Using a crockpot or instant pot in your RV is a great way to make delicious meals with minimal effort and clean up.( I personally think it’s the best way) This type of kitchen appliance is ideal for RV trips as it allows you to cook without taking up too much counter space and without having to use a large number of pots and pans. Especially if you don’t have a full kitchen in your RV. You can use it to make anything from hearty stews to quick and easy one-pot meals that require minimal preparation and cooking time. With an Instant Pot, you can even make meals like rice, soup, oatmeal, and more with just the press of a button! And since both appliances can be used while camping, they are perfect for RV trips – no matter how long or short. This is such a good idea for not having to heat up your RV’s oven in the hot summer months. Don’t forget to also take advantage of the outdoor grill at your campsite where you can grill up some hamburgers and hot dogs and eat on the picnic table.

How do I plan a meal for an RV trip?

Planning a delicious meal for an RV trip doesn’t have to be complicated. Start with the pantry. Dry goods, canned foods, grains, beans, starches like bread, potatoes, and pasta all travel well and withstand a variety of temperatures. Instant Pot Shredded Chicken, boil in the bag meals like omelets and rotisserie chicken ranch wraps are easy to prepare in an RV kitchen. Make homemade pita “chips”, crackers or tortilla crisps with hummus for snacking. For quick snacks, pack nuts and fruits that don’t need to be refrigerated. What food should I bring on an RV trip?

When planning a trip in an RV, it’s important to think ahead and plan meals that are easy to prepare and won’t take up too much space. Homemade pita chips, crackers, or tortilla crisps with hummus are a great way to start off any meal, while Instant Pot Shredded Chicken is a delicious and nutritious main course. While we love to eat a good meal, we don’t want to spend a lot of time cooking, but spend more time enjoying our vacation. So we try to meal prep and plan easy delicious meals with simple simple ingredients. I also try to keep things like peanut butter, cans of black beans and tomato sauce that are sorta shelf stable and can be used for a lot of things.

My husband and I love to road trip. We recently got to experience what it was like to vacation in an RV after purchasing a pop up camper which we soon upgraded to a travel trailer. My favorite meal to cook while RVing is grilled cedar plank lemon pepper salmon, rice pilaf, and grilled asparagus and zucchini.

Our family loves when we make camp fire breakfast burritos, which you can just as easily do in the RV, scrambled eggs with bacon and heated refried beans on a flour tortilla shells, topped with diced tomatoes, shredded cheese and sour cream. Any thing else you might like to add. Yummy there so very good.

We like chorizo and eggs scrambled together on a tortilla. Also slices of ham cupped in muffin pan drop in an egg and some cheese and bake til egg is done

Anything in my instant pot…my go to way to cook …in a fraction of the time.. Forget to defrost meat for dinner?? Toss it in frozen…no take out for us.

We are full-timers… and the best invention EVER is the “Power Air Fryer Oven Plus! It is small , Fast, and easy to clean up! You can make anything from fried eggs to cakes and everything in between! It has a rotisserie,and makes the crispiest French fries ever! All the meats cook quickly and are moist and delicious! There are several racks ,so you are able to cook several items at once! And the best feature is no Fat, just good flavor!

Peanut butter and bread. That’s my menu and I’m sticking with it.

It can be really hard to figure out what to feed a family when you are traveling in an RV. Many people fall into a rut and sandwiches can get tiresome. 

After all, there is limited space and storage in the RV kitchen for ingredients! You have to consider that your kids may not want the same things they usually do. And of course, it’s important for everyone on board to eat camping meals with plenty of protein and fresh fruits & vegetables. 

There are several easy recipes that will work for this situation! In fact, we’ve collected some of our favorites here just for you. Let’s take a look at them now…

I am a huge fan of anything cooked on the grill.  You know why?  Because then I don’t have to cook!  I have never once cooked anything on the grill since getting married and I like it that way.  He is an awesome griller and really good at putting delicious marinades and sauces together. That’s what I call easy camper food!

Our Favorite Grilling Recipes:

My daughter is a picky eater but salmon is one of her favorites, so needless to say this is a family favorite.

Marinate some chicken, stick it in the fridge for a few hours, cut up some veggies and start grilling.  I’m in! Leftovers get turned into a yummy chicken salad.

My son wants to make these all the time, not only are they yummy but they are so much fun to make. We love to use either ground beef, or ground turkey to mix it up. Also throw in some ground sausage to spice things up. Great use for the cast iron skillet.

Pair anything with BBQ and pineapple and my daughter, the picky eater, will eat it.  This is no exception. Mix up the fruit as well for some exotic dishes. Many fruits are fantastic when browned on the grill!

Potatoes go great with anything, add some garlic and I’m all in. Try spicing things up by adding some onions and bell peppers!

Remove the husk and silk and get those corn on the grill.  Remove when done and add salt and pepper, and lots of butter.

Again you don’t need much for this awesome side dish, but it makes your RV dinners seem extraordinary.

