Luxury means different things to different people. It could be an island hideaway, miles from your nearest neighbor, where you can relax in perfect solitude. A glamourous beach resort, crafted by the finest designers, where walks along the sand are only paused to indulge in fine food. Or perhaps, an exceptionally curated resort from a renowned brand that provides world-class attentive service and amenities.

Coppola visited Belize in the early 1980s and fell in love with the country, before purchasing the abandoned Blancaneaux Lodge and transforming it into a family retreat.
In 1993, Coppola opened this 20-room magical hideaway to the public and it remains an exemplar of luxury. Set deep within the jungle-covered mountains of western Belize, Coppola was initially drawn to this property by its privacy. It’s a feature that still rings true to this day.
Guests can choose from a wide variety of accommodation ranging from smaller cabañas to Coppola’s villa and the enchanting cottage.
Blancaneaux Lodge is the supreme sojourn for those looking to escape the real world, disappear for a while in the dense Belizean jungle, and sample life at a leisurely pace. Coppola Part II: Turtle Inn
As the director of one of the most successful sequels in history, it’s no surprise that Francis Ford Coppola’s second hotel in Belize is also a triumph. In 2001, Francis and his wife Eleanor Coppola purchased Turtle Inn. It’s clear they were looking for the one thing that Blancaneaux Lodge lacked: access to a beach.
This property is in the south of Belize and is exactly what the mind conjures when one thinks of a Caribbean beach paradise. With the sea just yards away from the thatched cottages, you’re sure to wake up to the peaceful breaking of the waves.

Cayo Espanto: A private island escape
We have looked at a luxury hotel deep in the jungle of western Belize and a beach resort in the south of the nation. But what about somewhere off the mainland?

6 Best Luxury Resorts in Belize — Which One Should You Book?
In Belize , there’s plenty to do. From ancient ruins and jungle trekking to a homegrown culinary scene and amazing islands and beaches, Belize is a one-stop destination, and one of my favorites. Belize also offers amazing accommodations. I checked into 6 of the best luxury resorts in Belize, and this is how they stood out.

On my last visit, I made a beeline to Ambergris Cay , an old-school, barefoot-minded and popular beach paradise. Some hotels are decades old, locals and visitors get around by golf carts and there’s no corporation in sight. It’s laid-back and carefree, with a bohemian edge.
I stayed at Victoria House, a 42-room, British-colonial-designed boutique that has a variety of room types (from plantation rooms to infinity suites). Here, I was reminded of how luxury can be so simple. Victoria House has a prime location considering it’s the launching point for many water excursions thanks to the pier out front.
Victoria House is just minutes away by boat to the Hol Chan Marine Reserve that’s chockfull of sting rays, sea turtles and marine life. Shark Ray Alley , the second stop on the excursion, is where I got up-and-personal with friendly nurse sharks and manta rays. You can opt to stay in the boat but I had to make good use of my underwater camera. Hardcore divers will easily make the trip to the famous Blue Hole , a large sinkhole that drops 400 feet in the ocean.
Belize also only receives about half a million tourists a year. You have plenty of room away from the crowds.

If I have to award a resort for “Place So Good I Cried When Leaving” it’s Francis Ford Coppola’s Turtle Inn in 16-mile long Placencia beach town.
Placencia is one of those places where time seems to have paused. It’s a fisherman’s community with no high rises, no huge resorts and it’s not completely taken over by tourism. In fact, most of the visitors that flock here are local Belizeans, if that doesn’t amp the allure, and Turtle Inn is the stomping ground of choice for the luxury seekers, and it’s one of the best luxury resorts in Belize.
Turtle Inn has 25 well appointed, thatch-roof cottages and villas right on the beach. All have screen porches, hand-carved doors, outdoor showers and, my favorite, a bottomless jar of fresh chocolate chip cookies.

