Say Cheese: Taking a Bite Out of the Vermont Cheese Trail

Visitors to the Green Mountains quickly discover that Vermonters are seriously sharp about their cheeses. This tiny state is home to more than 45 artisanal cheesemakers, many of which have earned international honors. Among them: Jasper Hill Farm in Greensboro, Vermont Creamery in Websterville, Boston Post Dairy in Enosburg Falls, the von Trapp Farmstead in Waitsfield and, perhaps best known, Cabot .

Due to strict public health codes, most local cheesemakers don't allow guests inside their cheese caves or processing facilities. Nevertheless, many do welcome visitors to their dairy farms to meet their animals and to sample and purchase cheeses. So, if you're looking to commune with nature on a farm this spring, read on for some of the delicious spots closest to Burlington.

Can't get enough? The Vermont Cheese Council offers a complete list of cheesemakers across the state and has curated the Vermont Cheese Trail — a handy road map to DIY tours and tastings. And remember: Many of the stops are small mom-and-pop operations, so call ahead before making the trek.

A Tasty Trail

Kick off your edible adventures at the Vermont Cheese Trail stop nearest to Burlington: Shelburne Farms . Once a Gilded Age country estate, the farm now operates as a nonprofit agricultural and environmental education center that's open year-round to visitors. Located 20 minutes south of Burlington on 1,400 scenic acres, Shelburne Farms has been producing world-class artisanal cheese since 1980. From mid-May to mid-October, visitors can observe the farm's signature cheddar being made and its herd of Brown Swiss cows being milked. Guided tours of the property's barns, children's farmyard and historic inn are also available.

The farm's Coach Barn, neighboring Lake Champlain, hosts the annual Vermont Cheesemakers Festival . Serious cheese lovers should save the date — July 16 this year— for the chance to learn about, sample and buy Vermont cheeses, as well as locally produced wines, beers, ciders and spirits.

About a half hour's drive north of Burlington is Willow Hill Farm in Milton. Here, native Hawaiian cheesemaker Willow Smart uses milk from her herds of dairy cows and sheep to create nine different varieties of award-winning cheeses. These range from soft, bloomy-rind styles to hard, aged types — look for Blue Moon, a creamy sheep's milk; and Butternut, an alpine-style cow's milk cheese that won gold at the 2011 World Cheese Awards. In summer, visitors can pick their own organic blueberries on-site.

Fifty minutes north of Burlington is Highgate Center's Boucher Family Farm , which welcomes visitors most days of the year. On rolling pastures that nestle the Canadian border, the Boucher family employs the same cultures used in French Roquefort to produce their own Green Mountain Blue Cheese. Along with Boucher Blue and a tangy Gorgonzola, they also turn out a sharp, Swiss-style tomme. Dawn Morin-Boucher will explain how things are done if she's around. If not, she says, just pick out the cheese you want and leave your money on top of the fridge. Yeah, Vermonters are trusting in that way.

Less than an hour's drive east of Burlington is Websterville's Vermont Creamery , winner of nine World Cheese Awards and nine American Cheese Society awards in 2016 alone. Vermont Creamery makes several varieties of goat and cow's milk cheeses, including feta, crème fraîche, coupole and Bijou.

Bonne Bouche, considered the creamery's flagship aged goat cheese, has been awarded some of the most prestigious honors in the cheese world. Reminiscent of the Loire Valley cheeses of France, Bonne Bouche means "good mouth" and represents a tasty bite of Vermont. Though Vermont Creamery doesn't offer factory tours, it features a tasting counter and retail outlet.

Don't have time to visit Vermont's cheesemakers in person? The Burlington area boasts some of the most impressive cheese counters in the state, both indoors and out.

On Saturday mornings, Vermont cheesemakers are among the dozens of vendors who set up shop at the Burlington Farmers Market . Held indoors biweekly on the University of Vermont campus through early April and outdoors weekly at City Hall Park from May through October, the market sells cheeses made from cow, goat and sheep milk. Also up for grabs: local fruits, veggies, wines, meads, ciders, distilled spirits, honey, maple syrup, pickles and prepared foods.

For a more extensive assortment, walk three blocks east to City Market/Onion River Co-op . It stocks more than 100 different cheeses, at least 70 percent of them made in Vermont. Cheese buyer Dave Lauber recommends Consider Bardwell Farm 's Experience, which he described as "tasty and very earthy in flavor."

Minutes from Burlington International Airport in South Burlington, Cheese & Wine Traders is a must for serious wine and cheese aficionados. The store carries more than 150 varieties of local and international cheeses. Don't miss the daily samples!