This is another favorite of ours and it only has a few ingredients – perfect easy dinners for camping trips. FYI – I use minced garlic here, instead of fresh garlic.

I use my crockpot on a regular basis. If you have never cooked in an RV before or are nervous about trying it out, I suggest starting off with a crockpot. It is basically foolproof and easy to clean up afterwards!

Crockpots are great for cooking everything from chili to chicken noodle soup. You could even make awesome Bar B Que Ribs! It is so easy to toss your ingredients in, and set the timer. SO many delicious camping meals that take so little time. 

I love that you can be out exploring all day and then come back to your campsite/RV and still have a yummy meal ready to eat.

Delicious Make Ahead RV Meals

Another really good tip for cooking in an RV is to choose a few recipes and pre-prep the food. For example, you can chop your vegetables up ahead of time and even cook some meat so that all you have to do is heat everything up after you get to your destination.

This works especially well if you are going on a long trip. You can even cook extra and freeze it for later use. (You don’t want to end up eating the same meal a hundred times!!)

If you plan your camping meals ahead of time you can also make a shopping list. That way you don’t forget anything at the grocery store. If you choose easy recipes that are freezer friendly, this works well too too!

I freeze food quite often for quick use on travel day (you just never know when you will be delayed and end up getting in late.)

Best RV Recipes For The Dutch Oven

Dutch oven cooking is also a very popular way to cook while RVing. Basically, you can just place the pot directly on your campfire and cook from there. Cast iron is my favorite outdoor cooking material! 

It’s great because then you don’t have to set up an additional surface like an outdoor stove or campfire grill . Most Dutch Oven recipes are “dump and run” which means you throw everything in and let it cook.

It is very simple and straightforward if you want quick and hassle free cooking, not to mention much more fun than cooking on the stove. Dutch Oven cooking tends to become more of an event around the fire that the whole family can enjoy.

The best part of any rving or camping trip is the desserts! It may seem strange to bake a dessert while on vacation, but really it is very easy and a wonderful way to help everyone feel at home.

RV Meal Planning

When we first started full-time in an RV, I was so overwhelmed at homeschooling the kids, working on our business and getting dinner on the table.  I was exhausted by the end of the day.  Quite frankly this was not what I imagined my life to be when we sold everything and went on the road !

I thought it would be all fun and laughter and relaxing times.  Guess what?  The kids still needed to be fed and I was not relaxed AT ALL.

The first thing I did to change this was to create a meal plan.  The difference between cooking in a house as opposed to an RV is HUGE.  We don’t have a walk-in pantry, or cupboards full of umpteen cooking utensils (thank goodness), or 40 different jars of seasonings. 

There is also limited space for kitchen gadgets and tools. So we had to cut the kitchen gadgets down to our  essential RV kitchen accessories . Cooking great meals for RVing requires a bit more planning and efficiency. 

I am telling you now that RV meal planning changed my life!  If the kids got up early, they knew to check the fridge to see what they could eat for breakfast.  If it was my day off, hubby knew what to cook for dinner.  I no longer had to wake up first thing in the morning and figure out what was for breakfast! 

I then created my own easy rv meals menu planner and shopping list to coincide with the meal plan. That way shopping becomes as easy as following the list. You can download both the meal planner and grocery list below.  

What Food Should I Pack For An RV Trip?

When it comes to thinking about healthy RV trip meals, you want to come up with things that are easy to make.  You don’t want to make dishes that take 60 minutes to put together or need 15 ingredients.  Who has time for that? Road trip camping meals are all about speed and efficiency. 

As a mom, I am looking for quick and easy road trip meals.  I have no interest being stuck inside all day cooking.  I want to be outside having fun, breathing that fresh air, and enjoying my kids.  I’m guessing you feel the same way!

When many people think about RVing they think of parking next to the lake for a weekend of ?shing or heading to the mountains for hiking, but RVing is also the perfect way to get out and explore North America’s rich history.

Absolutely true, Bela. We have stayed near so many wonderful historical places. They have been our focus for homeschooling as well during those times. Yorktown/ Jamestown, Pensacola, Washington DC, Hatteras, Silver City, Dauphin Island to name a few. Our history is absolutely everywhere!

Don’t get me wrong- I like cooking and I DEFINITELY like eating … but I am not good at creating a meal plan.

I also have a daughter who has gone from eating whatever we give her to being more and more particular about what she likes- and she’d rather not eat at all than eat something she doesn’t love. At home, it’s pretty easy to cook separate meals, but in the van, it becomes a whole different issue- and it makes the process of meal planning a lot harder.

Why plan meals on a road trip at all??

Oh, I hear you. In an ideal world, we’d just head off into the unknown and see what we find. One of the things we enjoy most about travelling is sampling local foods and dishes and enjoying discovering new things.

Both Mr WB and myself are fairly easy to please and can make do with all sorts, but anyone with kids knows that it’s just not that easy. I also don’t want to spend my time on the road worrying about whether she’ll eat anything- so it makes MY life easier if I plan it out a little in advance.

