Here's my take based on that experience. The V8 is a definite improvement over the v10, but it's more incremental than revolutionary. The V8 has a more robust low RPM torque curve so it pulls a bit better without downshifting. For example, my rig runs around 29,500lbs CGWR with my tow car.

The 8.1 is a larger displacement low RPM V 8 cylinder engine. The Ford V10, although it has 10 cylinders, is a smaller displacement, higher RPM engine. The big V8s probably went away due to stricter EPA regulations. 10 little cylinders are cleaner burning then 8 big ones.
