoy serving good food. “Patay na naman diet ko.” 

Two weeks ago, that lunch happened. No dinner, no breakfast, my buddies Gina and Joy drove to Angeles to pig out at the siblings’ lunch party. We had no idea what kind of food to expect but I was certain it was going to be memorable.

I was so hungry when I walked in I zeroed in on what looked like kropek on a table. To my surprise, it wasn’t kropek but caprice, the blush-pink blooms of amaryllis. I must have been hallucinating.

After mass, we sat next to the buffet table and I started investigating what was to be served.

“Kare-kare ba ‘to?” I asked.

“Hindi po,” said the server.

“Caldereta? Lengua?

“Hindi po (No, sir),”

“Roast beef?

“Hindi po. Isda (it’s fish).”

After that, I just shut up and waited.

Before anything landed on the table, I had already grabbed two pieces of fried lumpiang gulay. Yummy! There was roast chicken, lechon, caldereta, paco salad with shrimp and chicharon, pancit bihon loaded with toppings, a soupy orange fish dish, and a buffet of desserts. The spread was beyond description. Each item was carefully screened. Some of the dishes were swimming in their own fat and juices. There was zero attention to healthy cooking—just the way I like it. I was doing quite well not eating rice and all then Vic brought out some toasted crusty bread topped with aged gouda and some other cheese he stashed for a day like this, melted the combination in a toaster, and put the result in front of us. I should have just eaten rice. It was so so good I ate so much. I wanted to kiss Vic.

Dessert was an outstanding pandan sansrival and a variety of sweets. Oh my. What a memorable lunch spread! The food was rich and extremely fattening. The best ingredients were put in each dish. I can’t wait for next year. 

Pampanga indeed has great food and the Kapampangans do know how to throw an outstanding spread. I went home promising myself I’d diet. Tip: Plan a diet when you’re full and you’re sure to think you’ll succeed.

Auction House Food and Drink Hall opens: What to know

ASHEVILLE - Fletcher's highly anticipated food oasis and watering hole is now open.

On April 25, Auction House Food & Drink Hall, by KO Restaurant Group, opened at 29 Fanning Bridge Road in Fletcher.

KO Restaurant Group’s Sarah and Paul Klaassen and Michael Olbrantz designed Auction House as a two-story eatery and drinkery with five original counter service concepts Auction House Wine Bar (or A.H. Wine Bar), KO Burger, Fish Camp 25, Mercado Cantina and Blue Collar Bourbon.

“You get bored doing the same thing every day but if you have multiple things going on, there’s always some fun you can have,” Sarah Klaassen told Citizen Times . “Today we’re going to have fun with these tacos, tomorrow we’re going to focus on the smash burgers.”

On the ground level, order casual bites like KO Burger’s retro-style griddle burgers, all-beef hotdogs and battered fries, and Fish Camp 25’s fish and chips, hushpuppies and po-boys.

Unwind at Blue Collar Bourbon, a full-service bar pouring cocktails, draft beer and a wide selection of bourbons including premium labels.

On the second floor, diners will find Yucatan-inspired fare from tacos to tortas and a full-service bar specializing in high-end tequila and mezcal.

Auction House Wine Bar’s menu features an extensive list of wines, frosé ― frozen rosé ― and mimosas.

Auction House, named after the specialty auction house that formerly inhabited the historic building, constructed in 1948, offers 6,600 square feet of interior space with ADA-compliant ramps to both level and on-site parking.

A beer garden extends the guest experience with games, ample seating and an outdoor stage for concerts, movie screenings and more.

The first live music performance is scheduled for 6-9 p.m. May 2. Music is planned to occur Thursday-Sunday, weekly.

The self-proclaimed TikTok critic is looking to visit local restaurants that could use his magic touch — though he didn’t realize the city was hosting the NFL Draft

Guess who’s back in Detroit? Keith Lee, one of the most viral names in online food reviewing and a native son of the Motor City, raised in the Joy Road and Evergreen area on the westside, has arrived in the city and is ready to eat. The TikTok personality returned with his family for a visit this week and is asking for recommendations of local restaurants that want to be reviewed.