Road Trip Meal Planning

So, where do you even start with planning meals for a road trip??

For me, I break it down into 2/3 day intervals. Generally, we like to pop into a shop and buy fresh bread, fruit and other bits every 2/3 days. We don’t do MASSIVE week long shops when we travel- our fridge is nowhere near big enough to deal with that and there’s the worry about what happens if you lose power or gas? All that food will go to waste.

Of course, if you’re only going to a weekend, you can easily make-ahead several dishes and just heat them up- much easier.

TOP TIP for picky eaters- Make them choose some meals

One way I tackle our favourite picky eater is to get her to pick 5-7 dinners she will eat. (Annoyingly, this seems to change every week or so!) I also make her come shopping with me- I find if she chooses it, there’s a higher chance she’ll eat it.

Our Normal Road Trip Food shopping method

On a ‘normal’ two-week road trip to mainland Europe, this is my tried and trusted routine:

  • Buy stuff in UK which we struggle to get overseas (see below)
  • Make-ahead meals for first night or two
  • Buy things as you travel (at local markets, supermarkets or Lidl)
  • Do this every couple of days so we can buy fresh bread, fruit and croissants! Yum!!
  • Try to ignore jeans not doing up….!! 
  • Remember that people eat EVERYWHERE and try not to overbuy before you leave the UK.

This system has worked fairly well for us. It’s allowed us to discover new things, let Jade choose what she fancies and my stress levels don’t get too high trying to plan out a whole weeks worth of meals.

What about perishable foods?

We have a fridge which works both whilst we’re driving (battery) and when we’re parked up (gas). So we bring a small amount of perishable food with us- milk, cheese, ham, meat, yogurt, fruit, bacon.

We don’t buy too much in case there is a problem and the fridge breaks- it’s always been a little tempermental and is the part of the motorhome I trust the least!!

Easy Road Trip Recipes

When I’m on a road trip, especially if it’s a holiday, I don’t want to spend hours of my time in the galley, prepping, washing, chopping, cooking and washing up!

Here are a few easy recipes we use and love. Most only use one pot and many can be made in advance if you prefer.

5 easy road trip Breakfast ideas

  • Greek Yogurt and fresh fruit
  • Muesli/ cereal
  • Scrambled eggs in a wrap or on toast (toast is HARD to cook on a gas hob though!)
  • Bacon/ sausage sandwich (bring your own bacon from the UK. Alternatively, look in European supermarkets- but it won’t look the same. It’s usually much thinner and cooks MUCH faster.)
  • One Pan English Breakfast 

Note how those went from fairly healthy to full-on delicious! I’m making myself hungry!

10 easy Lunch ideas for a road trip

We tend to do lunch as we travel- or if we’re exploring we’ll treat ourselves to a cheeky lunch out. Just don’t do that at Neuschwanstein Castle ! ( Jeez- you thought Norway was expensive!!!! )

  • Fresh crusty bread and… anything. Cheese, ham, tuna, butter, garlic cheese, crisps, chicken, leftover beef, fish fingers…
  • Salad. We try and add some fruit or salad in where possible- we’ll pretend to be healthy every once in a while! If we’re parked up I love to fry up some chicken and pop it onto a quick salad with avocado, tomatoes and peppers. Or try these delicious healthy salad recipes . TOP TIP- WASH your salad. Even the ones in bags. They don’t always wash it in Europe. It also doesn’t seem to last as long (that might be the heat) so don’t over buy.
  • Grilled Cheese (see below for recipe)
  • Couscous (see below)

I have still not found a decent way to make toast in the van. It’s an ongoing process that I will continue to work at! Still, Grilled Cheese sandwiches are a perfect snack:

Grilled Cheese Sandwich Recipe

  • Sliced Bread
  • Cheese (Cheddar and Mozzarella work well)

Butter bread thinly and put butter side down into hot frying pan (not too hot and use butter, not oil.) Add slices of cheddar and mozzarella cheese. Add other slice of bread on top, butter side up. After a couple of minutes (when bottom slice is brown but not burnt), flip sandwich over. Grill for a couple of minutes. For an extra touch, transfer sandwich to oven tray and bake in oven at 170’c for 5-7 minutes until cheese is totally melted.

Burritos are basically large wraps, with beans and/ or rice added into the wrap. One of the easiest ones is the bean and cheese burrito, but you can easily add in meat, sauces and any leftovers you might have.

Ingredients: 

  • 1 whole-grain tortilla wrap
  • 1 medium-sized can of black beans (cook in advance if needed)
  • Cheese- sliced or grated

Simply spread ingredients over wrap, fold in all ends tightly and enjoy!

5 Easy Road Trip Sandwich ideas

Sometimes, simple is best. Here are some easy road trip sandwich ideas:

  • Sausage or Bacon Sandwich – great for breakfast or lunch!
  • Ham/Chicken/ Salami Sandwich – with or without cheese
  • Jam or Peanut Butter Sandwich
  • Egg Mayo Sandwich
  • Tuna sandwich

Couscous is magical. Lighter than rice and so versatile. I make a big helping of this and it lasts for lunch and dinner quite happily.

