Welcome to the land of the bivalve, where molluscs reign supreme all year round. When it comes to oysters, the Sapphire Coast is famous as being one of the most important growing regions in Australia. Each of our five key estuaries lies within a special wilderness area along our coast, some hidden deep within our national parks , while others can be found conveniently close to our coastal towns and villages .
There are dozens of ways you can experience the Sapphire Coast Oyster Trail , from lakeside oyster shacks to kayaking tours, oyster cruises and oyster bars. You can pair oyster platters with beer paddles, or sip an oyster gin martini from a waterfront dining room. Follow the roadside oyster signs for farm gate prices, and you might just find yourself spreading out the picnic blanket for a long lunch in the forest, right next to the estuary where your oysters were plucked.

Captain Sponge's Magical Oyster Tour
CAPTAIN SPONGE'S MAGICAL OYSTER TOUR
As the region’s only on-water oyster tour, Captain Sponge’s Magical Oyster Tours are as educational as they are legendary. Jump on board Sponge’s small barge at Pambula Lake , for an interactive tour of the stunning estuary with one of the coast’s most famed (and hilarious) oyster experts, Brett Weingarth. You’ll get to sample the world-renowned Pambula Lake Sydney rock oyster straight from the waters of the lake, and inspect the rare native Angasi oyster, which is grown at only a small number of farms in Australia.
Once the oysters are aboard, it’s time to set sail downstream the meandering Pambula River, where ancient Aboriginal middens dot the tree-studded banks. Some of the best-preserved mounded middens on the east coast of Australia are located at Pambula River, evidence of many years of oyster collection by traditional custodians, the Thaua people of the Yuin nation. Captain Sponge will point out significant cultural and geological features of the estuary, plus demonstrate how oysters are caught in the wild.
Shuck School
OYSTER SHUCK SCHOOL & FARM TOUR
Learn how to shuck like a pro at Broadwater Oysters' Shuck School , located at their oyster sheds on beautiful Pambula Lake. An oyster farmer for 25 years, owner Sue McIntyre has award-winning shucking skills that sees her open, turn and present 30 oysters in a mere 3 ½ minutes. Armed with oyster knives and rubber gloves, class participants receive a 25-minute schooling in the art of the shuck, as well as tips on how to discern oysters by appearance and taste. With unopened oysters staying fresh for up to a couple of weeks after harvest, it’s a life lesson worth learning!
For those wanting to take a deeper dive into the world of oyster husbandry, we recommend booking in for a farm tour. You’ll learn about the oyster farming journey from spat to harvest, including Broadwater’s unique farming and aquaculture practices. The team will help you collect and shuck your own oysters, then you are welcome to settle in by the lake to enjoy your harvest.
For both Shuck School and Farm Tour experiences, you are invited to pre-book their oyster and local produce tasting plates, featuring local heroes like smoked mussels from Eden, Tilba cheese and sourdough from Pambula.
The Oyster Barn
THE OYSTER BARN
Combining the best of a farm gate visit and oyster dining experience, The Oyster Barn is a mandatory stop on any Oyster Trail road trip. Owners Pip and Dom Boyton are second-generation oyster farmers, farming Sydney rock and Angasi oysters at their family-owned leases at beautiful Merimbula Lake . They serve a delicious range of natural and topped oysters from their revamped oyster shed, hidden among the mangrove forests on the water’s edge. You can BYO bubbly to pair with their seasonal seafood menu, including classics like prawn baguettes, half-shell scallops, lobster and seafood chowder.
Merimbula Gourmet Oysters are one of only a handful of growers in Australia that specialise in growing the rare Angasi oyster (or ‘flat’ oyster), which are available in the cooler months from May to September. Pip and Dom describe their oyster's flavour and texture as “…eating icecream with sea spray on your face.”
Kayak and Shuck Tour, Navigate Expeditions
KAYAK & SHUCK TOUR
Combine two of the best Sapphire Coast experiences into one morning with Navigate Expeditions on their Kayak and Shuck tour. You’ll get to explore the spectacular Pambula Lake estuary on board their comfortable expedition kayaks, beginning at Pambula River Mouth . As one of the healthiest estuaries in New South Wales, its turquoise waters hum with marine activity. You can order a 10-beer tasting paddle to pair alongside their platters of natural and dressed oysters from their oyster bar, delivered fresh from the farmers at Pambula Lake. All of their craft beers and ciders are brewed on site, with delectable offerings like an Australian weisse with local ironbark honey and Australian oranges, as well as a cranberry and lime gose, brewed with local Bemboka hops, homegrown coriander seed and 5kg of whole cranberries.
If you’re more partial to cocktails than lagers, you can sip your way through their gin goblet menu, stirred with multi award-winning North of Eden gin , including a special oyster shell gin made with local oyster shells. Visiting at least one of our oyster ‘shellar doors’ is a must-do for any trip to the Sapphire Coast. Turn it into an oyster road trip and visit the producers at our key estuaries, stretching from Wonboyn to Wapengo. Oyster signs dot the coast from north to south, with farm gate prices and welcoming hospitality on offer, no matter which winding dirt road you choose to follow. Out of the blue oysters farm tours.
Find out all about a day in the life of an oyster.......while you taste some
Our tours are conducted over one and a half to two hours, with a maximum of 4 passengers per tour. We take you on an oyster punt cruise trip through our pristine, protected inlet, visiting some of our oyster leases where we manage various stages of our oysters’ life cycle. On the way we'll take in the estuary’s scenery and some of our lovely oysters. The longer tours will include a visit to our onshore worksite to learn a little about our oyster operations there. The tours conclude with our returning you to your start point.
In the holiday season we may run up to 4 tours a day depending on demand and oyster farm work commitments, and of cours, weather conditions.
We board passengers either from the public boat jetty in Fosters Bay near the Inlet Cafe in Narooma, or on the inlet directly from a seaplane operated by South Coast Seaplanes if you have flown in on one of their fabulous south coast scenic flights. Departing from nearby Moruya, South Coast Seaplanes conduct flying tours of the coast and Montague Island spotting seal colonies, whales and coastal scenery, and landing on the inlet for us to receive passengers directly from the seaplane.