It’s a busy time to go check out restaurants in Detroit, as Lee pointed out in a post published Thursday, April 25. There’s the NFL Draft taking place downtown (which is already breaking attendance records with a whopping 275,000 visitors who descended upon the central business district on Day One of the Draft). Helping to kick off the football festivities, another Detroit native, Big Sean, delighted fans Thursday with a quick performance on the Draft stage.

In light of the chaos overtaking much of the city’s hospitality industry during the Draft, Lee says he’s not treating this trip as a “full food tour,” but is rather taking this time to revisit some of his beloved childhood favorites, like coneys, corned beef egg rolls, and Better Made chips.

Lee wasted no time with the taste-testing, first stopping by Hart Plaza — the NFL Draft Experience area site, where dozens of local restaurants, food trucks, and cafes are set up for the festivities. He appreciated the fact that many of the food vendors were Black-owned. He offered a sneak peek of what he’s getting into food-wise during this current visit by checking out a tray of wings from Good Vibes Lounge . He reported that the East English Village establishment had just gotten hit (presumably by a car) and that the ownership was feeling “defeated.”

“God willingly, she got a space here at the NFL Draft,” Lee says, before he displays a screenshot of Good Vibe Lounge’s Instagram account to let viewers know how to find the neighborhood bar and restaurant.

“God don’t make no mistakes,” added Lee, who is known for his spiritual take on his so-called “ Keith Lee effect .” Eater has reached out to Lee via email about his visit and will report any updates when they become available.

Lee has become a household fixture among the food-obsessed for his food tours in cities across the United States, including San Francisco , New Orleans , Dallas , Chicago , and Atlanta — a destination that went viral for its many dramatic instances of bad experiences. A native Detroiter, who now lives in Las Vegas, Lee has more than 16 million followers and makes it a point to visit smaller mom-and-pop establishments — often that are BIPOC-owned — that may have impressive menus, but that might be lacking in online presence. His visits are unannounced and are primarily takeout. He often sends in a family member to fetch the food when it’s ready so as not to attract attention. He rates each place 1 to 10 for customer service and the quality of the food, and makes sure to note his personal preferences whenever he scores. When he first started, he focused on Vegas-area restaurants and did his reviews while sitting in a tiny children’s-sized Paw Patrol chair, and now he most often films his reviews in his car.

The “Keith Lee effect” that his reviews have on small businesses is profound. Janel Prator, owner of the Puddery , a Houston-area dessert business featuring Prator’s creamy banana pudding, told Eater in a December 2023 report that her shop was struggling to take off before a review Lee did his did of her place in November. His influence was immediate business took off, with customers lined up from the front door eager to try her desserts.

The last time Lee paid a visit to his hometown was in September when he reviewed several beloved local food businesses, including the Spot food truck, which, according to Lee’s review, had contacted him on social media to invite him to check out its food. He ordered a steak crunchwrap supreme with Hot Cheetos (on the side) and gave the truck a rave review for its service, house-made “Turbo” sauce, and commented that the meat was seasoned to perfection. Similar to Prator’s experience, the Spot also reported traffic snaked around its truck in the days after Lee’s review went live.

More farmers markets: When do area farmers markets open? Here's a guide to where and when to go

The result of reader votes were announced today.

"Nearly 100 vendors from the Columbus area converge for the year-round Worthington Farmers Market that adapts to the seasons," USA TODAY wrote.

"In summer, May through October, farmers and producers of high-quality food and plants sell al fresco in the Old Worthington Historic District. The rest of the year, the market goes indoors at The Shops at Worthington Place."

The last indoor market takes place Saturday before it moves outdoors for summer.

Organizers say the Worthington Farmers Market, which began in 1987, should have its highest number of vendors ever this summer.