The trick is to double the amount of liquid to cous cous. One cup couscous= 2 cups stock. I love to use chicken or vegetable stock. Nothing fancy; those little cubes in some boiling water are just fine. Stir until the cube disolves, then pour it over the couscous. Leave to stand for 10 minutes. The beauty of this is you can add whatever you like to it. We like lemon, mint, feta, avocado, red peppers, spring onions, celery… the list is endless. I generally make a bowl of plain couscous and we each add different fillings to it.

10 easy or make-ahead road trip meals for dinner

Ahhhh… now this is the fun part. Everyone’s been driving in the exact same motorhome for several hours… and as soon as you arrive somewhere and the van is parked up for the night, they all turn to you and ask ‘what’s for dinner?’…!

All of these recipes take no more than 30 minutes or you can make many of them ahead for the first few days of the trip.

TOP TIP- Be kind to yourself. Many people dislike ‘pre-made’ sauces, feeling that they’re ‘cheating’ if they don’t cook everything from scratch. But it’s your trip too, so don’t be judgemental about sauces from a jar. Yes, there might be a bit more sugar or salt- but it’s a heck of a lot better than a pizza or McDonalds. So be kind to yourself and make things easy.

Some easy or make-ahead meal ideas for dinners on the road:

  • 3-way mince (Bolognaise, Chilli, Savoury)- can be made in the slow cooker

Spanish Omelette

  • Easy make-ahead taco Bowl

Chicken Quinoa

  • Pea/ Pesto Pasta

Cheats Pizza

3-way mince: bolognese, chilli or savoury.

Here’s the recipe for 3 way mince bulk cooking. You can get savoury mince, bolognese and chilli from 1 pack of mince. It’s the perfect ‘make-ahead’ recipe and is very easy to heat up on the road.

1 pack of 500g mince makes 5 meals: 2 x savoury mince 2 x chilli 1 x bolognese

Start with chopped onion, pepper, garlic and grated carrot all in one large pan with a little oil (or butter) until softened.

Split the mix between 3 pans & add the mince. Cut it long ways in the packet before adding so it’s easier to break up in the pan.

You can add any vegetables at this point. Previously I’ve used courgette, mushrooms and aubergine, all finely chopped. You can get 6/7/8 kinds of vegetables in there!

Brown the mince on a low to medium heat so it doesn’t clump together, break it up with a spoon as it cooks.  Add the seasoning to the chilli pan (cumin, turmeric, chilli powder, garlic powder and paprika) and garlic powder to the savoury mince & bolognese pans. 

Once browned, strain peas & sweetcorn (one small can of corn & 1 small can of peas and add to savoury mince pan.

Add one can of chopped tomatoes to the chilli pan & 1 to the bolognese, stir through. Drain and rinse the kidney beans and add to the chilli. I used half a can of beans, I’ll save the rest for a salad.

Rinse the tomato cans out with a little water & add to the savoury mince pan. Stir in Bisto granules (or beef stock & maybe cornflour or thickener as needed). Add a little Worcestershire sauce & pepper to taste.

Taste & adjust seasonings if necessary.

Divide & eat, or store in the fridge until ready.

Serve with:

  • Spaghetti, rice or potatoes.
  • Garlic or crusty bread
  • Grated cheese
  • Side salad if your family will eat it.

I LOVE this Spanish Omelette. It’s so easy to make and only uses one pan.

  • 3 tablespoons olive oil
  • 1 onion, chopped
  • 1 clove garlic, chopped

Heat the oil in large frying pan. Peel potatoes and slice thinly. Put the slices in the pan with the onion & garlic. Cover the pan and cook until the potatoes are tender, turning them occasionally. Beat the eggs.

When the potato and onion mixture is cooked, add it to the eggs and mix together. Heat another spoon of oil in the pan, and turn the heat down as low as it will go. Pour the egg, onion & potato mixture into the pan.

The essence of this dish is slow cooking and it should take about 20 minutes. When there is no liquid left turn omelette over for 2 minutes. It’s now ready to serve and eat! Delicious- perfect with salad or french loaf.

Lamb Kebabs

Take 500g (4 people) of lean lamb mince and add spices (salt, pepper, cumin, coriander, paprika… whatever you like!) Mould into balls or around a skewer and cook on BBQ or in oven until browned.

If using BBQ and wooden skewers, soak the skewers in water for about 30 minutes first.

Serve with Tzatziki- Greek yogurt, mint, lemon and cucumber

Easy make-ahead Taco bowl

  • 1 can of beef
  • ½ of a small jar of salsa
  • Bag of tortilla chips
  • 1 can of beans
  • 1 avocado/ guacamole

Warm beef and cook beans as directed on label. Mix and add on top of chips (can be warmed in oven) Add Salsa, avocado/ guacamole, sour cream and grated cheese as desired (we pop the whole thing in the oven to melt the cheese.