The resort has two pools and three restaurants: Mare restaurant with wood-burning oven for terrific pizzas, beachfront Gauguin Grill for fresh seafood and Auntie Luba’s Kitchen for local flavor. Owner Francis Ford Coppola was so enamored by the property, he bought it in 1999 and transformed it into the perfect getaway for affluent travelers and other celebrities. The entire resort was refurbished last year and the family makes regular jaunts. In fact, guests can take out Roman Coppola’s private, vintage Chris Craft boat, which JFK himself once rode.
Although I was perfectly fine never leaving the property, I took Turtle Inn’s private charter out to the Belize Barrier Reef , specifically Silk Caye , a marine reserve and UNESCO World Heritage Site that’s completely removed from civilization. Seriously. It’s a remote island in the middle of nowhere. Life was good. I snorkeled the shallow waters (seeing not one but two sharks!), eagle rays and at nearby Turtle Reef, swam with sea turtles as big as me.

Over in the Cayo District, I found more Coppola love at Blancaneaux Lodge , a 21-acre resort within the Mountain Pine Ridge Forest Reserve and set deep within the lushy, dense jungle alongside steep ravines, crashing waterfalls and a fast-flowing river. It’s a quick puddle jump from Belize International Airport (which gives you great aerial views of the land), and well worth the jaunt.
The 20-room, eco-resort is a favorite for honeymooners and families thanks to rustic-chic cabanas and villas set far apart from each other, an outdoor spa with a focus on Thai treatments (big statement here, but one of the best Thai massages I’ve received outside of Thailand) and thermal pool.
Blancaneaux Lodge used to be home to Coppola’s All Story magazine’s writer’s retreat, which I vowed I would attend one day back when I was in high school. While the retreat is no longer, I can see why writers did flock here. It’s completely secluded with tons of nature to inspire. Oh, and can we talk about their 3-acre organic garden? Expect some just-plucked, fresh ingredients in your meals (from Italian fare to local dishes).

Blancaneaux is a huge supporter of the Jaguar project, a conservation and research initiative to protect and monitor the (sadly diminishing) jaguar population. They even organize nightly hikes to seek out jaguars. Will you see one? Maybe unlikely but Belize is the hot spot for jaguars, as there are more here than anywhere else in the world. It only made sense tagging along with Conservation Officer Roni Martinez to trek the jungle by four-wheel drive in order to better understand the life of a jaguar.
Like most resorts, activities are arranged in-house by their guides. I woke up early to check out the Rio Frio Cave . It’s basically one large limestone cave, which is super important and sacred to the Mayans as it was considered a portal to the underworld. Mayan or not, it’s a stunning natural attraction.
I also made my way to Caracol, Belize’s most popular attraction. It’s a major Maya archaeological site in the Cayo District , covering approximately 30 square miles and one of the best-kept ruins to date. Caracol is one of the best-preserved astronomical observatories that points to the equinox and solstice. At the top of the largest pyramid at 140 feet, I can see Guatemala. The view is insanely breathtaking, and it inspired me to write a travel guide to Belize so others can experience the cheap, friendly and unforgettable attractions I came upon.

Not too far away in San Ignacio is Ka’ana Belize Resort , an intimate hideaway tucked within lush jungle foliage. There’s 10 casitas and 5 Balam rooms (with two swank villas that opened March last year), a saltwater pool, wine cellar and art and furnishings commissioned from local artisans. The stargazing here is unreal thanks to the clarity of the night sky and little obstruction. In fact, it’s here where I saw a UFO , my first sighting ever (perplexed locals saw the same thing and Belize is a hot spot for sightings).
While the UFO sighting was incredibly unique, it wasn’t my favorite moment in Belize nor was it the highlight of my trip. From Ka’ana, I made the drive out to the ATM ( Actun Tunichil Muknal ) Caves .

Voted as one of the top ten caves by National Geographic , ATM Caves is a wild, Indiana Jones-esque adventure. I crossed three rivers in the Tapir Mountain Nature Reserve, then navigated an underwater cave system with headlamp (the water depth gets up to 12 feet), squeezed through narrow passageways, climbed over rocks and, two hours later, arrived at an ancient sacrificial chamber full of thousand-year-old skeletal remains. The most famous is the crystal maiden, a victim of sacrifice from the Late Classic Period. It was oh-so-Mayan, oh-so-thrilling and oh-so-Belize.