Columbus Food Adventures another favorite

Another favorite of Columbus foodies also was voted as the nation's best by USA TODAY readers. Columbus Food Adventures , which leads geography and cuisine-based food tours in Columbus and its suburbs, topped a list of nominees that included tours in Las Vegas, Los Angeles, Seattle, New Orleans and Chicago.

Here's how Columbus Food Adventures was described by USA TODAY: "From neighborhood walking tours to by-van excursions and private tours, Columbus Food Adventures offers a full menu of ways to meet the area's rich culinary scene. Whether you're a meat-lover, brew-hound, taco fiend or gastronomic globe-trotter, there's a tour to fit your appetite."

Walking tours include the Short North, German Village, Grandview Avenue, Dublin and Old Worthington, while van tours hit local taco trucks or a variety of international restaurants.

Results of a third USA TODAY reader vote also were announced. Budd Dairy Food Hall , the Italian-Village collection of bars and restaurants in an old milk-bottling plant, finished at No. 3 in voting for the nation's best food hall.

Mother Road Market in Tulsa, Oklahoma, finished at the top in national voting, while the Garage Food Hall in Indianapolis finished second.

Budd Dairy was ranked sixth in a list of the best U.S. food halls posted by the global travel site Big 7 Travel .

Take a Tour of the Chic Paris Apartment with Views of the Eiffel Tower on Food Network’s Next Baking Master: Paris

In the new Food Network series, premiering May 6, U.S. bakers travel to France to compete for the title of Next Baking Master

American cooks are saying bonjour to France in Food Network’s latest competition series, Next Baking Master: Paris .

Hosts Stephanie Boswell and Ludo Lefebvre are bringing 10 bakers to the City of Lights to learn, taste and bake French pastries. PEOPLE has an exclusive look at the first episode, which premieres on May 6. In it, the bakers tour the stunning Parisian apartment they will stay in after full days of croissants and macaroons.

The 10 competitors eagerly hop out of their cars to see the apartment. After pushing through grand entryway doors, they trudge up a beautiful, winding staircase — giving each other words of encouragement to make it upstairs with their large luggage.

“I’m sweating,” one contestant says. Another chef replies, “I think it’ll all be worth it.”

As soon as they open the doors, they learn it was in fact, worth it. The group awes at the sunlight-filled apartment with colorful artwork on the walls, wooden pillars in the living rooms and marble fireplaces.

“We are chic here,” says Paige, a chef from Brooklyn.

The views may be even more stunning than the interior. Everyone takes turns admiring their unobstructed view of the Eiffel Tower, which can be seen from their living room windows and from the balconies.

The contestants take a lackadaisical approach to choosing their specific rooms because they are all equally beautiful. Two chefs look out of the window to see a grandiose French street.

“Are you kidding me? I’m literally red,” says one chef, blushing from excitement.

For some contestants, being in France and competing on Next Baking Master: Paris is a massive milestone.

“This is kind of a dream for me, you know, being in Paris,” says Robert, a baker from Philadelphia. “You know, I grew up in a rough neighborhood in Philly and poor. It's so easy to be inspired here.”

To celebrate their abode and the start of the competition, the cast pops a bottle of champagne and clink their drinks for a “cheers” to Next Baking Master.

“May the sweetest one win,” one chef adds.

Every week, the 10 bakers will visit iconic pastry shops, like Ladurée, and be mentored by famous French chefs. Weekly baking challenges will send the lowest scoring chef back to America until a winner is crowned and given a full suite of kitchen appliances and baking equipment valued at $25,000.

Next Baking Master: Paris premieres May 6 at 9 p.m. ET on Food Network.

Anne Kyle: 'People want to know what life actually is like here’

Specializing in gastronomy-themed tours, Arigato Travel, founded and directed by Anne Kyle, was once a one-woman operation. Today, it counts more than 100 employees.

Anne Kyle , 46, is the founder and CEO of Arigato Travel, which specializes in gastronomy-themed tours and customized travel curation focusing on cultural experiences around Japan. Growing from a one-woman operation in 2016 to a team that now numbers more than 100, Arigato Travel has been recognized by CNN Travel as one of Japan’s “most authentic experience” companies.