Just up Dorset Street is Healthy Living Market & Café , which offers a wide assortment of organic, raw milk and even vegan cheese selections, as well as an impressive variety of craft beverages. Planning a pretty cheese plate at home? This is the place to pick up breads, meats and other treats.

Démarrez votre aventure gourmande à la fromagerie la plus proche de Burlington : Shelburne Farms . Cette crémerie fabrique plusieurs variétés de fromages de chèvre et de vache, de la feta, de la crème fraîche, ainsi que les fromages Coupole et Bijou.

Le Bonne Bouche, qui rappelle les fromages de la vallée de la Loire, en France, révèle toute la saveur du Vermont. Ce chèvre vieilli, considéré comme le produit phare de l'établissement, a remporté les plus grands honneurs dans le monde du fromage. Travel Like a Local: Vermont

Recommendations for traveling like a local in vermont., vermont’s cheese trail: the best cheese in vermont.

You know you have a problem when one of the vegetable bins in your fridge is dedicated to Vermont cheese:  aged cheddar, extra sharp cheddar, kid-approved mild cheddar, vintage cheddar, alpine cheddar… cheese slices, cheese shreds, cheese snackers. You get the point. See, I have what some might think is a great problem to have… My fiance works for Cabot Creamery Cooperative . Cabot happens to be the biggest producer of cheese and dairy products in the Green Mountain state (and beyond).

In all honesty, we don’t eat that  much cheese… but we always have plenty on hand. Cheese plate, anyone? Due to the omnipresence of cheese in my life, I have become a self-proclaimed Vermont cheese connoisseur and enjoy sampling many varieties to learn the subtleties of each variation. The brinier and bolder the flavors the better for my taste buds. Truly farm-to-table, it’s fun to see the cheese-making process come to life in Vermont.

The Vermont Cheese Trail

Lucky for all of us turophiles, caseophiles, and fromagephiles (aka serious cheese lovers) out there, there are over 50 cheesemakers in Vermont, producing more than 150 cheese varieties. The Green Mountain State has more cheese makers per capita than any other state, which isn’t hard to believe with the number of herds hanging around our great state. Vermont even has a Vermont cheese trail you can follow. This map shows all of the cheesemakers across the state, designating which ones are open to the public for retail sales and farm tours.

So, what cheese makers are producing the best cheese in Vermont? Where are the best places to find the biggest cheese selections in Vermont for purchase? Keep reading to find my picks for getting your cheese fix the next time you’re exploring Vermont.

The Best Cheese Makers in Vermont to Visit

Vermont cheese trail: northern vermont.

Cabot:  Cabot is a farmer-owned co-operative that’s been operating since 1919. Although you can find Cabot cheese in just about every grocery store, co-op, and even gas stations in Vermont, a trip to Cabot’s Visitor Center in Cabot, Vermont, is a unique experience. Tour the facility, watch the cheese-making process, and enjoy tons of samples from the biggest cheese producer in the state.

Shelburne Farms:   Shelburne Farms is arguably the most beautiful home to a cheese-making facility in Vermont. It’s set on Lake Champlain and has stunning westerly views over the Adirondacks and architecture. Their aged Farmhouse cheddar is some of the best in Vermont, alongside Jasper Hill’s Cabot Clothbound. It’s made daily from the raw milk of Shelburne Farms’ Brown Swiss cows. If you can’t make it to Shelburne, Vermont, you can purchase their cheese online  with every order supporting their mission of educating for a sustainable future.

Vermont Cheese Trail: Central Vermont

Blue Ledge Farm: Located in Leicester, Vermont, just south of Middlebury, Blue Ledge makes some of my favorite cheese in the state. Their Lake’s Edge , a goat cheese with a “dramatic ash-vein,” is always on my cheese plates and has become a favorite Vermont cheese among friends and family. Established in 2000, Blue Ledge Farm is a 150-acre, first generation, family owned and run (and animal welfare approved!) goat dairy and cheese-making operation. They produce the milk and make the cheese, making them a farmstead operation with a mission “to create a high quality product built on the cornerstones of respect for consumers, land and animals as well as our local community.”

New for 2019, Blue Ledge is offering farm tour and cheese tastings – how fun would this be? Take part in this unique Vermont cheese experience Fridays only from May through October (reservations only) for only $10 a person. Contact them on their website here to sign up for a tour and tasting!