Ingredients

  • 4 chicken breasts
  • 1/4 tsp. herb de Provence (or any herbs)
  • 1 cup. quinoa
  • 1/4 cup. white wine vinegar
  • 1/4 cup. olive oil
  • 2 green onions
  • 2 tbsp. Dijon mustard
  • 4 cup. rocket/ lettuce/ salad
  • 2/3 cup. olives, quartered
  • 12 oz. tomatoes, halved
  • Season chicken breasts with herbs, salt and pepper. Grill 3 minutes per side on medium-high or until cooked through.
  • Cook quinoa as label directs.
  • Mix vinegar, olive oil, green onions, Dijon mustard and 1/4 teaspoon salt. Toss half of the vinaigrette with cooked quinoa, salad/ rocket, tomatoes and olives. Serve chicken over quinoa with remaining vinaigrette.

Pea / Pesto Pasta

  • Pasta  
  • fresh or frozen peas
  • Chopped chives, for serving
  • Cook pasta. Drain and return pasta to pot. 
  • While pasta is cooking, roughly chop 1 cup peas. Add ricotta and lemon zest and mix well. Season with salt and pepper. 
  • Add ricotta mixture, remaining 1/2 cup peas, and pasta water; toss to combine. Sprinkle with chopped chives, if desired.

Alternatively, cook pasta, add several large spoons of pesto and some grated cheese and mix well.

Salmon with rice and vegetables

We eat salmon a lot- it’s very good for you.

Grill (or use a low-wattage air fryer ) and serve with rice, couscous (see above) and vegetables.

Sure, you can make your own dough and add toppings- and if that works for you, then go for it. However, we cheat.

  • Grab 2 pitta breads per person and pop them under the grill
  • You want them warm, but not ‘crispy’
  • Turn over, and spread with pesto (green or red)
  • Add mozzarella cheese, ham, salami, mushrooms… whatever you like!
  • Grill until bubbling

Healthy Road Trip Snacks

We’ve done an entire post on 15 quick & healthy road trip snacks (many of them Keto friendly) but here are a couple more ideas for you:

  • 1 large can of tuna
  • ½ cup of cranberries
  • A packet of whole-grain crackers

First, take the tuna out from the can and empty it into a bowl. Next, mash a whole avocado and add it with the cranberries into the tuna. Use whole-grain crackers to dip into your tuna.

Apple Cookies

  • 2 green apples
  • Peanut butter
  • Dark chocolate chips
  • Almond slices

Cut an apple into slices that resemble a cookie, then layer the rest of the ingredients in between two slices to make the snack look like an apple sandwich. The snack will stay fresh in an ice cooler for two days.

Barabrith – great snack for afternoon tea!

Compact drying rack and mat

This is by far my favorite RV kitchen essential. This drying rack is flat so it folds up tiny for storage, yet the mat is super absorbent so I don’t end up with a puddle of water on the floor. This combination is big enough to dry all the dishes for our family of 7 for a meal, so it’s a true workhorse! It makes RV cooking easy, since you don’t have to stress about cleanup.

Large Wooden Cutting Board

Although it’s great for cutting (duh), the biggest way that we use our RV cutting board is for more counter space. This easily fits over our RV sink so we instantly have 18 inches more of precious countertop space. If I’m cutting something dry like bread I cut directly on the cutting board, but for meat and veggies, I put one of these flexible cutting boards on top for easy cleaning.

Good Quality Can Opener

Few things are worse for your dinner plans than having your can opener break in the middle of a camping trip. This is the best can opener we’ve found, and it’s lasted us over 10 years now!

Flat Grater

Yes, there are plenty of times you’ll need a grater to grate cheese or veggies. Skip the bulky box graters and grab this slim one instead.

Knives with Sheath Covers

When you start RV’ing, make sure to invest in a set of knives that all have sheaths. RV kitchen storage space is hard to come by so your knives will probably be sharing space with lots of other kitchen supplies. 6 Quick And Easy RV Meals

When you think of camping, the meals you imagine cooking are probably things like hot dogs or oatmeal for convenience. But one of the awesome things about RV camping is that you have so many more options for making delicious meals. Many RV models even have full kitchens, enabling you to create almost any meal you want.

Even though my RV has a full kitchen, I like to keep things quick and simple. Here are six fun and easy RV meals that I have personally prepared in my RV:

Tasty Turkey Tacos

Lemon pepper salmon with zucchini, basil, egg and sausage breakfast casserole, savory chicken and rice.

  • In-A-Pinch-Pizza

Sweet Potato And Beef Delight

Tacos are so easy to make and are great for RV travel. I keep a package of corn tortillas on hand and usually have simple ingredients like tomatoes, onions and cilantro in the fridge. You can do so much with so few ingredients!

You can swap out the turkey for black beans or rice to make this dish vegetarian. Here’s the recipe:

  • 1 lb ground turkey
  • Corn tortillas
  • 2 diced tomatoes
  • ½ sliced purple onion
  • 1 bunch cilantro
  • 1 tablespoon Mexican spice mix (you can find this at most major grocery stores)
  • Optional: Cheese, salsa and sour cream

Fry the turkey with the spice mix in a pan on a medium flame. While the turkey is cooking dice the tomatoes and onions, and chop the cilantro.

