The Untold Truth Of Old Chicago Pizza & Taproom

This hasn't been a good year for full-service casual restaurants. The CEO of TGI Fridays told CNBC in September that restaurants in this category have been hit especially hard by COVID-19 because they rely so much on dining-room business. Service has been limited to takeout and delivery only through much of the pandemic. When dining rooms have opened, seating capacity has often been reduced to keep guests at a safe distance from each other.

Individual TGI Fridays restaurants lost 10 to 15 percent of their business this year, which is bad enough. But Old Chicago Pizza & Taproom, a smaller casual restaurant chain, almost didn't get to find out how bad the pandemic would be for business.

Old Chicago's parent company, CraftWorks, filed for bankruptcy in early March then closed all company-owned restaurants later that month after COVID-19 lockdowns took effect (via FSR ). At the time, no one knew when, or if, those Old Chicago restaurants would ever open again. Then, in May, a restaurant company associated with one of CraftWorks' biggest lenders stepped up and bought Old Chicago and CraftWorks' other chains for a song: $93 million that included debt forgiven by the lender. New owner SPB Hospitality started reopening Old Chicago restaurants and the other CraftWorks chains right away, to the extent local COVID-19 restrictions allowed (via Restaurant Business ).

At Old Chicago, even the burgers have beer in them

Since the financial uncertainty at Old Chicago has been resolved for now, the chain can focus on doing its thing – serving pub food, pizza, and craft beer . Old Chicago takes both food and beer seriously. Old Chicago's top chef says the restaurant chain invented the pepperoni roll and put a spaghetti pie on the menu years ahead of its competitors. Beer is a major ingredient in some of the menu items. Take for example the craft burger, which was demonstrated on a cooking segment on KETV 7 in Omaha: a patty soaked in beer, with caramelized onions, also soaked in beer, and a cheese sauce that contains Guinness .

Old Chicago offers 110 beers, with around 30 on tap (via YouTube ). They offer a world beer tour, and after you taste all 110 beers, Old Chicago puts your name on a plaque in the Hall of Foam. (This will take a while. Old Chicago enforces a moderate pace, only giving credit for up to four beers per day.)

Old Chicago goes into local craft breweries to help them make new beers that will be exclusive to Old Chicago restaurants in that region – including a Belgian white called Cracking Wit made with Summit Brewery in St. Paul, Minnesota (via YouTube ). Two thriving craft breweries, Oskar Blues and New Belgium, were born after their founders were inspired to make beer during visits to Old Chicago .

After bankruptcy, Old Chicago is poised for growth

No discussion of Old Chicago is complete without mentioning the pizza. It's not Chicago-authentic because it's not as thick as the traditional Chicago deep-dish pizza . Plus, the toppings at Old Chicago are right on top of the pizza, where most customers outside of Chicago might expect to find them. The traditional Chicago-style pizza puts the sauce on the top, with the "toppings" and cheese baked inside (via Vice ). Old Chicago also wants to cater to the thin-crust people, so they offer a "tavern style" (via YouTube ). The pizza generally gets high marks from reviewers, including a guy on YouTube who says Old Chicago's "Chicago 7" deep-dish is his all-time favorite pizza.

Old Chicago started as a single pizza and beer joint in Boulder, Colorado in 1976. The chain had more than 100 locations recently but was forced to shrink due to weak sales at some locations (via FSR ). But the future at Old Chicago looks bright, according to Jim Mazany, the new CEO at SPB Hospitality. He told Franchise Times that Old Chicago has more than 4 million customers in its loyalty program, and the growth of the chain's takeout-pizza business was a bright spot during the pandemic. Mazany plans to grow the number of Old Chicago locations in 2021 and 2022. SPB also acquired Logan's Roadhouse restaurants from CraftWorks in the bankruptcy. "I think about casual dining in the future, and we're positioned strongly with the brands we have," Mazany said.

Old Chicago in Sioux Falls closes after lease negotiation stalls

The Old Chicago restaurant and bar in Sioux Falls has closed.