Vermont Cheese Trail: Southern Vermont

Grafton Village:   The first time I had Grafton Cheddar was at Long Trail Brewery’s 25th Anniversary Party. It was the end of the night, and somehow, I ended up with four bricks of their delicious cheese in my purse (no, I didn’t steal it). I ate those blocks for days and loved every bite. Grafton Village in southern Vermont is a great stop to sample cheeses and find other Vermont edibles and gifts. Make sure you try the Truffle Cheddar and award-winning Bear Hill.

Plymouth Artisan Cheese: Plymouth’s cheese features some of the most memorable packaging of all Vermont cheeses; all offerings are wax-wrapped in bright colors. The artisanal cheese comes from a single herd in Vermont that’s continually monitored for quality. The facility at the Calvin Coolidge State Historic Site in Plymouth Notch, Vermont, offers a self-guided tour, along with cheese samples and even a cheese museum. Interestingly, the cheese factory is the second oldest in the country, dating back to 1890! The factory was built by Colonel John Coolidge, father of Calvin Coolidge, the 30th President of the United States. For the cheese and the history, Plymouth is a must-stop cheese destination in Vermont.

Sadly, Not Open to the Public

Although it isn’t open to the public, it’s worth acknowledging Jasper Hill Farm in Greensboro as the producer of the very best cheese in the state (in my opinion, although I’m sure many will agree). I had the amazing opportunity to tour the facility this past summer, which consists of seven cheese caves (or “specially calibrated vaults” as they call them). It was one of the coolest Vermont experiences I’ve had. Seeing the delicate handling and specific conditions cheese needs to age to perfection gave me a newfound appreciation for the art of cheese making. The extensiveness of the Cabot clothbound cave was nothing sort of breathtaking. Although you may not be able to visit the farm and production facility, you can order the cheese online here  and pick it up at many stores throughout Vermont.

Jasper Hill - Trio

The Best Places to Buy Cheese in Vermont

Northern vermont.

The Cheese Shop, Cheese and Wine Traders, South Burlington, Vermont Cheese Traders is the best place to find a huge selection of Vermont cheese at the best prices in Vermont. Cheese butts and odd cuts allow you can get some steals on typically pricey cheeses so long as you don’t care about an oblong shape. In addition to cheese, you’ll find local meats, preserves, and everything else needed to round out your very own Vermont charcuterie platter. Don’t miss the basement for an awesome selection of wine as well. If you live in the area, sign up for their Cellar Wine Club, which includes two bottles of wine and one cheese pairing for month.

Willey’s General Store, Greensboro, Vermont I am a huge fan of Willey’s General Store. It’s located just a few (dirt) miles down the road from Hill Farmstead . Not only can you find Hill Farmstead shelvies, you can also find the best selection of Jasper Hill Farm cheeses I’ve ever seen in Vermont. It just so happens that Jasper Hill is within a few miles as well. It’s well worth a stop for the quintessential Vermont country store experience as well.

Cabot Annex, Waterbury Center, Vermont Located half-way between Waterbury and Stowe is a “strip mall” with four of Vermont’s best makers: Cabot Cooperative, Smugglers’ Notch Distillery, Lake Champlain Chocolate, and Danforth Pewter. The Cabot Annex  has many options to try before you buy. Don’t miss the kick-ass selection of local brews, ciders, and other Vermont-made products as well. The location seems is popular with tour buses, so in case it’s busy when you arrive, pop next door to Smugglers’ Notch to sample some of the best spirits made in Vermont. If you’re in southern Vermont, Cabot has another storefront in Quechee that’s worth a visit as well.

Dakin Farm, Ferrisburgh, Vermont Located roughly half-way between Middlebury and Burlington on Route 7 is Dakin Farm, one of my go-to drop-in stops for some serious sampling. Dakin Farm is well-known for their maple syrup and maple creemees in the summertime. In addition to many Vermont-made goodies, Dakin Farm boasts a big selection of Vermont cheeses.

Southern Vermont

The Taftsville Country Store, Taftsville, Vermont The first time I entered Taftsville’s Country Store when exploring between Woodstock and Quechee, I was blown away by their huge cheese case. Cheese comes in blocks, so you have the option to purchase as much (or as little) of a specific variety as you’d like. It’s one of the best places in the state to get bulk cheese, if you’re a serious cheese lover. Don’t miss the Grafton Three-Star Cheddar!

Throughout Vermont

Any Co-op in Vermont: The Middlebury Natural Foods Co-Op, Hunger Mountain Co-op in Montpelier, and City Market / Onion River Co-op in Burlington all have a huge selection of local Vermont cheeses, as do most Co-ops throughout the state. Make sure to browse their cheese cases, as you never know what goodness you might find on any given day.