After the turkey is cooked through (no pink) drain the juice. Lay the tortillas right on top of the turkey and cover for two minutes to warm them.

Remove the tortillas and place the turkey and other ingredients on top. So easy and delicious!

I didn’t start liking salmon until I was 24. I was backpacking through New Zealand when a wrong turn led me to a fish house (yuck!). Fish wasn’t my thing, but I was also ready to chew my arm off from hunger after a long hike. So I decided on an order of salmon to keep me going.

The thing is, salmon can be a “fishy” tasting fish in other dishes — but wow was that salmon tasty! I loved how tender, light and fresh it was. It became an instant favorite.

Now, I make it all the time in our RV because it’s easy and healthy. Here’s how:

  • Two fillets of salmon
  • 1 – 2 zucchini
  • Sliced lemon
  • ½ tablespoon of olive oil
  • A few sprinkles of salt, pepper and garlic powder

Coat the salmon with the olive oil and sprinkle with salt, pepper and garlic powder. Lay the lemon slices on the salmon.

Put the salmon in an oven-safe baking dish and cover or wrap in foil (you can put it on the BBQ too). Lay sliced zucchini around the salmon. Cook for 12 minutes at 350°F.

I like my salmon tender, but if you like yours more cooked through, aim for 15 to 18 minutes in the oven.

I like protein in the morning. A bowl of oatmeal is something I’ll turn to in a pinch, but a meal with eggs is way more my speed.

That’s why I love this super simple one-dish egg casserole. I throw all the ingredients in a dish and out pops the magical and delicious breakfast of my RV dreams. This is a great dish to share with friends — just double or triple the recipe.

Here’s how you make it for two:

  • 8-oz can (or 1 cup) of diced potatoes
  • 2 sausage links of your choice
  • ½ diced onion
  • 1 bunch basil
  • Salt, pepper, paprika and garlic powder
  • Cilantro or basil for garnish
  • Optional: Top with diced tomatoes

In an oven-safe baking dish, sprinkle the potatoes and sausage with half of the spices. Bake at 350°F for 10 minutes to warm them up.

Then mix in the eggs and sprinkle the remaining spices. Cook for an additional 10 minutes, or until the eggs reach your desired consistency (I like mine a little soft).

Remove from the oven and garnish with cilantro or basil (and tomatoes if desired) and serve with salsa.

I could eat chicken and rice for just about every meal. Not only is it delicious and healthy, it’s also so easy to make! One of the best things about a dish like this is that you can make it so many ways: tomato, tomatillo or a simple broth-based dish are all great options.

This one is my go-to recipe because I often have what I need on hand — like rice, cans of tomato sauce and tomato paste. It can also feed a family of four in less than 30 minutes using a single pot, leaving you with more family time outside. Talk about efficiency!

  • 4 meaty chicken thighs (skin on or off according to preference)
  • 1 16-oz can of tomato sauce
  • 1 16-oz can of diced tomatoes
  • 3-oz can of tomato paste
  • 1 cup water
  • Chopped veggies of your choice (onions, mushrooms, zucchini, etc.)
  • Italian spice mix

Simply mix everything together in an oven-safe baking dish and bake for 25 to 30 minutes at 350°F. It doesn’t get any easier.

In-A-Pinch Pizza

This is the recipe I almost didn’t discover. It was invented by necessity when we barely had any food left in the RV and were far from the nearest grocery store. (To avoid finding yourself in the same situation, I encourage you to keep staple ingredients on hand, like dry-goods and frozen items that you can use a pinch.)

Here’s the pizza I invented that turned out to be off-the-charts amazing!

  • Dry-packaged mini pizza crusts
  • 1 Tbsp pesto spread or tomato paste
  • 1 Tsp Italian seasoning
  • 1 cut hot dogs and 1 strip bacon (this was all I had but any protein will do)
  • ½ Sliced yellow pepper and sliced mushrooms (or veggies of your choice)
  • Optional: Avocado (I would have preferred cheese but didn’t have any)

Spread the pesto on the pizza. Layer the other ingredients — except for the avocado — and sprinkle on the seasoning.

Bake according to the pizza package (I baked this one for 12 minutes). Remove from oven and add the avocado.

Trust me, this dish is way better than it sounds!

This is another meal that I invented from very few ingredients. Again, I was lucky to have a some dry goods on hand and I was able to come up with a well-balanced meal with protein and starch.

This has become one of my favorite things to eat in our RV — and it’s reasonably healthy too!

  • 1 sweet potato, thinly sliced
  • 1 lb ground beef
  • 1 6-oz can of tomato paste
  • 1 Tbsp of Salt, pepper, paprika and chili powder mixed

Roast the sweet potatoes on a baking sheet for 15-20 minutes at 400°F or until crisp. In the meantime, sauté the onion for two minutes on medium heat or until translucent.