2. Did you begin leading food tours right away? No, I started out teaching English and then transitioned into selling beauty products to Filipinos living in Japan. I had always been entrepreneurial, even as a child, so launching a business was a natural progression for me. I also loved traveling and being exposed to new people, cultures and foods, so after I joined a market tour and cooking class while on a trip to France, I had the idea to merge all of these interests by starting my own cooking school for tourists in Azabu-Juban. These were the roots of Arigato Travel.

3. Did you launch the business on your own? I hired Japanese chefs to teach the classes, while I began leading food tours in Tokyo a few months later. My then-boyfriend (now husband) was also on board. He demanded to see a business plan, so I told him to find the money and I would take care of the rest! He’s the operations guy, while I handle the ideas. He ended up getting a loan from his boss; I knew the timing was right, and indeed everything worked out to plan.

4. And how did you branch out from Tokyo to other cities? Our dream was to expand to different regions, but after about six months we realized that it would be impossible to scale the company by opening kitchens in other cities — so we decided to shift business models by focusing exclusively on food tours rather than cooking lessons. We first branched out to Osaka, where we recruited tour guides without ourselves even yet being familiar with the local food scene. It was a risky thing to do, but it worked out because there were people who believed in us and our vision. Initially, we wanted to offer food tours in all 47 prefectures, but we ended up deciding to focus on a select few locations: Tokyo, Kyoto, Osaka, Hiroshima, Nagoya and around Mount Fuji.

5. What are some of your top Tokyo neighborhoods for food-related experiences? I love Azabu-Juban, where we first started the business. People think of it as being a trendy expat neighborhood, but in fact it is very historical. Many samurai once lived there, and it is a great place to find traditional Japanese foods at shops that have been in the neighborhood for multiple generations; plus more modern places like a fabulous cheese store. I also love Shinbashi, you can have super authentic experiences there drinking with local office workers.

6. What are some of your favorite food regions outside the capital? I love the tiny but flavorful shirasu (whitebait) and sakura ebi (pink shrimp) you can get in Shizuoka; they’re tiny but so flavorful. I also love the hōtō nabe from Yamanashi, and anything from Hokkaido, such as the thick stews.

7. Do you plan to expand the locations and themes of your tours? Yes, we would like to begin offering tours in locations including Yamagata and Sendai. We are particularly interested in focusing on places like family-run sake breweries and small-scale artisans, in addition to just food. Because the tourist infrastructure in many places is not ready yet, though, running these tours requires a balancing act between wanting to offer authentic experiences in places with interesting stories to tell; while also considering how to provide appropriate services for foreign visitors.

8. What types of stories would you be interested in featuring? Our network includes places like tea farmers and indigo dyers in Shizuoka with more than 200 years of history, for example. Many of these types of artisans want to preserve their craft but often don’t have anyone to carry on the family lineage, so the traditions are dying. In the Philippines, there is often a rush to expand and monetize aspects of traditional culture rather than protecting them. So my eyes really opened after meeting these types of artisans here in Japan.

9. You have an impressively large team. How do you find your tour guides and other associates? It’s a combination of advertising and referrals, but mostly it’s about attracting people with like-minded energy. I actually think that one aspect of our special sauce lies in having so many women, who represent such an untapped resource. I’ve always believed in supporting women, and I try to hire single mothers whenever I can. I’d say that women represent about 80% of our company.

10. Arigato Travel has achieved immense success. Did you have a supportive community along the way? Yes, we’ve received so much support from people who believed in us. At the same time, though, even as I was encountering many passionate people doing meaningful work in the travel and tourism community, there didn’t seem to be an easy mechanism for networking — so I decided to create one myself. I launched a Facebook group during the pandemic, and it’s been a wonderful way for people to support each other and share ideas.

When it comes to living in Japan, Anne Kyle says she appreciates how safe Japan is and how stable the education and health care systems are.