When one thinks of Vermont, maple syrup, fiery foliage, and ski runs are the clearest hallmarks of the Green Mountain State. Over 2.5 million gallons of maple syrup are produced in the state, however, there's another delectable resource the state has in spades: cheese. In addition to providing locals with tons of flavors, Vermont's cheesemakers are also making their mark nationwide supplying countless restaurants across the country with their rounds and wedges.

For those not equipped to tackle the slopes, don't fret: the Vermont Cheese Trail , a smattering of 45 dairy farms, lends equal parts excitement and deliciousness. Some farms are open for visits while others make their products available at farmstands or shops, including cheese by-products like butter, soap, yarn, and occasionally ice cream.

There are enough activities to keep everyone from snow bunnies to outdoor adventurers in check year-round. Below, the towns to explore, where to buy and try cheese, and the best spots to stay on Vermont's cheese trail.

Jasper Hill Farms in quaint Greensboro, VT is the most prolific of Vermont cheesemakers. Brothers Mateo and Andy Kehler along with their wives, Angie Kehler and Victoria von Hessert, respectively, started their business to highlight the need to buy better and buy local. "We set out to demonstrate it’s still possible to make a good living milking cows on a rocky hillside farm in northern Vermont," says Mateo. "We understood that if our cheese wasn’t consistently great, we wouldn’t accomplish our missions: keeping the farms in our community thriving, keeping kids in our school, and keeping our general store, Willey's, going." It worked, as the pair now employ more than 100 people in a town with a population of around 900. Their neighbors and community are a vital part of Jasper Hill's success. "Our approach has been creating products that are reflective of the beautiful place we live. Terroir is pregnant with all kinds of economic, cultural, and geographic references, but our terroir  reflects the four towns surrounding us and our six neighbors from whom we buy milk," says Mateo.

" Gramercy Tavern and Craft were our first restaurants where we Fedex’d them cheese directly," says Mateo. "I showed up to do a staff training and had the most incredible culinary experience. It completely blew my mind." Today, their cheese is served at a slew of Starred restaurants across the country: Thomas Keller's  Per Se ,  The French Laundry  and Bouchon ,  Blue Hill at Stone Barns  (who have a custom cheese), MoMA's restaurant  The Modern ,  Sepia , Le Bernardin ,  Daniel ,  Jean-Georges ,  The Inn at Little Washington ,  Atelier Crenn ,  Benu , Monsieur Benjamin , and State Bird Provisions .

If that seems like a lot, it is, but it's due to the complexity the team brings to cheese. Take one of Mateo's favorite cheese, the Bayley Hazen Blue. "It's the most complicated cheese we make, [and] after 20 years we're still learning." Similarly, the Alpha Tolman requires a bit more effort. "We make all our own cultures and rennet, and we’re fermenting our own whey to make this cheese, so it has the collective memory of its ancestors, all the previous batches of Alpha Tolman."

While Jasper Hill Farms isn't open for visits, Willy's, the general store in Greensboro, stocks all of their cheeses, as do loads of cheese shops and supermarkets across the country. If you've searched for reasonably-priced, non-imported crème fraîche in the US, you probably know Vermont Creamery. It's far from the small dairy farm it was in 1984 (its parent company is Land O'Lakes), but it still sources milk and cream from nearby goat farms. Find their cheeses on the cart at Two Star Daniel in New York, along with those from Woodcock Farm (Weston, VT) and Lazy Lady Farm (Westfield).

Brattleboro and Bennington

  • Bennington Battle Monument : Take in sweeping views from its 306-foot-high observation deck of the surrounding states and their rolling green hills, rivers, and lakes. It's a particularly pretty vista in autumn.
  • Bennington College : Small, well-regarded liberal arts college with peaceful campus and busy events calendar .
  • Park-McCullough is a 35-room Victorian-era mansion open for tours Memorial Day to Indigenous Peoples' Day. 
  • Along Main St near South S are a handful of shops—antiques, a thrift store, chocolate, books, made in New England goods, and art prints.

Brattleboro

  • Stop at  Grafton Village Cheese  and Retreat Farm  to taste one of Grafton's delicious cheddars and then stretch your legs on the farm's walking trails and forest playground.
  • Main St and Flat St have a handful of small shops, including a bookstore. Pick up picnic provisions at food co-op and drive just across the bridge to Wantastiquet Mountain Natural Area in NH.
  • Raise a pint at microbrewery  Whetstone  or at  Hermit Thrush , who brew a range of sours.

