Along with what others have said, I'd also recommend the Better Fast Travel mod. It places lots more carriages (and even a few ships) in the world. That way, you can avoid using the Fast Travel system pretty much 100% of the time, but still have a way to get somewhere quickly if you so choose while staying somewhat immersed.

Part of the appeal of survival is I have to use carriages to fast travel. Outside of survival mode they don't have any use apart from traveling to a city for the first time. If I get desperate and do need to fast travel for some reason then it's easier just to turn off survival mode temporarily. I've never played survival in Skyrim.

The fastest way to travel is by horse using a mod like Convenient Horses. Increase your horses max speed, stamina, and health and you can easily climb mountains and your horse can survive some minor falls. Arvak kind of sucks. He is no better than a stables horse and his stamina doesn't seem to work with Convenient Horses.