The literal translation of Cayo Espanto—the private island resort off Ambergris Caye in Belize—is “ghost island.” Quite a paradox, considering the only thing scary is that you are completely alone in a lost paradise that you won’t remember what civilization means.
There are only six villas carefully perched along the banks (as well as an overwater bungalow). As soon as you arrive by boat, you’re appointed your own “houseman” who you only see when he sets up your gourmet meals on your deck or when his presence is commanded from a 24-hour walkie-talkie.

A New Luxury Hotel Is Opening in Belize With a Private Island and a Secret Beach on Ambergris Caye
The property will be spread between a private island and a secret beach on Ambergris Caye.
Six Senses — one of the best hotel brands in the world , according to Travel + Leisure's 2021 World's Best Awards — just announced that it's unveiling a new property in Belize . The latest resort in the company's five-star portfolio will take up residence across two different (and equally idyllic) areas of the Central American country when it opens in 2025.
Part of the resort will be on the awe-inspiring Ambergris Caye. Perhaps the most coveted Belizean island, Ambergris Caye is known for its exquisite white-sand beaches and pristine water perfect for snorkeling . On Ambergris Caye, the resort will feature 24 two- to seven-bedroom residences lining a 700-foot private beach, as well as an organic garden and a center for diving and marine exploration. The residences will be sold to travelers seeking a dream island abode — because who doesn't want a vacation home with luxury hotel amenities?
The resort will extend beyond Ambergris Caye, too — five minutes away by speedboat, Six Senses Belize will continue to unfold on a 10-acre private island with overwater villas and an over-the-top Wellness Village. The 45 villas and Wellness Village are less than two miles from the secret beach on Ambergris Caye. Holistic well-being is a central part of Six Senses' ethos as a brand, so it more than stands to reason that the Wellness Village will be equipped with an anti-aging center, alchemy bar, alfresco yoga facility, and treatments including Mayan-inspired energy healing practices.
"Throughout, the emphasis has been placed on sensitive integration of landscaping to connect guests with nature and allow for greater privacy and coveted 'desert island' appeal," said Six Senses chief executive officer Neil Jacobs in a statement released to T+L. "We've drawn inspiration from local craft and Belizean life, capturing the spirit and history of Mayan architecture and local heritage. Everything has been done to embody a new generation of travelers eager to make memories, while preserving the island for future generations."
As the Six Senses team continues to develop the resort, sustainability and high-concept design remain top of mind. It's all a collaboration between three architecture and design firms — Studio Caban serves as the architect on the project, while Maed Collective does the interiors and Maat Handasa works on the landscape design. They're building primarily with renewable wood and incorporating solar for optimal energy efficiency. And in the name of preserving the island's surroundings and natural resources, the forthcoming hotel plans to foster plant growth that will serve as a habitat for the stunning birds of Belize.