From Brattleboro, continue north to Woodstock. Get your cheese fix on the way at Vermont Shepherd 's farm store in Putney. Yesenia and David Ielpi Major make their seasonal sheep and cow's milk cheeses along with sheep's milk soap, lamb meat, and maple syrup on their 250-acre farm. Depending on the season, you might find fromage blanc and a two-year-aged invierno, a soft-to-semi-hard natural rind cheese made from sheep and cow's milk, or a semi-hard vierno, a sheep's milk cheese aged four to seven months, plus sheep's milk gelato made. In New York, find their cheeses on the menus at Roberta's , Sunday in Brooklyn , Frenchette , Cookshop , Electric Lemon , Blue Hill at Stone Barns  and in LA at A.O.C .

A mile up the road lies Parish Hill Creamery' s farm store featuring Alpine-style cheeses from cheesemakers Rachel Fritz Schaal and Peter Dixon. Their four cows, Helga, Abigail, Clothilde, and Sonia, graze at a nearby school and yield delicious product, like their two-month-aged smoked Kashar, a Balkan-style "pasta filata" cheese (a pulled-curd cheese) featuring a mild, buttery, slightly peppery flavor, with an extra oomph thanks to being smoked over Vermont apple wood.

From here, drive directly to Woodstock or make a 45-minute detour to Big Picture Farm . Those taking the trip had better be passionate for goats; you can hang out with a crew here while munching on goat-milk caramels (US$12) and then swing through the shop for goat cheese and goat-milk chocolate.

Woodstock itself is the picture of New England charm, boasting Vermont's oldest bookseller (Yankee Bookshop). Other highlights in town include the library (housed in an 1884 pink sandstone building) which sells secondhand books, a 135-year-old country store, a glass-blowing and pottery workshop, and a handful of charming, local-focused boutiques.

A ten minute drive from Woodstock is Queechee Gorge, with several peaceful, shaded hiking trails and its eponymous gorge, which beckons for a dip come summer.

Like Woodstock, Stowe so visibly channels the picturesque idea of New England that it looks like a film set. It's really just two streets, so you can putter around for half a day, popping into shops like Stowe Mercantile (bulk old timey candy, Vermont jams and craft beer, teas, their own baking mixes), The Current, a contemporary gallery in an 1861 Greek Revival house, and Bunya Bunya, which sells boho women's clothing and accessories. There's a flat, easy bike trail that runs 5.3 miles from Stowe to Top Notch Resort on the Mountain Road; bikes can be hired at MountainOps, which gives right into the trail, or in Stowe itself. Sage Farm Goat Dairy has a farm store open from 10 until evening from April to November; depending on the season, you might find a round of pretty chèvre with fresh herbs, flowers, or spice blends or a wedge of Justice, a two-month-aged raw goat’s milk with layer of vegetable ash.

From Stowe, it's a quick hop over to Burlington on the eastern shore of Lake Champlain.

Burlington feels positively urban compared to the other tiny towns in this guide. If you arrive in time for sunset, get a prime view over Lake Champlain from Waterfront Park. Take advantage of Burlington's walkability by going on a brewery crawl (the city has 10 breweries) or going on foot to the South End , a revitalized formerly industrial area that's now home to galleries, breweries, cafes, a biodynamic wine bar, a live music venue, and an outpost of homegrown chocolate brand Lake Champlain Chocolate.

Where To Stay

If you're driving north to Vermont, break up the long journey with a night in the Berkshires . This stretch of western Massachusetts encompasses seven towns and is beloved for nearby hiking, museums like Mass MoCA and the Clark, music venue Tanglewood, Edith Wharton's home, and loads of indie shops, cafés, and restaurants. 

Tourists North Adams, MA Outside the town center, on the road to neighboring Williamstown where the aforementioned Clark Museum is, you’ll find another piece of reclaimed Berkshires heritage: TOURISTS, a Sixties motor lodge reborn as a modern, hip little country boutique hotel. There's a summer-camp-esque conviviality here where guests, both adults and kids, play cards at wooden picnic tables or splash about in a nicer and bigger version of a backyard pool.

Woodstock Inn Woodstock, VT Vermont may have a reputation for low-frills, homespun charm, but this is an entirely different Woodstock, both literally and figuratively. The Woodstock Inn was founded by Laurance Rockefeller, and it’s stayed true to its aristocratic spirit: this is one of the most elegant hotels in the whole of the Northeast. The rooms are meticulously designed and fantastically luxurious as well. Its restaurants feature many ingredients from the hotel’s own organic garden, while a full-service spa, tennis club, and facilities for Nordic skiing and falconry provide year-long entertainment.