Add the ground beef on medium heat and fry until no longer pink. Drain the juice. Add the tomato paste and spices and mix together for a few minutes until cooked through.

Place the beef on the sweet potatoes and garnish with cilantro. If the sweet potatoes are crispy enough, you can use them like chips to scoop the meat.

The Big Secret About RV Cooking

You may have noticed that I use many of the same ingredients in my meals. Staples like tomato sauce and paste, onions, rice, potatoes and ground meats go a long way toward creating all kinds of delicious meals.

This not only makes cooking easier, it make storage easier and will save you money at the store — all important things for making your RV travels more enjoyable.

Impress your family and friends, and give your breakfast life with easy huevos rancheros ! Heat up the stove and get cooking with Cruise America’s huevos rancheros recipe.

Pack the following ingredients, to make this delicious breakfast meal:

  • 4 corn tortillas
  • 1 avocado, sliced
  • 1 lime, cut into wedges
  • 1 lime, juiced
  • Fresh cilantro, chopped
  • 1 handful of cherry tomatoes
  • White onion, minced
  • Salsa verde
  • Cooking oil
  • Salt and pepper

To prep the meal, make the zesty pico de gallo. Chop the cherry tomatoes, white onion, and cilantro, and mix the ingredients in a small bowl. Squeeze the juice of one lime over the mixture and salt and pepper to taste. Set the pico de gallo aside and move on to the next step.

Heat some cooking oil in a pan, preferably cast iron, on your RV stovetop, over a grill, or over your campfire. Once the oil is hot, cook the tortillas one at a time, cooking each side for a minute or to your liking.

Next, coat your pan with oil if needed and crack your eggs into the pan and cook the eggs sunny side up. Once the edges of the egg are nicely browned, the eggs are ready.

To assemble the huevos rancheros, place an egg on a tortilla and spread the salsa verde and pico de gallo on top. Add your favorite toppings like avocado and cheese to complete this delicious and easy RV cooking meal.

Simple Breakfast Omelette

There’s a reason that breakfast is the most important meal of the day. Starting the day off right with an amazing breakfast can make an awesome day even better! 

With Jamie Oliver ’s quick omelet recipe, you get to enjoy a delicious meal without any hassle.

To make the basic omelet, you’ll need these ingredients:

  • 2 large eggs
  • Unsalted butter

The rest of the ingredients, like grated cheddar or cherry tomatoes, are optional but can spice up your breakfast!

To start this easy RV meal, crack your eggs into a bowl and whisk them with a pinch of salt and pepper. At the same time, heat a frying pan on the stove with a pat of butter. 

Once the pan is hot, pour your egg mixture into the pan. After, all that’s left is to move the eggs around until they firm up to your liking. If you’re adding extra ingredients, make sure to add them after you’ve poured the mixture into your pan. When the eggs are ready, fold the omelet over and serve it! 

Egg and Sausage Breakfast Taquitos

Tastes Better from Scratch has mouthwatering breakfast options that you’ll want to add to your list of easy RV recipes. Egg and sausage breakfast taquitos are one of these many breakfast meals. 

Before you hit the road, stock up on:

  • Corn flour tortillas
  • Sausage links
  • Scrambled eggs
  • Shredded cheddar cheese

To make this easy RV meal, you’ll need a cast iron pan. Start by cooking your sausage and scrambling your eggs. From there, sprinkle a generous layer of cheese onto your flour tortilla — don’t be shy here. Spread your pan-hot eggs and sausage on the flour tortilla, letting the filling melt the cheese.

Roll your tortillas up — making a taquito — and place them seam-side down on a cast iron pan. Cover with foil and let toast for a few minutes over a campfire or until they are a beautiful golden brown. 

In-A-Pinch Pizza

As your camping trip comes to a close, you may end up with a variety of ingredients left over from your other RV meals. That’s the inspiration behind this Campanda Magazine meal! 

The in-a-pinch pizza uses leftover ingredients with a few other must-have camping foods. To make this mod-podge meal, you’ll need:

  • Mini pizza crusts
  • 1 Tbsp of tomato paste
  • 1 Tsp of Italian seasoning
  • Your choice of meat (hot dogs work great!)
  • Your choice of veggies (Campanda recommends yellow peppers and mushrooms!)

Making this pizza requires a microwave or a frying pan over the fire. Spread the tomato paste across your crust, add your chosen topics, and heat up your pizza. Seems simple enough, right? We can’t wait to see what kinds of pizza creations your family comes up with! 

Foil-Pack Chicken

This easy-to-make RV meal is ideal for families who want different flavors in their lunches. Keep it simple with chicken and vegetables or add a bit of spice with a chicken fajita dish. 

What you’ll need: 

  • Boneless, skinless chicken
  • Vegetables of choice
  • Seasoning (Italian, Lowry’s, etc.)

This meal can be a bit trickier to manage as each camper needs to make their own and foil should be labeled so each person gets the correct meal. However, the assembly of this easy RV meal is relatively simple. 