The Sydney rock oyster
Truly one of nature's gifts. Full of all the right stuff that's great for your health, the rock oyster is a carbon sequester to boot, so they're great for the health of the environment as well! Best of all though, they taste fantastic …straight out of the shell or, if you prefer, cooked in a multitude of ways. The Sydney rock is characterised by its deep, rich, creamy lasting sweetness. It defines Umami ("the essence of deliciousness"). According to guru John Susman, from seafood consultancy Fishtales, "it's like no other on the planet" ... and they just don't come any better than from the Wagonga inlet.

Nestled among lush North Shore greenery and resting alongside the serene and scenic harbor that bears its name, the historic hamlet of Oyster Bay is among the most picturesque areas on all of Long Island. The area was first settled by the Dutch in the mid-17th century, and it was an important setting for the events of the American Revolution, but it wasn’t until then-president Theodore Roosevelt began spending his summers in nearby Sagamore Hill that Americans got to know just how stunning a place Oyster Bay really is.

Their menu strikes a fantastic balance of fresh and light fare, like their salads and smoothies, and more indulgent and offbeat offerings, like their popular penne alla vodka chicken wrap.
Ranking pizzerias is a popular Long Island pastime. UNIQUE NORTH SHORE SHOPPING
These days it seems like you can get anything and everything by shopping online. But that’s not exactly true. You simply can’t replicate the experience of wandering through little boutiques and charming shops virtually—not yet, at least. Should you wander through some of these Oyster Bay shopping stops you’re bound to find something you didn’t even know you were looking for.
If you’re in the market for rare and beautiful additions to your wardrobe, you can’t do much better than Next To New Boutique (59 W. No fan of the written word can avoid the allure of a privately owned bookstore, nor should they. Theodore’s Books (17 Audrey Ave., 516-636-5550, theodoresbooks.com) is a newer addition to Oyster Bay’s charming small business selection. Much like a good book, it’s an easy place to get lost in, and a difficult one to leave.