The Woodstock Inn & Resort

The Lodge at Spruce Peak Stowe, VT The Lodge at Spruce Peak makes intelligent use of high-quality local materials, with stone from local quarries and timber from local forests. It’s a year-round resort with golf, a spa, and fly-fishing excursions in addition to the main ski season event. Even outside of ski season, the events calendar is packed, with farmers' markets, film screenings, concerts, fitness classes, farm-to-table dinners, arts and crafts sessions, and guided hikes, along with robust family programming. The (very well-heated) pool is open throughout the year to work off some of the delectable dishes featured at the resort restaurant. Spruce Peak hits it out of the park with cuisine that wouldn't look out of place in a more urban environment. Hotel Vermont Burlington, VT Just a few minutes’ walk from the shores of Lake Champlain, this centrally located hotel offers city views, stone-tiled showers, and a variety of simple but neat, modern, and very comfortable rooms. Several of Burlington’s premier bars, restaurants, and gastropubs are just down the street, and its lakeside location puts the city’s attractions within easy reach. Parking directly below the hotel.

Road Trip: Vermont Cheese Trail

Visit the farmstead alchemists in the Green Mountain State for great food, fun, and scenery.

Crack open a Vermont food sampler and you'll probably find a hunk of sharp cheddar next to the maple syrup. But farmstead alchemists in the Green Mountain state also create award-winning gorgonzola, gouda, feta, chèvre, and other artisanal varieties. In central and northern Vermont, you can drop in on a half dozen cheese wizards, all of whom offer cheesemaking tours and sell their products on-site.

This roughly 280-mile (450-kilometer) loop of the Cheese Trail begins in Plymouth Notch, accessible from I-89 via Route 4 and Route 100A, then follows Route 100 north to Lincoln Gap Road, which descends to Route 7 in the Champlain Valley. Route 7 links several cheesemakers and other attractions along with Burlington, Vermont's biggest city, and connects near the Canadian border with I-89. Vermont's varied terrain of steep wooded hills, broad dairylands, and meandering river valleys unfolds throughout the drive, which skeins together attractions as varied as the childhood home of a president, a superb museum of Americana, and one of the world's largest granite quarries.

Start in Plymouth Notch

The time-capsule hamlet of Plymouth Notch is where Calvin Coolidge was born in 1872. The entire village, just off Route 100A, is a state historic site ( http://historicsites.vermont.gov/coolidge/ ) comprising not only the Coolidge birthplace but the house where John Coolidge administered the oath of office to his Vice President son, Calvin, when President Harding died. Penny candy and old-time toys are for sale in the Coolidge family's 1920s general store, and a visitor center interprets Silent Cal's era.

Frog City Cheese (3780 Route 100A; Plymouth; tel. 1 802 672 3650; www.frogcitycheese.com ) is located in the old Coolidge family cheese factory. "We use the original Coolidge recipes for our moist, creamy Plymouth cheese, a cow's milk variety that isn't made anywhere else," says cheesemaker Tom Gilbert. Tom and his wife, Jackie McCuin, use half-century-old equipment to make what Tom calls "an old-fashioned, unsophisticated cheese" offered in ages ranging from four to 24 months.

East Warren

Follow Route 100 north along the spine of the Green Mountains to East Warren, where Larry and Linda Faillace's Three Shepherds of the Mad River Valley (42 Roxbury Mountain Rd., Warren; tel. 1 802 496 4559) uses cow's and sheep's milk from valley farms. "Our sheep's milk feta is creamy, not crumbly—it's like the feta made in the Balkans," says Larry. The Faillaces also make sheep's milk "Montagne," a hard pecorino variety, and soft-ripened "Cosmos," flavored with herbes de Provence. From April to October, Three Shepherds offers three-day cheesemaking classes (a bonus is the panoramic view of the Mad River Valley). Another plus is the on-site Schoolhouse Market, where you can provision a picnic not only with cheese, but with locally made breads, pâtés, and fresh fruit.

Climb over Vermont's cordillera via the hairpin turns of Lincoln Gap, descending into the rich pastures of the Champlain Valley to reach Route 7. Head north on 7 through the college town of Middlebury, where the Vermont State Craft Center at Frog Hollow (1 Mill St.; tel. 1 802 388 3177) exhibits and sells jewelry, glassware, furniture, textiles, pottery, and other work by Vermont artisans. A good lunch or dinner stop in Middlebury is the Storm Café (3 Mill St.; tel. 1 802 388 1063), located on the banks of Otter Creek.