First, you’ll want to pre-cook your chicken just a little bit to make sure it’s fully cooked after toppings are added. As your chicken heats up, chop up any vegetables and prepare additional toppings that you’ve chosen. For the fajita chicken, you’ll need white rice, taco seasoning, green and red peppers, salsa, and cheese. 

Once your chicken is about ready to eat, it’s time to put your meals together. Open your foil packets, layer the bottom with a small amount of olive oil, and place your mostly-cooked chicken over top. Add in all of the toppings you want and wrap the mixture up tightly. You’ll want to grill these over the fire (or on a portable grill) and cook until ready to eat! 

Meat and Potatoes

The next item on our list of easy RV meals is a great way to enjoy time around the campfire while also making a scrumptious meal! 

Using tin foil to create parcels of yummy food is an easy and no-hassle technique for cooking food in the great outdoors, and KOA recipe for meat and potatoes is no different!

The ingredients to make this dinner meal are:

  • Potatoes, peeled and sliced
  • Chicken, pork chops, fresh sausage, or your choice of meat, cut up
  • Bacon, cooked
  • Garlic powder

For cookware, you’ll need fire-safe bakeware and non-stick foil. 

To prepare your ingredients, peel, and slice your potatoes. Cut your meat of choice in bite-size pieces, and pre-cook your bacon on your RV’s stovetop. 

Quick Tip: Save the potato skins to make crispy potato skins for a late-night snack under the stars. 

Next, line your bakeware with foil, layer your potatoes at the bottom of the dish, and season with salt and pepper. On top of the potatoes, add your meat, which you’ll also season to taste with salt, pepper, and garlic powder.

Finally, top with bacon, cover the dish with foil and poke holes in the top. Let the dish cook over the campfire for about 45 minutes to an hour, depending on your preference. Once the meat is thoroughly cooked, serve up this delicious meal with confidence.

Turkey Tacos

Up next on our list of easy RV recipes is the turkey tacos that Campanda Magazine swears by! You can spice this dinner option up with additional ingredients or keep it simple for an easy meal. 

To make this delicious dinner option, you’ll need:

  • 1 lb of ground turkey
  • Your choice of tortillas
  • 2 diced tomatoes 
  • 1 bunch of cilantro
  • ½ sliced onion
  • 1 tablespoon of Mexican spice mix

Add cheese, sour cream, guacamole, shredded lettuce, or any other toppings you’d like! 

Cooking this dinner is as easy as 1-2-3. Simply cook the ground turkey in a frying pan, dice up the tomato and onions, and serve with all your favorite ingredients. 

Bacon-Wrapped Trout

What better way to end your day out on the lake than by cooking up your catch? This bacon-wrapped trout is an easy way to feel like you’re enjoying a luxury meal around the campire. 

To make this flavorsome meal, you’ll need:

  • Rainbow trout 
  • 1 Tbsp of Four Seasons Blend
  • ½ lb of bacon
  • 1 bunch of thyme
  • 1 bunch of parsley

The first step in creating this masterpiece of an RV meal is to wrap your trout — or whatever the catch of the day is — in bacon and coat in Four Seasons Blend. Grill this combination of savory foods together, carefully rotating to avoid flare-ups. Once the fish and bacon are both thoroughly cooked, sprinkle your thyme and parsley over time for garnish and serve!

Campfire Pie

What better way to end the day than with a traditional dessert like pie? If you’ve ever craved a slice of home on your RV trip, then this campfire pie recipe is perfect for you!

You can easily make this treat with the following ingredients and tools:

  • 1 can of your choice of flavored pie filling
  • Cooking oil spray
  • 1 can of crescent rolls
  • 1 set of camp pie irons

Once you’re ready to make your dessert, grab your ingredients and camp irons to get started!

First, make sure your camp irons are sprayed with cooking oil, so your pie doesn’t stick to them. Then, roll out some crescent roll dough to make two squares that are roughly the size of your camp iron’s clamps.

Put one of the two dough squares on your open camp iron clamps. Then, add about 2 tablespoons of your pie filling. Next, cover your filling with the other dough square. Now, close the camp irons and cook your pie over your campfire for about 15 minutes! You’ll be having an amazing baked treat in no time.

Simple Berry Shortcake

What could be more refreshing after an adventure-filled day than fresh berries? This simple berry shortcake KOA recipe makes for an easy RV recipe at the end of a long day. 

Making this yummy dessert requires:

  • 3 cups blackberries
  • 3 cups raspberries
  • ¼ cup sugar
  • 1 loaf prepared butter pound cake
  • 1 can of whipped cream

Preparing your berries is the first step. In a bowl (or ziplock bag), rinse off your berries and drain excess water. Don’t fully dry them off — the water will help the sugar coating stick. Carefully sprinkle sugar over the berries and set them aside for 15 minutes or longer. 

Once your berries are sweet enough, cut your pound cake and cover in berries and whipped cream! Voilà — delicious dessert made easy!