11. So your whole ethos seems to be about supporting people, is that right? Absolutely. I wanted to take some of the bumps I’ve encountered along the way, and use them to help others who might be interested in starting their own tourism-related business. And because of my own economically tough upbringing, it’s personally meaningful for me to use the means I’ve achieved in order to give back to others.

12. What were some of those bumps? As a foreign woman giving Japan-related tours, I often had to prove my authenticity. Another issue was that we operated the business out of our home, and although this is now normal, it was pretty much unheard of prior to the pandemic. Some travel agencies, restaurants and hotels didn’t take the business seriously; so we ended up going around them and working with foreign companies connected to Japan, instead. I’d say that this foreign mindset, combined with local experience, ended up contributing to the company’s success but it was not always easy.

13. What advice would you offer? I think that sticking to timelines is key to success. It’s the difference between an idea turning into reality, or not. In my own case, I set a goal of moving to Japan by age 19 and opening my first business here by age 30, and staying closely focused on that helped me achieve those goals. Similarly, I aimed to launch my food tours within three months, expand to Kansai in six months, and assemble a team in a year; and I stuck to that plan. I’d also tell people to focus in on potential opportunities. Prior to starting the business, I would often help lost tourists find their way before eventually conceptualizing the idea of turning this action into a monetizable business model.

14. Besides Japanese cuisine, what other types of foods are your favorite? I love the aromas and flavors of Thai food, and the healthiness of Mediterranean cuisines like Greek and Italian. And I am equally drawn toward Michelin-starred restaurants and hole-in-the-wall joints. Food does not have to be expensive in order to be good quality. At home, I love having things like pasta and nabe, which are hearty meals that you can personalize based on the seasons, and whatever ingredients you’ve got on hand.

15. You have two children. How do you juggle family life with running a successful business? I’d say trying to maintain a strict sleep schedule is key. I normally wake up by 5 a.m. each day, since I find that having an early start gives me good momentum. My mind is like clear water when I wake up around that time.

16. Are your kids foodies? My son? Definitely. He is very tuned in to things like the freshness of foods such as strawberries, tomatoes and salmon, and I love exposing him to different food traditions. With my daughter, I am not so sure yet. She definitely has a sweet tooth, that is for sure.

17. Besides the great eats, what else do you love about living and working in Tokyo? Of course, I love the peace of mind from the safety here, and the stable systems of education and health care. When you’re raising children, these things are priceless. Tokyo is also an optimal place to run a business, since everything here runs on efficiency. I cannot imagine doing this work in a place with unstable systems of public transportation, for example.

18. Where’s another place (anywhere in the world) you’d love to try living? I think I’d love to live along the Amalfi Coast in Italy, or maybe in Croatia. The history and culture in those regions is so rich. Growing up in poverty myself, I used to watch movies from other regions around the world to get inspiration, so when I was actually able to visit these places as an adult, the feeling was exhilarating.

19. What is in the works for Arigato Travel’s future? In addition to expanding from exclusively gastronomical tours into cultural ones, and growing our regional tour area, we are also working on building a travel app to benefit global tour operators. This will involve identifying problems and needs, and then finding appropriate solutions. We are also obtaining a license to become a full-scale travel company, which will require expanding our team and operations. In doing so, we will continue to focus on growing our company organically, while cultivating relationships of trust with the people in our networks.

20. What would you say is the most fulfilling aspect of running your business? I think that food is actually a gateway into deeper aspects of a culture. People love the cuisine in Japan, but beyond this what they really want is to know more about what life is actually like here. I feel very honored to be able to share this, and I have also seen our tours actually change peoples’ lives. An Italian woman who booked several of our tours in different cities ended up moving here, and later marrying a Japanese man. And in another case, a 14-year-old boy who went on some of our tours later came back to study at Temple University. Travel is incredibly transformative, and helps fulfill peoples’ dreams — my own included. So I don’t at all take for granted the opportunity to be a part of someone else’s journey.