Shelburne Farms

The complex cheddars at Shelburne Farms (1611 Harbor Rd., Shelburne; tel. 1 802 985 8686; www.shelburnefarms.org ) have a Gilded-Age pedigree. This was the Frederick Olmsted-landscaped family compound of railroader Dr. William Seward Webb, who ran it as a model farm more than a century ago. It's now an agricultural and environmental education center where you can watch cheesemaker Jaime Yturriondobeitia and her staff craft cheddar in one of the property's vast, turreted barns. The process includes the actual process of "cheddaring," stacking great slabs of freshly made cheese so its own weight presses out unwanted whey. Brown Swiss cows luxuriate on these privileged acres, which are accessible to visitors via 8 miles (13 kilometers) of footpaths winding toward the pristine Lake Champlain shoreline. There are guided tours that take in Dr. Webb's immense breeding barn; a Children's Farmyard; and the Inn at Shelburne Farms for dining and overnight stays.

Shelburne Museum

Along with Shelburne Farms itself, the Webbs' great legacy is the Shelburne Museum (Route 7, Shelburne; tel. 1 802 985 3346; www.shelburnemuseum.org ), whose collections range from folk art to Native American artifacts; from decoys to horse-drawn carriages; and from antique toys to hundreds of 19th- and 20th-century American paintings and European Impressionists. Vermont buildings spanning two centuries of vernacular architecture have been moved to the museum's 45 landscaped acres (18 hectares).

Just north of Shelburne, in Burlington, sidewalk cafés dot pedestrian-only Church Street. The views across Lake Champlain to the Adirondacks are sublime, especially from the park and boathouse adjoining ECHO Lake Aquarium and Science Center at the Leahy Center for Lake Champlain (1 College St.; tel. 1 802 864 1848), where the ecology and history of the 126-mile-long (200-kilometer-long) lake and its watershed are brought vividly to life via kid-friendly hands-on exhibits and an aquarium housing hundreds of fish representing all Champlain species. If you're in Burlington for an evening, check the schedule at the art deco Flynn Center for the Performing Arts (153 Main St.; www.flynncenter.org ).

In Milton, 15 miles (24 kilometers) north of Burlington, Willow Hill Farm (313 Hardscrabble Rd.; tel. 1 802 893 2963; www.sheepcheese.com ) is home to transplanted Hawaiian Willow Smart and the cows and sheep whose milk is used for nine varieties of award-winning cheese, from soft, bloomy-rind styles, to hard-aged types, to veined, creamy sheep's milk "Blue Moon." In summer, you can pick your own blueberries from their bushes.

Follow Route 7 north to Swanton, then take Route 78 east to Highgate and the rolling pastures that nestle along the Canadian border. The same French penicillin cultures used in Roquefort work their magic at Green Mountain Blue Cheese (2183 Gore Rd.; tel. 1 802 868 4193). "It's all very low-tech—we've even made most of our equipment," says Green Mountain's Dawn Morin-Boucher. Along with its "Boucher Blue" and a celebrated tangy gorgonzola, the farm turns out a sharp, Swiss-style tomme. Dawn will explain things if she's around; if not, just pick out your cheese and leave your money on top of the fridge.

  • Nat Geo Expeditions

It's a straight shot down I-89 from Highgate to Barre, where Vermont's most famous nonagricultural product runs in veins 10 miles (16 kilometers) deep. Take the tour at Rock of Ages (558 Graniteville Rd.; www.rockofages.com ), where you can see workers separate 25-ton (23-metric-ton) blocks of granite from sheer 600-foot (180-meter) walls with explosives and jet torches.

End at Websterville

Drive just a stone's throw to Vermont Butter and Cheese Co. (40 Pitman Rd., Websterville; tel. 1 802 479 9371; www.vermontcreamery.com ) where goat's milk from 25 local farms is transformed into chèvre. "Very few people were eating goat cheese when we started making it in 1984," says French-born cheesemaker Adeline Folley. "We helped introduce it to the U.S." Using cow's milk, she also produces butter and mascarpone.

Stop #1: plymouth cheese factory.

Begin your journey on the trail with a trip to the Plymouth Cheese Factory . This company is the second oldest cheese factory in the country and has been producing high-quality artisan cheeses for over 125 years. The Plymouth Cheese Factory uses only the finest raw cow’s milk available, utilizing humane, sustainable cheesemaking practices. The factory is located on the Calvin Coolidge State Historic Site and is open seven days a week.

Stop #2: Three Shepherds Cheese

Continue on Route 100 North to East Warren where you’ll find your next stop on the trail –   Three Shepherds Cheese . This farm uses cow and sheep’s milk to make a variety of artisan cheeses, including their specialty feta. You can even take cheesemaking classes here from April through October! Visit their website for a full list of programs.