There you’ll find a collection of one-of-a-kind artisanal items made by local creators, as well as a community-centric space where you can enjoy workshops, book clubs, classes, hosted events, and more.
THE ROOSEVELT EXPERIENCE
Easily the most famed champion of Oyster Bay’s rare beauty was former President Theodore Roosevelt, who spent summers at his home in Sagamore Hill during his time in office. Both Teddy and his wife, Edith, spent their twilight years in town and have been laid to rest at Youngs Memorial Cemetery in Oyster Bay Cove. Efforts to honor his contributions to the area have been pivotal in beautifying Oyster Bay and preserving its history.
There are many ways to appreciate President Roosevelt’s lasting impact on the area, including the following:
You can visit the Roosevelts’ Summer White House at the Sagamore Hill National Historic Site (20 Sagamore Hill Rd., 516-922-4788, nps.gov/sahi/index.htm) and share in the former president’s lifelong love of the natural world by hiking its beautiful grounds. Tours of the house are available by advanced reservation from Thursday to Sunday of each week.
The Theodore Roosevelt Sanctuary and Audubon Center (134 Cove Rd., 516-922-3200, ny.audubon.org/TRSAC) is a 14-acre expanse of preserved natural land that is home to an array of amazing wildlife as well as a number of picturesque hiking trails and gardens.
Overlooking the serene splendor of Oyster Bay Harbor is Theodore Roosevelt Memorial Park (63 Larrabee Ave., 516-624-6202), where you’ll find the Theodore Roosevelt Monument Assemblage: a series of memorial rocks which chronicle Roosevelt’s life in chapters. The park also offers hiking trails, a playground, picnic tables and benches, and of course, gorgeous waterfront views.
OYSTER BAY ARTS
Oyster Bay has all kinds of great destinations for art appreciators and aspiring artists alike. If you’re looking to take part in creative expression or simply observe it in action, check out some of these spots.
The vibrant poster art that came to represent both the psychedelic rock and counterculture movements of the 1960s has now become a form of fine art all its own. You can not only appreciate that art at The Bahr Gallery (95 Audrey Ave., 516-283-1967, bahrgallery.com) but you can even take it home with you. They have more than 200 rare and beautiful pieces of this fascinating period in American history on display, many of which are signed first printings.
Webbe and Webbe Fine Art (17 E. Main St., 516-674-4428, webbeandwebbefineart.com) represents a unique blend of fine art and family. There you’ll find the work of both photographer Deborah Webbe and her grandfather, painter and illustrator Frank Webbe. The art is beautiful, but the stories are what give it its true power.

Captain Sponge’s Magical Oyster Tours is a legendary "on-the-water" oyster farm experience at Pambula Lake estuary, where passengers are taken to the oyster farm and shown the how, where and when behind this mysterious form of farming.
Brett, also known as ‘Captain Sponge’, demonstrates the various aspects of oyster husbandry, their life cycle, biology and most importantly the secret behind opening or ‘shucking’ them. Guests are, of course, given samples of the world-famous Sydney rock oyster, plucked straight from the pristine waters of the lake.
Various natural and Aboriginal cultural sites dot the tree studded banks of this ancient waterway on the journey to the mouth of Pambula River where it opens to the sea.

The Oyster Barn is the farm gate of Merimbula Gourmet Oysters, a family-owned and run oyster farm located at pristine Merimbula Lake. Merimbula Gourmet Oysters are known for their renowned Sydney rock oysters, as well as the rare Angasi or Flat oyster. Their oyster’s superior meat and flavour reflects the quality of the sparkling waters of Merimbula Lake, making their oysters a gourmet delight.

Snapper Rocks returns to World Surf League championship tour in 2025 schedule shake-up
After five years in the surfing wilderness, Queensland's famous break Snapper Rocks is back on the World Surf League (WSL) championship tour.
The event will return to Coolangatta from 2025 after the WSL inked a four-year deal with the City of Gold Coast and Tourism and Events Queensland.
Snapper Rocks was the season opener for the elite surfing tour for two decades until the event was axed in a major shake-up to the schedule during the COVID pandemic.
The WSL took a break from competition during the first year of the pandemic and when it returned in 2021, the Gold Coast lost its hosting rights because of a dispute between the Queensland government and WSL over COVID restrictions.
The Queensland leg of the tour was moved to New South Wales.
For the past three years Snapper Rocks has instead hosted the opening event of the WSL's second-tier competition, the Challenger Series, as part of a revamped format for professional surfing.
The championship tour contest was an important part of the social fabric and surf culture of Coolangatta — a region that has produced more world champions than anywhere in the world.
Widespread impact
Three-time world champ and two-time winner at Snapper Rocks, Mick Fanning, said losing the event had been a heartbreaking blow to the community.
"To not have it here was so sad, not only for us surfers who want people [to] surf our waves, but also for the kids growing up seeing what the benchmark is and what is actually possible at their home break," he said.
Fanning welcomed its return.
"It's an event that's obviously close to my heart," he said.
"There is so much history that has gone on even before I was on tour.
"It's not just for Gold Coast kids, it's for everywhere — far north New South Wales, up the Sunny Coast — people would travel from all over."
Major attraction
Tourism and Events Queensland predicted the event's return to the Gold Coast would attract 14,000 fans and inject $2.9 million into the local economy.
The WSL is yet to reveal how Snapper Rocks will fit in to the 2025 schedule and whether its addition will mean another location is on the chopping block.
The 2024 Australian leg includes stops at Bells Beach in March and Margaret River April.
It is likely the Gold Coast will become the final event before the mid-season cut, or the first event after the cut.
Fanning said the WSL had made the right call.
"You have got to make sure the premier waves, the premier locations are on the world tour because that's where you want to see the best surfing done," he said.
"If that's the last event for the cut then that's incredible.
"It's a lot more predictable than Margaret River.
"You can let your surfing do the talking at Snapper, it's always fairly consistent there are not big changes throughout the day."