Patrons were greeted by a sign in the front door of the eatery at 4301 W. 41st St. near the Empire Mall on Monday morning.

Owner Joe Cody said he closed the Old Chicago, open since 2003, due to a failed lease negotiation.

"Our lease was up and and basically we negotiated and were unable to reach a satisfactory lease going forward," he said. "We're not closed for remodeling." 

The Speakeasy Casino in the back of the Old Chicago building remains open. Old Chicago patrons who were part of its World Beer Tour stein club may retrieve their mugs at the casino.

Cody is the local franchisee for Arby's and Noodles & Company, and also owns Cody's Smokehouse.

He said he used to own six Old Chicago restaurants, but recently sold four in Iowa. Now with the Sioux Falls location closed, the Fargo location is the last Old Chicago he owns.

A franchise specializing in Chicago deep dish and tavern crust pizzas closes this weekend

The home to deep dish and tavern crust pizzas, a beer tour and Sicilian pepperoni rolls will no longer have a presence in the Des Moines metro in the new year.

Old Chicago Pizza + Taproom closes its Ankeny location at the end of business on Sunday.

“For a restaurant to survive and thrive for over 15 years is an accomplishment of which we can all be proud. And we could not have done it without all of you,” a sign on the front door read.

The franchise out of Boulder, Colorado, offers World Beer Tours, where diners can taste “110 local and legendary beers.” Customers could win prizes such as a koozie, playing cards, coolers and steins after earning points. Those who drank every beer on the list earned their name on the Hall of Foam at the restaurant. Then those who finished 10 tours earned their own stein.

Staff at the Ankeny location confirmed on Facebook that the Wall of Foam would move to the Ames location and customers could pick up their beer steins before the restaurant closes on Sunday.

The menu at Old Chicago includes pizzas with both styles of Chicago crusts as well as calzones, burgers and pastas.

The Old Chicago location at Merle Hay Mall closed in 2019.

Fans of the pizza restaurant can head to Ames to get their Old Chicago fix at 1610 S. Kellogg Ave.

Old Chicago Taps into Fall with Oktoberfest Tour

Old Chicago – the made-from-scratch American fare and beer authority known for its World Beer Tour  and 110 unique, cold beers – launched its annual Oktoberfest Mini Tour, allowing guests to enjoy an authentic Oktoberfest experience this fall. The Oktoberfest Mini Tour – a favorite among Old Chicago’s more than 1.3 million World Beer Tour members – will run through Sunday, October 2, and features eight Oktoberfest-themed beers that will inspire guests to shout the traditional Oktoberfest phrase “O zapft is!” or “It’s tapped!”

Oktoberfest tradition has dictated since 1950 that the Mayor of Munich proclaim “O zapft is!” as the first keg of Oktoberfest beer is tapped at noon on the first day of celebration in September. Old Chicago invited guests to do the same on Wednesday, September 14, to kick-off tapping parties featuring Samuel Adams Oktoberfest and Ayinger at each of the restaurant chain’s 97 locations nationwide. In addition to these beers, each Old Chicago location will feature traditional Oktoberfest favorites like Paulaner Oktoberfest Wiesn, Warsteiner, Spaten, and Hacker-Pschorr Dunkelweiss. In select Old Chicago markets, guests will also be able to try Beck’s and Gordon Biersch Festbier

“Our loyal guests and World Beer Tour members love the Oktoberfest Mini Tour for the variety of German and German-style beers we offer each fall,” says Mark Newman, director of beverage for Old Chicago. “Every year, we feature a variety of traditional Oktoberfest beers along with seasonal favorites, and we’re excited to once again give our guests an authentic Oktoberfest experience right in their neighborhoods.”

Old Chicago’s World Beer Tour members who complete the Oktoberfest Mini Tour by sampling all eight beers will receive the highly coveted Mini Tour T-shirt with a specially-designed “O zapft is!” theme. Anyone 21 and older can sign up to become a World Beer Tour member at Old Chicago for free and register online for members-only benefits. Old Chicago encourages guests to drink responsibly.