Stop #3: Shelburne Farms

Shelburne Farms is located in Shelburne, VT, just one town over from East Warren. On this 1,400-acre working farm, guests can watch as cheesemaker Jaime and her staff create delicious cheddar cheese in a barn. They craft over 170,000 pounds of cheese annually, and it’s all made from the raw milk of purebred Brown Swiss cows.

Stop #4: Willow Hill Farm

Located just north of Shelburne is the bustling city of Burlington, a popular destination for its world-class dining, shopping, and entertainment. It’s a wonderful place to explore along the Vermont Cheese Trail. After your visit, drive another 15 miles north to Milton and stop by Willow Hill Farm . This farm is home to many cows and sheep whose milk is used to create nine varieties of scrumptious cheese.

Stop #5: Green Mountain Blue Cheese

To get to this creamery, follow Route 7 to Swanton and then take Route 78 East to Highgate, which is tucked along the Canadian border. Green Mountain Blue Cheese uses the same penicillin cultures as those in Roquefort, France. It’s the perfect place to taste some of the tangiest Gorgonzola available.

Stop #6: Vermont Creamery

End your journey on the Vermont Cheese Trail with a stop at the Vermont Creamery in Websterville. Here, French-born cheesemaker Adeline Folley transforms goat’s milk from 25 local farms into divine chèvre. She also produces fresh butter and mascarpone using cow’s milk. To date, the Vermont Creamery has won more than 100 awards, and their products populate some of the most prestigious cheese boards in America.

The Green Mountain State is home to more than 45 cheesemakers, and a design-your-own tour of the Vermont Cheese Trail is an excellent way to visit these traditional dairy farms—the majority of which are members of the VCT. You’ll find cheeses made from sheep, goats, and different cow breeds. And these cheesemakers create anything from cheddars and blues to hard-aged and creamy varieties.

This organization was founded more than 20 years ago to support and nurture the area’s farmers. Cheesemaking is an ancient art that many feel should be preserved, and there’s an importance placed on proper education for the best products. The Vermont Cheese Trail is a way to help promote and foster a community for these cheesemakers and the best way for visitors to indulge in this fantastic handmade Fromage.

You’ll find a comprehensive Vermont Cheese Trail map to help plan your route, and thankfully, our Warren Bed and Breakfast is near a few of these lovely dairy farms. While some may be a bit of a drive, it’s as scenic as it gets with historic covered bridges, lush forested mountains, and hidden waterfalls along the roadside. The state of Vermont is ranked in the top ten for most yearly cheese production in the United States. So it’s only fitting that your vacation here should include a trip along the Vermont Cheese Trail. There’s something special about the cheese produced on these charming farms, and you really have to taste it to understand.

Here are the four best cheeemaking stops on the Vermont Cheese Trail near our Warren B&B:

  • Three Shepherds Farm : What’s better than cheese tasting? Taking part in a cheesemaking class! This family-owned farm and school give students hands-on lessons on the art of crafting delicious cheeses. They offer various class options, from quick one-day lessons to advanced and intensive programs.
  • Von Trapp Farmstead : You’ll find distinct organic cheese at this stop along the Vermont Cheese Trail. They specialize in washed-rind cow’s milk cheese, a buttery Mad River Blue, a cave-aged alpine, and the Mt. Alice, a creamy, brie-like Fromage.
  • Cabot Annex Store : Perhaps one of the biggest names in Vermont Cheeses, Cabot Creamery has been operating for more than 100 years. As a farm cooperative, 800 local dairy farmers contribute to the offerings. While the main creamery is about an hour from our B&B, you can get the same delicious cheeses at the Annex Farm Store nearly half the time.
  • Midnight Goat Farm : Located in Huntington, Vermont, about 30 minutes from our Inn, this tiny goat dairy and creamery is a lovely stop along the Vermont Cheese Trail. They produce micro-batch handcrafted, artisan raw cheeses.
  • Plus of course a stop at the Mad River Taste Place where you can sample a wide variety of Vermont artisan cheeses, and many others types of local products.

Vermont Cheese Trail

One of the best things about staying at our Warren Inn is our home-cooked breakfast with local ingredients and some of the best cheese in Vermont. Join us each morning of your stay at our communal dining table. Breakfast is served at 8:30 am, with hot coffee ready by 7 am. (During the ski season, breakfast is at 8:00 am). On winter weekends, we offer a light breakfast at 7:15 for skiers looking to hit the slopes early.

We have always had a great time here! We have visited a few times since he we had our son and was always impressed! The staff was friendly and kind. I would highly recommend anyone with children to check it out!