This Luxury Eco-Lodge Provides an Authentic Sense of Place—and Taste—of Southern Belize
If you were only allowed to peruse the bookshelves inside the main gathering room of the clubhouse at Copal Tree Lodge , you might have difficulty ascertaining the lodge’s primary purpose. On those shelves, titles such as Lords of the Fly and The Fisherman’s Guide to Life share space with The Fat Duck Cookbook and The Art of Simple Food. Wedged in between, you’ll find books on mixology— Speakeasy and The Bar Book , specifically—while acurrent volume of Gray’s Sporting Journal abuts two issues of Condé Nast Traveler .
Is the southern Belizean property a fishing camp? A gourmand’s retreat? A luxuriously appointed eco-lodge? While the library suggests it could be any of those things, Copal Tree Lodge is, in fact, all of them. What once began as an understated fishing lodge—a property that attracted adventurous and enthusiastic sport fishermen (and still does, albeit to a lesser extent given the lodge’s evolution in recent years)—Copal Tree Lodge is a boutique resort perched on top of a bluff and nestled into the heart of a 16,000-acre estate that today includes an organic farm and a sustainable rum distillery.
The resort offers guests easy access to a lineup of seafood shanties and bars set only a few hundred yards from the Caribbean Sea in the town of Punta Gorda, less than 20 minutes to the south. And while a visit into town offers a glimpse into the local culture, which has its merits, guests likely won’t feel compelled to venture away from the estate for long—nor should they. From its dock positioned along the Rio Grande River, the lodge runs snorkeling, river fishing, and sunset cruises; while serious fishermen who are yearning to cast flies for bonefish, tarpon, and permit can set sail from the nearby marina in town.
“Fly fishing is a serious sport,” says Waluco Maheia, the lodge’s assistant manager. “River fishing can be more relaxed.”
Of course, notable guest experiences don’t require ventures out onto the water. Those looking for a day (or multiple days) of leisure, will be drawn to the lodge’s Jungle Spa, while Copal Tree’s small, teardrop-shaped pool provides an ideal oasis for quiet dips and peaceful lounging. Guests can also venture down the hill for guided tours of the organic farm, or they can participate in a bean-to-bar chocolate class. And for those who take immense pleasure in flavorful sips and bites, the lodge offers a farm-to-table, all-inclusive package ($150 add-on per night for each adult guest), which covers meals featuring ingredients grown on the 3,000-acre farm, as well as stirred and shaken cocktails highlighting a trio of estate-produced rums.
Annual production at the Copalli Rum distillery currently sits around 42,000 cases, and plenty of that rum makes its way up the hill to the lodge, which means guests will never ask the question that Johnny Depp famous quipped in the first Pirates of the Caribbean film: “Why is the rum gone?” Guests are also encouraged to schedule distillery tours, not to mention mixology classes and guided tastings.
During the latter, Maheia—who also serves as Copalli’s brand champion—prefers to learn from guests which flavors and aromas they identify. He doesn’t like to dictate what they’re likely to smell or taste. “We like to make this part of the tasting very interactive,” he explains. “And, of course, we’re going to name the dominant [flavor] profiles within the spirit, and I’d like to know what you all think is in there. What kind of flavors do you get?”
The white rum elicits responses that include prominent citrus notes alongside hints of banana and lychee. “So, what we’re getting is some tropical fruits,” Maheia acknowledges. “We’re definitely getting pineapple and banana and citrus; we’re getting hints of vanilla; and then you get some grassy notes in there, a bit of vegetation, something that compares to lemongrass.”
The barrel-rested expression, by contrast, introduces aromas of leather, burnt orange peel, and cola, which transition to baking spice flavors and tobacco on the palate. And Copalli’s Cacao rum delivers the roasted (almost bittersweet) aromas that are commonly associated with dark chocolate. When sipped, the rum offers up equally rich cocoa flavors with a pleasingly long, creamy finish.
All three spirits are the handiwork of Ed Tiedge, Copalli’s master distiller, who learned the distillation trade at a family-owned cognac house in eastern France several decades ago. The rums also serve as an homage to the hundreds of acres of organically cultivated sugar cane that grows almost in the distillery’s shadow (as well as at off-site locations nearby).
“Our role as the rum makers is to transition those flavors from the field to the bottle, to not mess up what the farm has created,” Tiedge says. “That’s really the secret—exceptional sugar can juice. You have to start off with a high-quality product in the field, and if we’re good stewards of that juice at the distillery, you’re going to get a pretty good-tasting rum at the end.”
That good-tasting rum is proudly on display as the foundational spirit for 15 cocktails served at the rum bar inside Copal Tree Lodge’s clubhouse. Some are shaken with allspice or sage leaves; others include freshly squeezed pineapple juice or hand-cut chunks of watermelon; and some are sweetened with a variety of infused syrups, including fresh ginger and vanilla. All, however, provide a distinctive taste of the estate, which is yet another example of the property’s success.
Ultimately, Copal Tree Lodge accomplishes the most important objective of any luxury resort, especially one set in such an exotic locale. It delivers a dynamic and authentic sense of place—one that, in an unusual twist, can also be poured directly into your glass.
